CRANBERRY & MARMALADE SAUCE

Cranberry & marmalade sauce image

A homemade cranberry sauce with little flecks of peel from the marmalade for lovely bursts of citrus - easy to make in just 15 minutes

Provided by Sara Buenfeld

Categories     Condiment

Time 15m

Number Of Ingredients 4

300g pack fresh or frozen cranberries
juice 1 orange
50g light muscovado sugar
100g orange shred marmalade

Steps:

  • Tip the cranberries into a medium pan over a low heat with the orange juice, sugar and marmalade, and stir until the sugar and marmalade melt and the mixture starts to bubble. Cook for 3-5 mins, depending on whether the cranberries are fresh or frozen, as the frozen ones will soften more quickly. They need to be tender but still hold their shape, so try to squash one to see if it is soft enough. The sauce will thicken as it cools, but this has a looser texture than shop-bought. Will keep for 1 week in the fridge.

STEAMED CRANBERRY PUDDING WITH ORANGE MARMALADE SAUCE

Steamed Cranberry Pudding With Orange Marmalade Sauce image

My mom always (and we expect it most definitely) makes a steamed date pudding over Christmas and for New Year's. I found this recipe and would love to borrow her steamed pudding mold and try this for Thanksgiving. This recipe needs a pudding steamer. I hope this pudding will become a family favorite like my mom's date pudding recipe.

Time 2h50m

Yield 1 pudding, 10 serving(s)

Number Of Ingredients 24

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon clove
1/3 cup sugar
1/3 cup dark brown sugar, packed
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 large egg
1/2 cup low-fat milk
1 1/2 cups fresh cranberries, coarsely chopped
1/2 cup golden raisin
3 tablespoons pecans, chopped
1 3/4 cups low-fat milk
3 tablespoons sugar
1 tablespoon cornstarch
1 large egg
2 tablespoons orange marmalade
1 teaspoon butter, softened
1/2 teaspoon orange rind, grated
1/2 teaspoon vanilla extract

Steps:

  • Pudding:.
  • Combine flour, baking powder, cinnamon, salt, ginger, nutmeg and cloves in a small bowl with a whisk. Set aside.

  • Stir in cranberries, raisins and pecans.
  • Spoon batter into a 6-cup steamed-pudding mold coated with cooking spray. Cover tightly with lid (also coated with cooking spray) and secure tightly. Place mold on a shallow rack in a stockpot; add enough hot water to come halfway up sides of mold. Cover and steam over medium-low heat for 2 1/2 hours or until a wooden pick inserted in the center of the pudding comes out almost clean, adding additional water as needed.
  • Cool on wire rack for 10 minutes.
  • Invert mold onto a platter and slice pudding. Serve pudding warm with Orange Marmalade Sauce (recipe below).
  • Sauce Recipe: Combine low-fat milk, sugar, cornstarch and egg in the top of a double boiler; stir well with a whisk.
  • Cook over simmering water until thick (about 6 minutes); stirring constantly.
  • Remove from heat and stir in marmalade, butter, orange rind and vanilla. Serve warm over the pudding.

FRESH CRANBERRY-ORANGE SAUCE

Fresh Cranberry-Orange Sauce image

Cranberry sauce is a must-have, classic holiday side dish. Sweet orange and pear are perfect partners to the tart cranberries. The orange marmalade intensifies the citrus flavor, the vanilla adds a subtle aroma, and the star anise will have people asking "what is that?"

Provided by lutzflcat

Time 40m

Yield 8

Number Of Ingredients 10

½ cup orange juice
½ cup cranberry juice
⅓ cup white sugar
1 (12 ounce) package fresh cranberries
1 medium pear - peeled, cored, and diced
2 tablespoons grated orange zest
½ teaspoon vanilla extract
1 star anise
1 pinch salt
2 tablespoons orange marmalade

Steps:

  • Combine orange juice, cranberry juice, and sugar in a saucepan over medium-high heat; bring to a boil. Cook, stirring occasionally, for about 5 minutes.
  • Stir in 1/2 of the cranberries, pear, orange zest, vanilla extract, star anise, and salt, and return to a boil. Reduce heat and simmer for about 5 minutes. Add the remaining cranberries and cook, stirring often, until cranberries start to burst and mixture starts to thicken, about 10 minutes.
  • Remove from heat. Stir in orange marmalade and set aside. Sauce will continue to thicken as it cools. Cover and refrigerate until ready to serve.
