Steps:
- Pre-heat the oven to 200 deg C (400 deg F) - line a baking sheet with baking paper
- Place the Flour in a mixing bowl - add the Butter and rub in with your fingers until the mixture resembles breadcrumbs
- Mix in the Caster Sugar, Cranberries, Nuts and Ginger
- Whisk together the Egg and the Milk - add to the dry mixture - mix to a stiff dough
- Place mixture in small, rough heaps on the prepared baking sheet, leaving a bit of space for spreading in between each heap - bake 12 - 15 minutes or until golden brown

Steps:
- Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
- Put the butter and flour into a mixing bowl and rub together with your fingertips until the mixture resembles breadcrumbs.
- Stir in the cranberries, orange zest, sugar and egg with the baking powder and milk. Mix together well to make a soft dough.
- Divide the dough into 8 and shape each piece into a rough mound.
- Put onto the baking tray and bake for 15-20 minutes until pale golden. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
- Split the cakes in half through the centres and spread the bases with jam. Sandwich the halves together with whipped cream. Sift icing sugar over the tops.
MINI DARK CHOCOLATE CRANBERRY ROCK CAKES

- Heat oven to 350 degrees Fahrenheit. Line cookie sheet with parchment paper.
- In a large bowl, sift together the flour, sugar, baking powder and salt. Add the butter and using pastry blender or pulling 2 table knives in opposite directions, cut in the butter to form coarse crumbs. Stir in chocolate chips and cranberries; set aside.
- In medium mixing bowl, beat together eggs and 1/2 cup whipping cream until well blended. Make a well in the center of the flour mixture and add the egg mixture. With rubber spatula, fold together all ingredients until combined and smooth.
- Using medium cookie scoop, scoop out 24 balls of dough onto cookie sheet. Brush tops with 1 tablespoon whipping cream; sprinkle with coarse sugar.
- Bake 18 to 20 minutes or until lightly browned. Remove from cookie sheet to cooling rack. Serve immediately. Store cooled rock cakes in airtight container; best eaten within 2 days.

Steps:
- Heat oven to 180C/fan 160C/gas 4 and lightly oil a non-stick baking sheet. Rub together the butter and flour with your fingertips to fine breadcrumbs (or pulse in a food processor). Stir in the rest of the ingredients until you have a soft dough.
- Drop 8 tbsp or 16 heaped tsp of the dough on to the baking sheet, spacing out well. Bake for 18-20 mins until golden. Transfer to a wire rack to cool and dust with plenty of icing sugar. Pack into an airtight container or gift jars.
