CHOCOLATE CRANBERRY WALNUT BARK



Chocolate Cranberry Walnut Bark image

1 lb chocolate almond bark
5 oz package dried cranberries
1/2 c. chopped walnuts
1/4 c. white melting chocolate

Steps:

  • In a double boiler melt chocolate almond bark over low heat. Stir until smooth. Spread out on a baking sheet lined with wax paper.
  • Sprinkle with walnuts and cranberries, slightly pushing down on them to adhere them to the chocolate.
  • In a small microwave safe bowl melt white chocolate according to package directions. Drizzle over bark.
  • Let cool completely. Break into pieces.
  • Store in air tight container in refrigerator.

Wonderful flavor with the combination of the tartiness of cranberries and sweet white chocolate!!! The crunchiness of the pretzels and nuts are great additions. Easy and quick preparation. (I use crasins for the cranberries.)

12 ounces white chocolate chips (or almond bark)
1/2 cup dried cranberries
1/2 cup walnuts, chopped
1/2 cup pretzel, crumbled

Steps:

  • Melt white chocolate chips in a double boiler or use a microwave. (Microwaves vary, approximately one minute for microwave).
  • Add cranberries, walnuts and pretzel pieces.
  • Drop by teaspoons onto wax paper.
  • Store in a covered air tight container once hardened.

This candy recipe is very pretty on gift trays and tasty too. If cranberries are not on hand, dried cherries or raisins will work beautifully in this recipe.

½ cup dried cranberries
1 (3.5 ounce) package macadamia nuts

Steps:

  • Line one 10x15 inch cookie sheet with aluminum foil.
  • Place white confectioners' coating (almond bark) in a microwave safe bowl, and microwave on medium heat until melted. Stir in cranberries and nuts.
  • Spread mixture out on foil, cool, and break into 1 1/ 2 inch pieces. Store in air tight container.

1 (1 to 1 1/4-lb.) pkg. vanilla-flavored candy coating or almond bark, cut into pieces
1/2 cup sweetened dried cranberries or dried cherries
1 (3.25-oz.) jar macadamia nuts, coarsely chopped

Steps:

  • Line cookie sheet with foil. Melt candy coating in medium saucepan over low heat, stirring constantly. Remove from heat.
  • Stir in cranberries and nuts. Spread on foil-lined cookie sheet. Cool 45 minutes or until completely cooled. Break bark into 1 1/2-inch pieces. Store in tightly covered container.

1-1/2 teaspoons plus 1 cup butter, divided
1 cup sugar
3 tablespoons water
8 cups chopped white candy coating (about 3 pounds), divided
3 cups dried cranberries, divided

Steps:

  • Grease a 15x10x1-in. pan with 1/2 teaspoon butter. In a heavy saucepan over medium-low heat, bring 1 cup butter, sugar and water to a boil, stirring constantly. Cook over medium heat until a candy thermometer reads 290° (soft-crack stage). Pour into prepared pan (do not scrape sides of saucepan). Refrigerate for 1 hour or until hard., Break toffee into pieces. Place in a food processor; cover and process until coarsely chopped. Divide in half; set aside., Butter two 15x10x1-in. pans with remaining butter. In a microwave, melt 4 cups white candy coating. Stir in 1-1/2 cups dried cranberries and half of reserved toffee pieces. , Pour onto 1 prepared pan; spread to edges. Repeat with remaining white candy coating, dried cranberries and toffee pieces. Refrigerate until firm. Break into pieces.

3 ounces semisweet chocolate, chopped
3/4 cup whole blanched almonds, toasted
3/4 cup dried cranberries

Steps:

  • In a microwave, melt white chocolate at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Repeat with semisweet chocolate. Stir almonds and cranberries into white chocolate. Thinly spread onto a waxed paper-lined baking sheet. , With a spoon, drizzle semisweet chocolate over the white chocolate. Cut through with a knife to swirl. Chill until firm. Break into pieces. Refrigerate in an airtight container.

2 cups semisweet chocolate chips
1 cup chopped pistachios, toasted, divided
3/4 cup dried cranberries, divided
5 ounces white candy coating, melted

Steps:

  • In a microwave-safe bowl, microwave chocolate chips until melted; stir until smooth. Stir in 3/4 cup pistachios and half of the cranberries; spread onto a waxed paper-lined baking sheet. Drizzle with melted candy coating. Cut through layers with a knife to swirl., Sprinkle with the remaining pistachios and cranberries. Refrigerate until firm., Cut or break into pieces. 1/2 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped fresh or frozen cranberries
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in cranberries and walnuts., Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown. Cool on a wire rack. Cut into bars.
