ENDIVE WITH CRANBERRY ORANGE CHICKEN SALAD



Endive with Cranberry Orange Chicken Salad image

Endive leaves layered with chicken mixture and topped with cranberry-orange relish gives you delicious appetizers. Perfect for a party.

1 cup chopped cooked chicken
2 medium green onions, chopped (2 tablespoons)
1/2 teaspoon grated orange peel
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/4 cup mayonnaise or salad dressing
2 heads green or red Belgian endive (16 leaves)
1/3 cup frozen (thawed) cranberry-orange relish or sauce
16 cashews

Steps:

  • Mix chicken, onions, orange peel, salt, ginger and mayonnaise until well blended. (If making ahead, cover and refrigerate up to 24 hours.)
  • Spoon about 1 tablespoon chicken mixture onto each endive leaf. Top each with 1 teaspoon relish and 1 cashew. Garnish with additional orange peel if desired. Serve immediately.

  • Reserve 2 Tbsp. onions for later use. Combine remaining onions with chicken, dressing, ginger and orange zest.
  • Spoon about 1 Tbsp. chicken mixture onto each lettuce leaf; top with cranberry sauce.
  • Sprinkle with reserved onions.

This is an incredibly easy recipe - and delicious! Just mix it up before going to work, then pop it in the oven when you get home in the evening. The sauce that forms while baking tastes great on rice.

6 skinless, boneless chicken breasts
1 ½ (1 ounce) packages dry onion soup mix
1 (16 ounce) can jellied cranberry sauce
1 cup French dressing

Steps:

  • Place the chicken breasts in a glass or non-reactive baking dish.
  • Stir the onion soup mix, cranberry sauce, and French dressing together in a bowl until well blended. Pour over the chicken breasts. Cover the baking dish with plastic wrap, and refrigerate at least 8 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking dish, and cover loosely with aluminum foil.
  • Bake chicken in preheated oven until top is bubbly and slightly browned, about 1 hour and 15 minutes.

3 heads endive - washed, dried, and separated into individual leaves
⅓ cup crumbled blue cheese
⅓ cup sweetened dried cranberries (such as Craisins®)
⅓ cup glazed walnuts
2 tablespoons balsamic vinegar, or to taste

Steps:

  • Arrange endive leaves on a serving tray.
  • Stir blue cheese, cranberries, and walnuts together in a bowl. Place a small amount of the blue cheese mixture on each leaf. Drizzle with balsamic vinegar.

  • Bring a pot of water to a boil, and set up a bowl of ice water. Place the arugula in a strainer and immerse it into the boiling water for 15 seconds. Immediately remove the arugula and place in the ice water for 10 seconds, to stop the cooking process. Drain and squeeze all the excess water from the arugula leaves.
  • Place the blanched arugula, garlic, a pinch of salt and pepper, pine nuts, and olive oil in a food processor. Blend until combined. Add the manchego cheese, and pulse to combine. Taste to check for seasoning.
  • To assemble the cups, toss the chicken breast with the dried cranberries, pesto, and fennel. Season to taste with salt and pepper, if necessary.
  • Separate the endive into leaves, and spoon the pesto chicken mixture into the endive cups. Serve and enjoy!
