This easy holiday salad gets its flavor from a sweet citrus dressing that's infused into the kale by massaging the greens and the dressing together with your hands. We like a mix of kale for this recipe, but any type of kale will work.

Ingredients

2 tablespoons finely chopped shallot
1 ½ tablespoons rice vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon honey
1 teaspoon grated orange zest
3 tablespoons orange juice
½ teaspoon salt
¼ teaspoon ground pepper
7 cups stemmed and torn mixed kale, such as lacinato, curly and/or red
½ cup sweetened dried cranberries
¼ cup sliced almonds

Steps:

Stir shallot and vinegar together in a large bowl; let stand for 5 minutes. Whisk in oil, honey, orange zest, orange juice, salt and pepper. Add kale and massage the mixture gently with your hands until the kale is lightly wilted, about 3 minutes. Arrange the salad on a platter; sprinkle with cranberries and almonds.

Ingredients

3 cups coarsely chopped kale, stems removed
½ small red onion, quartered and sliced
½ cup cranberries
⅛ cup chopped walnuts
⅛ cup sunflower seeds
¼ cup goat cheese
3 tablespoons raspberry salad dressing
1 dash balsamic vinegar
salt and ground black pepper to taste

Steps:

Combine kale, onions, cranberries, walnuts, and sunflower seeds in a large bowl. Crumble goat cheese and add to salad. Add raspberry dressing and balsamic vinegar to the bowl and toss gently to coat. Season with salt and pepper.

Remove ribs from kale by slicing down each side of the rib with a knife. Then, chop kale leaves into bite size pieces and add to a large bowl. Massage kale leaves for one minute - lightly knead and scrunch leaves with clean hands until kale appears slightly darker and more tender. Add cranberries and almonds to kale and set aside.
In a separate bowl, add olive oil, dijon mustard, maple syrup, lemon juice, lemon zest, salt, and pepper. Whisk to combine, then pour over kale and gently toss until salad is evenly coated. Serve immediately.
