CRANBERRY BBQ TURKEY SANDWICH

1 pound sliced leftover turkey meat
1 cup Cranberry BBQ Sauce, recipe follows
4 hoagie rolls, buttered
4 thick slices fontina
Fried Shallots, recipe follows
Two 14-ounce cans cranberry sauce
1 cup orange juice
1/2 teaspoon ground ginger
Pinch ground cinnamon
Pinch kosher salt
1 cup tomato puree
3 tablespoons apple cider vinegar
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon fresh ground black pepper
1/4 teaspoon hot sauce, such as Tabasco
4 cups canola oil
2 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper

4 shallots, peeled and thinly sliced

Steps:

  • Preheat the broiler.
  • Add the turkey and Cranberry BBQ Sauce to a large bowl and toss to coat. Pile the turkey on the rolls and top with the cheese. Place the sandwiches on a baking sheet and place under the broiler until the cheese melts and is bubbly. Top the sandwiches with the Fried Shallots and serve.
  • Add the cranberry sauce, juice, ground ginger, cinnamon and a pinch of salt to a small saucepan. Bring to a boil and reduce to a simmer. Cook uncovered, stirring often to incorporate flavors, about 15 minutes. Remove the saucepan from the heat and cool. Reserve 1 cup and store the rest for future use.
  • Combine the tomato puree, 1 cup of the cranberry sauce, vinegar, Worcestershire, mustard, 1/2 teaspoon salt, pepper and hot sauce in a medium saucepan. Bring to a boil, reduce the heat and simmer uncovered, stirring frequently until all ingredients are well incorporated, 8 to 10 minutes.
  • Heat the oil to 375 degrees F in a high-sided skillet or pan. Put the flour in a small bowl and sprinkle with salt and pepper. Add the shallots to the bowl and toss to coat, shaking off any excess flour. Fry the shallots in batches until golden brown, 2 to 3 minutes. Transfer the shallots to a paper-towel-lined-plate and sprinkle with salt.

Oh what a good way to enjoy your holiday leftovers. I like whole berry cranberry sauce, so I used that when making this sandwich. But, the jelly would work too. Can't wait to make these again!

3 c shredded leftover cooked turkey (chicken or pork)
1 large onion, sliced
1 clove garlic, minced
1/3 c cranberry sauce
1/3 c chunky applesauce (cinnamon works well)
1/4 c turkey gravy (chicken or pork)
1/2 c bbq sauce
4 Tbsp ketchup
3 Tbsp apple cider vinegar
1/2 tsp chili powder
1/4 tsp cumin
salt and pepper
4 crusty rolls (or 6-8 small slider rolls)

Steps:

  • 1. In a saucepan on med-high cook sliced onion in butter and salt. Cook until slightly browned. Add garlic and cook for another min.
  • 2. Combine onions and the rest of the ingredients (except turkey & rolls). Turn heat to med-low, stirring and cooking for 3-5 min. Stir in turkey, cover and continue warming for another five minutes, or until warmed through. Serve on rolls. Goes great with a apple coleslaw, on side or top of shredded turkey.

SLOW-COOKER BARBECUE PULLED TURKEY WITH SLAW



Slow-Cooker Barbecue Pulled Turkey with Slaw image

This recipe is a summer BBQ on a plate. Add the turkey breast to your slow cooker with some onions, garlic and BBQ sauce and forget about it all day! The result is a very tender, juicy, pulled BBQ turkey.

1 onion, sliced
4 cloves garlic, finely chopped
1 cup barbecue sauce
1 1 1/2- to 2-pound skinless, boneless turkey breast
Kosher salt and freshly ground pepper
1 teaspoon paprika
1 teaspoon garlic powder
3 tablespoons mayonnaise
3 tablespoons apple cider vinegar, plus more if needed
1 1/2 teaspoons sugar, plus more if needed
12 ounces shredded coleslaw mix
Cornbread and pickles, for serving

Steps:

  • Combine the onion, garlic, barbecue sauce and 1/2 cup water in a 5- to 6-quart slow cooker; stir well. Season the turkey breast generously with salt and pepper. Combine the paprika and garlic powder in a small bowl; rub all over the turkey. Place the turkey on top of the onion mixture in the slow cooker. Cover and cook on low until the turkey is cooked through and tender, 7 to 8 hours.
  • In the last 30 minutes of cooking, whisk the mayonnaise, vinegar and sugar in a small bowl. Pour over the coleslaw mix in a large bowl and toss to coat. Season with salt and pepper.
  • Remove the lid from the slow cooker and use two forks to pull the turkey into pieces. Increase the slow cooker to high and let sit, uncovered, until the sauce thickens, about 10 minutes. Season with salt and pepper; add vinegar and sugar to taste.
  • Divide the turkey and coleslaw among plates. Serve with cornbread and pickles.

  • To make the coleslaw: Combine cabbage, carrot, and apple in a large bowl. Sprinkle with 2/3 cup sugar and salt and toss to combine. Let stand five minutes, then transfer to a large colander and rinse thoroughly under cold running water. Transfer vegetables to a salad spinner and spin dry. Alternatively, transfer to a large rimmed baking sheet lined with a triple layer of paper towels or a clean kitchen towel and blot mixture dry with more towels. Return to large bowl.
  • In a small bowl, whisk together sour cream mayonnaise, vinegar, 3 tablespoons sugar, honey, black pepper, mustard powder, and poppy seeds. Pour dressing over vegetables and toss to coat. Adjust seasoning to taste with salt, pepper, and/or sugar.
  • To make the turkey: Season turkey liberally with barbecue rub all over. Light 2/3 chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Place wood chunk directly on coals. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place turkey on cool side of grill, cover, and cook until thighs register between 165-170°F on an instant read thermometer inserted into the thickest portion of the meat, 45-60 minutes. Transfer turkey to a cutting board and let sit until cool enough to handle, about 10 minutes.
  • Remove skin from thighs, roughly chop, and place in a large bowl. Pull turkey meat from the bones and transfer to bowl with chopped skins. Pour in approximately 3/4 cup of barbecue sauce and toss to coat turkey. Add additional barbecue sauce to taste.
