GARLIC OVERLOAD BURGERS WITH CREAMY GARLIC BURGER SAUCE

- In a small bowl, combine the cream cheese, minced garlic and Italian herbs and blend well. Divide into 4 equal portions.
- In a large bowl, mix the ground beef with the garlic powder and salt and pepper.
- Divide the hamburgers into 8 equal portions. Form the meat into balls and then flatten into a patty about 1/4" thick. Remember to make the burgers a bit over sized to account for shrinkage when cooking. In the middle of 4 patties, spoon some of the cream cheese mixture.
- Top each of the four patties with the cream cheese mixture with the patties without. Gently press the burgers together to form a large burger.
- Grill burgers as desired.
- When almost ready to remove burgers, add a slice of provolone cheese to the top of each burger. Allow cheese to melt by closing grill (or placing lid over burgers if using something other than a grill).
- In a saucepan, boil 1/4 cup of water over medium heat.
- Stir in the minced garlic and garlic powder. Boil until the water is nearly evaporated, about 5 minutes. It's okay for some water to remain, but you want very little.
- Stir in the heavy cream, Parsley, salt, and pepper.
- In a small bowl, mix the cornstarch and 1/4 cup of water and stir until dissolved. Add to the cream mixture.
- Continue boiling, stirring constantly, until thickened. About 3 minutes.
- Remove from heat. It will continue to thicken upon cooling.
- Place burgers on bottoms of brioche buns.
- Spoon Creamy Garlic Burger Sauce over burger.
- Top with the top of the brioche bun.

- Season your ground beef the way you like (I used salt, pepper, garlic powder and onion powder) and mix well.
- Shape the beef into patties. I made 8 patties which will make 4 HUGE burgers. If you want to make more burgers that are smaller, make more patties.
- Take one patty and put a spoonful of the cheese filling into the middle. Take another patty and put it on top of the filling, sealing the patties together.
- Preheat your grill on medium high. Grill burgers for 5-10 minutes on each side or until the meat is done to your liking.

- In a small bowl, mix cheddar cheese, cream cheese, parsley and 1 teaspoon mustard. In another bowl, mix green onions, bread crumbs, ketchup, seasonings and remaining mustard. BACON, ONION AND CHEESE STUFFED BURGER

- Preheat grill to medium.
- In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.
KITTENCAL'S JALAPENO-CREAM CHEESE STUFFED HAMBURGERS
You may omit the jalapeno if desired and you may use whatever else you want to flavor your burgers with just do NOT omit the cream cheese in the middle and add in the onion soup mix and garlic to the hamburger mixture --when I make these I use 2 scant tablespoons of cream cheese for each burger, you may want to reduce to 1 tablespoon if desired --- these may be fully prepared covered with plastic wrap and refrigerated until ready to grill --- these burgers are very good!

- Set grill to medium heat.
- Oil the grill grates.
- In a bowl stir together the softened cream cheese with jalapeno pepper; mix until combined.

- Heat the oil in a frying pan over a medium heat and fry the onion with a good pinch of salt for 15 mins until soft and translucent. Add the pancetta and cook for 5 mins more, then add the garlic and thyme, and cook for 2 mins. Remove from the heat and leave to cool for 15 mins.
- Tip the mince into a large bowl. Massage with your hands for 5 mins to tenderise the meat, then add the cooled onion mix, the breadcrumbs and egg yolk. Season generously. Divide evenly into four, weighing for accuracy, if you like. Mix the cheddar and mozzarella together. Form the beef portions into patties, patting each into a 10cm round. Divide the cheese mixture into four, and, in your hands, form each portion into a firm ball, then press into a roughly 4cm disc. Working one at a time, put a cheese disc into the centre of a beef patty, then bring the meat around the cheese to cover. Lightly pat with the palm of your hand to flatten slightly, then chill, covered, for at least 30 mins or up to 48 hrs.
- Make the sauce by whizzing the mayonnaise, mustard and herbs together in a small food processor. Stir through the gherkins, then cover and chill until ready to use.
- Light the barbecue. When the flames have died down, grill the burgers on each side for 4-5 mins until charred (if you don't have a barbecue, see tip, below). Wrap individually in foil and leave on the barbecue for 5-7 mins so the cheese centre melts.
- Grill the buns, cut-side down, for 1-2 mins until toasted. Spread all the cut sides with the sauce, then fill with the beef patties, lettuce, tomatoes and crispy onions.
