1 cup butter, softened
1 (8 ounce) package cream cheese, softened
2 1/2 cups all-purpose flour
1/2 cup apricot fruit spread or 1/2 cup seedless raspberry preserves

Steps:

  • In a large mixing bowl, cream the butter and cream cheese. Gradually add flour to the creamed mixture. Divide dough into four portions; cover and refrigerate until easy to handle.
  • On a lightly floured surface, roll one portion of dough at a time into a 10-in. x 7-1/2-in. rectangle. Trim edges if necessary. Cut into 2-1/2-in. squares.
  • Place 1/4 teaspoon spreadable fruit or preserves near each end of two diagonal corners. Moisten the remaining two corners with water; fold over and press lightly.
  • Place on ungreased baking sheets. Bake at 350° for 12-15 minutes or until corners are lightly browned. Cool 2-3 minutes before removing to wire racks to cool. Yield: 4 dozen.

1/2 cup margarine
1 (3 ounce) package cream cheese
1/2 cup sugar
1/4 teaspoon almond extract
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 cups crisp rice cereal, slightly crushed
candied cherry

Steps:

  • Cream together margarine, cream cheese, sugar and almond extract till light.
  • Mix together dry ingredients and add to margarine mixture.
  • Chill 1-2 hours.
  • Shape into balls.
  • Roll in cereal and place on ungreased baking sheet.
  • Top each with a cherry.
  • Bake for 12-14 minutes at 350 degrees.
  • Cool on racks.

Pecan tassies are bite-size pecan pies disguised as cookies. With a simple crust that's both tangy and rich, thanks to cream cheese and butter, and a not-too-sweet maple-infused pecan filling, they go down easy and by the handful.

6 tablespoons/85 grams unsalted butter, at room temperature
4 ounces/113 grams cream cheese, at room temperature
2 teaspoons granulated sugar
1/2 teaspoon kosher salt
1 cup/128 grams all-purpose flour
1 large egg
1/4 cup maple syrup
2 tablespoons dark brown sugar
2 tablespoons unsalted butter, melted
1/2 teaspoon pure vanilla extract
2/3 cup/66 grams pecan halves, finely chopped

Steps:

  • Make the crust: Heat oven to 350 degrees. In a large bowl, either by hand or with an electric mixer, beat together butter, cream cheese, sugar and salt until creamy. Beat in the flour just until combined and the dough begins to come together. Portion the dough into 24 1-inch balls (about a scant tablespoon each). Press each ball into a cup of a nonstick mini-muffin pan, spreading evenly over the bottom and 3/4 of the way up the sides, slightly higher if the cups are on the shallow side.
  • Make the filling and bake: In a medium bowl, whisk together all of the filling ingredients. Add a heaping teaspoon of the filling to create a small mound in each cup, making sure to distribute the pecans evenly by stirring the filling every few scoops. Bake until the filling is set and the crust is golden brown, 20 to 25 minutes. Transfer to a wire rack to cool for 10 minutes, then remove the tassies from the tin to cool completely.
