CRANBERRY CHEESECAKE BARS
"I came across this recipe several years ago, and it's become a family favorite," shares Rhonda Lund of Laramie, Wyoming. A crumbly oat topping and crust sandwich the smooth cream cheese and sweet-tart cranberry fillings.

- In a large bowl, combine 2 cups flour, oats, brown sugar and butter; mix until crumbly. Press 2-1/2 cups of the crumb mixture into a greased 13-in. x 9-in. baking dish. Bake at 350° for 10 minutes., In a large bowl, beat cream cheese until smooth. Beat in the milk, egg whites, vanilla and remaining flour. Spoon over prepared crust. In a small bowl, combine the cranberry sauce and cornstarch. Spoon over cream cheese mixture. , Sprinkle with the remaining crumb mixture. Bake at 350° for 30-35 minutes or until the center is almost set. Cool on a wire rack before cutting.

CRANBERRY CRUMBLE CHEESECAKE BARS

- Preheat oven to 350°F. Grease and flour a 9"x 13"x 2" baking pan.
- Place the flour, oats, butter, sugar, brown sugar, baking powder, and salt in the bowl of a food processor. Pulse several times until the mixture is crumbly.
- Remove 1 cup of the mixture and mix with the pecans, forming small clumps with your fingers. Refrigerate until needed.
- Press the remaining crust mixture firmly and evenly into the bottom of the prepared pan. Bake 15 minutes. Then, set aside to cool slightly.
- Place the cream cheese, sugar, eggs, and lemon juice in a large mixing bowl. Using an electric mixer on medium speed, beat until combined and smooth. Stir in the dried cranberries.
- Pour the filling mixture over partially cooled crust. Spread evenly.
- Scatter the reserved crumb topping over the filling.
- Bake 40 to 45 minutes, or until the edges are brown and the filling is set.
- Cool in the pan on a wire rack for 20 minutes. Cover and chill for at least 2 hours before serving.

CRANBERRY CRUMB BARS
Celebrate the season with cranberry bars! They're super easy to make and can be cut into mini squares, just right for a dessert tray.

- Heat oven to 375°F. Grease 13x9-inch pan with butter or cooking spray.
- In large bowl, mix flour, 1 cup sugar, the almonds, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in egg. Press 2 1/2 cups of crumb mixture in bottom of pan. Stir cinnamon into remaining crumb mixture; set aside.
- In medium bowl, stir all filling ingredients. Spoon evenly over crust. Spoon reserved crumb mixture evenly over filling.
- Bake 45 to 55 minutes or until top is light golden brown. Cool completely. Refrigerate until chilled. Cut into 6 rows by 4 rows. Store tightly covered in refrigerator.

- Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides; grease paper., In a large bowl, combine cake mix and oats; stir in melted butter. Reserve 1-1/3 cups crumb mixture for topping; press remaining mixture onto bottom of prepared pan., In a large bowl, beat cream cheese, sugar and nutmeg until smooth. - In a small bowl, combine flour and confectioners' sugar; cut in the butter until crumbly. Press into a greased 13-in. x 9-in. baking dish. - Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking pan.
- Combine flour, sugar, and salt in a large bowl. Cut in butter using a pastry cutter or fork until mixture resembles coarse crumbs. Stir in 1 egg until mixture is evenly combined but still crumbly. Firmly press 1/2 of the mixture into the bottom of the prepared pan to form an even crust.

- Combine flour and brown sugar in medium microwaveable bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Microwave on HIGH 3 min., stirring after each minute. Microwave additional 1 to 2 min. or until crumb mixture is crisp and golden brown, stirring every 30 sec. Add nuts; mix well.
