½ cup light brown sugar
1 egg
¼ cup sour cream
¼ cup white sugar
1 teaspoon vanilla extract
2 ripe bananas
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 (4 ounce) package cream cheese, softened
1 egg
¼ cup white sugar
3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan with cooking spray.
  • Combine butter, brown sugar, 1 egg, sour cream, 1/4 cup white sugar, and vanilla extract in a large bowl; whisk until smooth. Mash in bananas using a fork. Whisk in 1 cup flour, baking soda, baking powder, and salt until just combined.
  • Whisk cream cheese, 1 egg, 1/4 cup white sugar, and 3 tablespoons flour together in a separate bowl.
  • Pour half of the banana mixture into the prepared loaf pan. Spread cream cheese mixture evenly on top. Pour remaining banana mixture over cream cheese mixture.
  • Bake in the preheated oven until top is firm, about 50 minutes. Cool in the pan, about 5 minutes.

4 oz cream cheese, softened
¼ cup granulated sugar
3 tablespoons all-purpose flour

Steps:

  • In a large bowl, mix the egg, sugars, butter, sour cream, and vanilla. Add the bananas, mash into the mixture.
  • Add flour, baking powder, baking soda, salt, and mix. Set aside.
  • In a large bowl, mix cream cheese, sugar, flour, and egg.
  • Pour half of the bread batter into a 9x5 inch (22cm x 12cm) pan, pour the cream cheese filling, smooth into corners, top with remaining batter.
  • Bake at 350°F / 180°C for about 50 mins. Baking times may vary, so keep an eye on the bread.

1/4 cup cup sour cream (lite is okay; or Greek yogurt may be substituted)
2 teaspoons vanilla extract
1 cup mashed ripe bananas (about 2 large bananas)
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch salt, optional and to taste
Cream Cheese Filling
1 large egg
4 ounces softened brick-style cream cheese (lite is okay)
1/4 cup granulated sugar
3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350F. Spray one 9x5-inch loaf pan with floured cooking spray, or grease and flour the pan; set aside. Bread - In a large bowl, add the egg, brown sugar, coconut oil, sour cream, brown sugar, vanilla, and whisk to combine. Add the bananas and stir to incorporate. Add 1 cup flour, baking powder, baking soda, optional salt, and fold with spatula or stir gently with a spoon until just combined; don't overmix; set aside. Turn about two-thirds of the batter out into the prepared pan, smoothing the top lightly with a spatula and pushing it into corners and sides as necessary; set aside. Cream Cheese Filling - In a large bowl, add all ingredients and whisk to combine. Alternatively, mix with a hand mixer. Evenly pour filling mixture over the bread, smoothing the top lightly with a spatula and pushing it into corners and sides as necessary. Top with remaining batter, smoothing the top very lightly with a spatula as to not disturb cream cheese layer and pushing batter into corners and sides as necessary. Bake for about 48 to 50 minutes or until the top is domed, golden, and the center is set, and a toothpick inserted in the center comes out clean, or with a few moist crumbs, but no batter. Note this is tricky because the cream cheese never gets totally solid so the toothpick test isn't the most accurate. Tip - Tent the pan with a sheet of foil draped over it at the 30 minute-mark if you feel the tops and sides will become too browned before center cooks through. Baking times will vary based on moisture content of bananas, cream cheese, climate, and oven variances. Bake until done; watch your bread, not the clock. Allow bread to cool in pan for about 15 minutes before turning out on a wire rack to cool completely before slicing and serving. Optionally, serve bread with Honey Butter, Cinnamon-Sugar Butter, Blueberry Butter, Strawberry Butter, or Vanilla Browned Butter Glaze. Bread will keep airtight at room temperature for up to 1 week, or in the freezer for up to 6 months.

1 c sugar
1/2 c butter, softened
2 eggs
3 mashed ripe bananas
1 tsp salt
1 tsp baking soda
3 Tbsp sour cream
2 c all-purpose flour
1 c chopped nuts
CREAM CHEESE MIXTURE:
8 oz softened cream cheese
1/3 c sugar
1 egg
1 Tbsp all-purpose flour
OPTIONAL TOPPING
1 Tbsp sugar
1/2 tsp cinnamon
chop nuts for sprinkling

Steps:

  • 1. Mix 1 cup sugar, butter and 2 eggs.
  • 2. Add bananas, salt, the baking soda dissolved in sour cream, and 2 cups flour. Mix well and add nuts.
  • 3. Divide 1/2 of this mixture into 2 greased and floured loaf pans.
  • 4. Combine cream cheese mixture ingredients and spread over mixture in pans.
  • 5. Spread remaining banana bread batter on top.
  • 6. PS ~ I like to sprinkle a few extra nuts on to. Or, sprinkle top with 1 Tbsp sugar mixed with 1/2 tsp cinnamon before baking. Makes a nice crunchy top. But that's totally optional.
  • 7. Bake at 350 for 1 hour. Test for doneness.
  • 8. Cool and slice. Makes a lovely presentation.
