Mardi Gras Cream Cheese Pound Cake with Bourbon and Pecans image

12 tablespoons unsalted butter (softened)
8 ounces cream cheese (softened)
3 cups granulated sugar
6 large eggs
3 cups unbleached all-purpose flour
1/2 teaspoon salt
1/4 cup bourbon (or milk)
1½ teaspoons vanilla extract
1½ cups chopped pecans (toasted)
3 ounces cream cheese (softened)
1 tablespoon unsalted butter (softened)
1/2 teaspoon vanilla extract
1½ cups confectioners sugar (sifted)
2 tablespoons milk
colored sugars (green, yellow, purple)

Steps:

  • Set oven rack in the middle and preheat oven to 325° F.
  • In the bowl of the stand mixer, cream together the butter and the cream cheese. Add the sugar a little at a time, mixing on medium speed until light and fluffy.
  • Add the eggs, one at a time, mixing on low just until the yolk is no longer visible.
  • In the medium bowl, sift together the flour and the salt. Add the flour and salt to the butter mixture a little at a time, alternating with the bourbon, mixing on low each time just until blended. Be gentle. Don't over mix, or the cake will be tough and lose volume. Start with the flour and end with the flour. (You can also do this part by hand using a spatula to fold in the flour and bourbon.)
  • Gently fold in the vanilla extract and the pecans.
  • Pour into the prepared tube/Bundt pan and bake for 1 hour 30 minutes to 1 hour 45 minutes, using a long bamboo skewer to check cake consistency. Skewer should come out dry, but may have a few crumbs clinging. Remove from oven and cool in the pan on a wire rack for 15 minutes. Remove from pan and cool completely on the wire rack.
  • In the bowl of the stand mixer, cream together the butter, cream cheese, and vanilla. Add the sifted sugar a little at a time until the sugar is fully mixed in. Add milk a little at a time, mixing as you go, until the glaze drizzles easily from a spoon. Depending on humidity, you may need a little more or a little less milk.
  • Drizzle the glaze around the top of the cake, allowing it to run down the sides. Sprinkle the colored sugars on top of the glaze.

Steps:

  • Beat butter, cream cheese, medium speed until creamy. Gradually add sugar until light and fluffy. Add eggs, 1 at a time, beating just until yolk disappears. Sift flour and salt. Add alternately with bourbon. Add flour first and last. Beat at slow speed until blended after each addition. Stir in vanilla and pecans. Pour into greased and floured 12-cup tube pan. Bake at 325 degrees 1 hr 30 minutes or until a toothpick comes out clean. Cool 10-15 minutes on wire rack remove from pan and cool completely on wire rack. GLAZE (optional) Stir 2 C powdered sugar 3 T milk 1 tsp vanilla Add'l 1 T milk if necessary

3 cups sugar

Steps:

  • Preheat oven to 325°F
  • Grease and flour a 12 cup tube or bundt pan.

  • Remove from pan; cool completely on wire rack.

My husband said these mini cakes remind him of a superbly delicious pancake. Since the pecans are a fattier nut, they tend to float to the top of batter--which, when the cakes are flipped, ultimately becomes a nutty crust-like addition to the cakes. Adding chopped pecans as a garnish helps to balance everything out.

1 tablespoon all-purpose flour
½ teaspoon salt
¼ teaspoon baking soda
⅛ teaspoon ground nutmeg
½ cup unsalted butter, softened
½ cup pure maple syrup
3 tablespoons firmly packed dark brown sugar
3 large eggs, at room temperature
1 teaspoon vanilla extract
1 teaspoon maple extract
¼ cup buttermilk, at room temperature
⅔ cup chopped pecans
1 (3 ounce) package cream cheese, at room temperature
1 tablespoon unsalted butter
¾ cup powdered sugar
3 tablespoons pure maple syrup
½ teaspoon vanilla extract
½ teaspoon maple extract
⅛ teaspoon salt
3 tablespoons heavy cream
¼ cup chopped pecans, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a mini Bundt® pan.
  • Whisk together 1 cup plus 1 tablespoon flour, salt, baking soda, and nutmeg in a small bowl.
  • Mix together butter, maple syrup, and brown sugar in a large bowl with an electric mixer until well combined. Mixture will look curdled; this is normal. Add in eggs, 1 at a time, mixing well after each addition. Mix in vanilla and maple extracts. Add in half of the flour mixture and mix until combined. Pour in buttermilk and mix until combined. Add in remaining flour mixture and mix until just combined. Batter will be thin. Stir in pecans. Divide batter evenly amongst the cavities of the prepared pan.
  • Place pan into the preheated oven and bake until the bottom of the cakes spring back lightly when touched, 18 to 22 minutes. Cool cakes in the pan for 5 minutes before removing to a wire rack to cool completely.
  • To make the frosting: mix cream cheese and butter together with an electric mixer until smooth. Add in powdered sugar, maple syrup, vanilla extract, maple extract, and salt; beat until mixture is completely smooth. Pour in heavy cream and mix until well incorporated. Frost mini cakes as desired, and sprinkle additional chopped pecans on top.
