FRESH CRANBERRY SPICED TEA



Fresh Cranberry Spiced Tea image

A lovely clear red, hot beverage for holiday parties, an afternoon break, for dinner or bedtime as it contains no caffeine. I have been making this for decades and keep it in the fridge all winter. One of my most requested recipes!

Number Of Ingredients 9

1 pound fresh or frozen cranberries
3 quarts cold water
2 cups orange juice
2 ⅛ cups pineapple juice
¼ cup lemon juice
2 cups white sugar, or to taste
1 (3 inch) cinnamon stick
1 teaspoon whole cloves
½ teaspoon whole allspice berries

Steps:

  • Place the cranberries and water into a large pot. Bring to a boil and cook just until the berries pop, about 5 minutes. Remove from the heat and let stand at room temperature until cold, several hours.
  • Strain out the cranberries and stir the orange juice, pineapple juice, lemon juice and sugar into the liquid. Add the cinnamon stick, whole cloves and allspice berries. Bring to a low boil. It is ready to serve at this point, but it is even better if you allow it to sit overnight.

Yield 18 cups (1-1/2 quarts concentrate).

Number Of Ingredients 7

1 bottle (32 ounces) cranberry juice
2 cups sugar
1 can (6 ounces) frozen orange juice concentrate
3/4 cup thawed lemonade concentrate
1/3 cup red-hot candies
1 cinnamon stick
2 whole cloves

Steps:

  • In a 3-qt. saucepan, combine all ingredients; bring to a boil over medium heat. Boil for 7 minutes, stirring occasionally. Remove cinnamon and cloves. , To serve, mix 1 cup concentrate and 2 cups water; heat through. Store concentrate in a covered container in the refrigerator.

Number Of Ingredients 7

4 cups highbush cranberries
10 cups water, divided
2 to 3 cups sugar
1 cup red-hot candies
15 whole cloves
1 cup thawed orange juice concentrate
1/2 cup lemon juice

Steps:

  • In a large saucepan, bring cranberries and 4 cups water to a boil. Reduce heat; simmer for 4 minutes or until berries pop. Press through a strainer; discard skins and seeds. Juice should measure about 4-1/2 cups; set aside., In another saucepan, combine the sugar, candies, cloves and remaining water; bring to a boil. Reduce heat; simmer for 5 minutes or until candies dissolve. Strain and discard cloves. Stir in the orange juice concentrate, lemon juice and reserved cranberry juice. Serve hot or chilled.

2 cinnamon sticks (3 inches)
2 cups sugar
1/2 cup orange juice
2 tablespoons lemon juice

Steps:

  • In a Dutch oven, combine the water, cranberries and cinnamon. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until berries pop, stirring occasionally., Remove from the heat. Discard cinnamon. Strain cranberry mixture through a cheesecloth-lined colander. Return to Dutch oven. Stir in the sugar, orange juice and lemon juice; heat through. Serve warm.

  • Bring first 6 ingredients to a boil in a large Dutch oven;reduce heat and simmer 10 minutes.
  • Remove from heat and add tea bags; cover and steep 5 minutes.
  • Using a slotted spoon, remove and discard teabags, cinnamon, and cloves; stir in orange juice.
  • Chill tea; serve over ice with lemon wedges.

1 lb fresh cranberries or 1 lb frozen cranberries
2 quarts water
2 cups water
2 cinnamon sticks
1 1/2 cups sugar
3 tablespoons lemon juice
2 cups orange juice

Steps:

  • Boil cranberries with 2 qts water until berries pop.
  • Let set 5 minutes.
  • Strain.
  • Discard solids and return juice to stove.
  • Add 2 cups water, cinnamon sticks and sugar.
  • Bring to a boil; boil 1 minute.
  • Cool.
  • Add lemon and orange juices.
  • Heat and serve.
  • Store in refrigerator.

1/4 cup canola oil, plus more for pan
1 cup rolled oats
1 cup all-purpose flour (spooned and leveled), plus more for pan
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cardamom
3/4 cup plain low-fat yogurt
2 large eggs
1 cup cranberries, fresh or frozen (not thawed)
1/4 cup crystallized ginger, coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Lightly oil and flour an 8 1/2-by-4 1/2-inch loaf pan. Spread oats on a rimmed baking sheet and toast until golden brown and fragrant, about 10 minutes. Transfer to a food processor and pulse until finely ground. Place in a large bowl; stir in flour, sugar, baking powder, baking soda, salt, and cardamom.
  • In a separate bowl, stir together yogurt, oil, and eggs; whisk until combined. Make a well in the center of the dry ingredients and pour in the liquid ingredients; stir until just combined. Fold in cranberries and ginger.
  • Spoon mixture into the prepared pan and smooth top with a rubber spatula. Bake until a toothpick inserted in center of the loaf comes out just clean, about 50 minutes. Check the loaf after 30 minutes and tent with aluminum foil if browning too quickly. Cool 10 minutes in the pan, and then run a metal spatula around edges and invert loaf onto a rack. Turn right side up to cool completely before slicing.
