This cornbread has crushed fried pork rinds in it. Haven't tried it. Just sounded interesting so I'm posting here to try in the future.

CRACKLIN' SKINS

Cracklin' Skins image

When you cook a whole hog, one thing you should never do is throw out the skin. It's the key ingredient for one of the tastiest by-products in the world. If you're not cooking a whole hog, I'm not going to fool you by saying it's easy to pick up some pig skin, but you might be able to get some from your local butcher or from someone who is cooking a whole hog, a ham, or a pork shoulder and is willing to part with it.

Yield serves 6 to 8

Number Of Ingredients 2

Hog skin from a whole hog, ham, or shoulder
Kosher salt

Steps:

  • Preheat the oven to 300˚F.
  • Scrape any fat and meat off the skin, leaving only the skin. Using kitchen shears, cut the skin into cracker-size pieces. Place the skin pieces on top of a cooling rack in a large sheet pan, and sprinkle them with kosher salt. Cook in the oven until the fat is rendered in the bottom of the sheet pan and the skin is golden brown and crispy, usually about 3 1/2 hours.
  • Remove the pan from the oven and place the skins on paper towels to drain and cool.
  • Dust the cracklings with your favorite rub or dip them into your favorite barbecue sauce.

BEST STOP CRACKLIN

Best Stop Cracklin image

Provided by Food Network

Time 2h25m

Yield about 7 pounds

Number Of Ingredients 3

Oil, such as canola oil, hog lard or vegetable oil, for frying
15 pounds pork belly, cut into 1-inch squares
Cajun seasoning, such as Best Stop Cajun Seasoning, for sprinkling

Steps:

  • Fill a cast-iron pot halfway with oil and heat over medium heat until the oil reaches 350 degrees F.
  • Add the pork belly to the oil and cook, stirring constantly, until golden brown and the skins begin to float, crack and pop, about 1 hour. Drain on a sheet tray lined with paper towel and allow to cool for 30 minutes.
  • Again, heat the oil to 350 degrees F and fry a second time, stirring occasionally, until the cracklings are crisp and golden, 10 to 12 minutes. Drain on a sheet tray lined with paper towel. Sprinkle liberally with Cajun seasoning.
  • Allow to cool slightly and serve.

20 DELICIOUS WAYS TO USE PORK CRACKLINS LEFTOVER FROM …

  • Cracklin Biscuits. Cracklins can sometimes be used interchangeably with bacon. You’ll notice this recipe calls for cracklins or bacon. Why not use pork cracklins to make delicious homemade biscuits?
  • Bacon Bit Substitutes. Do you enjoy bacon bits on your salad? I try to eat a salad every day for lunch. Perhaps I’d be a little more excited if I knew I could add bacon bits to it.
  • Bread Crumbs. I use breadcrumbs for many things. They’re a great addition to a meatloaf. They’re also a great way to top off homemade macaroni and cheese.
  • Add Life to Green Bean Casserole. Green bean casserole is a traditional dish at Thanksgiving, but honestly, many people avoid it because it can get boring.
  • Milk Gravy Retake. We eat a ton of gravy around my house. I know, it isn’t the healthiest, but my husband was raised on it, and we keep the tradition with our kids.
  • Cornbread Anyone? I’ll be honest; I don’t like cornbread. Gasp! I know. My husband couldn’t fathom it at first either. It’s rather boring in my opinion.
  • It’s the Cherry on Top. Most of us like to add a cherry on top of our sundae. Don’t get concerned; I’m not going to suggest you add cracklins to your ice cream unless you’re extremely brave.
  • Brown Gravy. My husband grew up on milk gravy, but I grew up on brown gravy. I love it on my mashed potatoes or stuffing. Well, add a little something extra to your brown gravy by tossing in a handful of crispy pork cracklins at the end.
  • Chips and Dip. You probably already guessed, if I’m a gravy girl, I’m most likely a dip girl too. You would have assumed correctly. However, instead of purchasing a bunch of ingredients to make a dip, why not make it entirely from scratch.
  • Pork Cracklin and Veggies. It may seem odd to mix cooked pig fat with vegetables for a delectable meal, but would you imagine it works? The next time you’re in need of a snack, cut up crunchy vegetables into bite-sized pieces.
