OLD-FASHIONED CRACKLE COOKIES
These are an old-fashioned favorite that my family loves. Kids can help by rolling them in confectioners' sugar and placing on greased baking sheets.

Steps:
- In a large bowl, beat sugar and oil until blended. Beat in eggs, chocolate and vanilla. Combine the flour, baking powder and salt; gradually add to sugar mixture and mix well. Cover and refrigerate dough for at least 2 hours., With sugared hands, shape dough into 1-in. balls. Roll in confectioners' sugar. Place 2 in. apart on baking sheets coated with cooking spray. Bake at 350° for 10-12 minutes or until set. Remove to wire racks to cool.

CRACKLED SUGAR COOKIES
There is another recipe by this title on zaar, however this one is different in that it cooks at a lower temperature for a longer time to get the edges set, the tops crackled, and yet still be tender to bite. It also calls for a bit more sugar...give it a try!

Steps:
- In large bowl, beat butter and shortening on high for 30 seconds.
- Add sugar, baking soda, cream of tartar and salt and beat until combined.
- Beat in egg yolks and vanilla until combined.
- Mix in flour until well combined.
- Shape into 1 inch balls and place 2 inches apart on ungreased cookie sheets.
- Bake at 300 degrees for about 20 minutes or until tops are just slightly crackled and sides are set.
- Do not let edges brown -- if they do they are over done and will not be tender.
- Transfer to wire rack to cool.
- May freeze up to 3 months.

- Preheat oven to 350 degrees F (180 degrees C). Lightly grease 2 cookie sheets.
- Cream together sugar and butter. Beat in egg yolks and vanilla.
- Add flour, baking soda, and cream of tartar. Stir.
- Form dough into walnut size balls and place 2 inches apart on cookie sheet. Don't flatten. Bake 10 to 11 minutes, until tops are cracked and just turning color.

CRACKED SUGAR COOKIES
This is a family favorite sugar cookie recipe handed down to me from my mom. When my husband was deployed to Iraq, he was always excited to receive a box of these in the mail. I always make sure to watch these closely and take them out of the oven before they brown. If they brown, they will end up too hard and crunchy.

- Preheat oven to 300 degrees F (150 degrees C).
- Beat 2 cups sugar, butter, and vegetable oil with an electric mixer in a large bowl until smooth. Add egg yolks one at a time, allowing each egg to blend into the butter mixture before adding the next. Sift flour, baking soda, cream of tartar, and salt into the egg yolk mixture; stir. Stir in vanilla extract. Roll the dough into walnut-sized balls.
- Spread 1/4 cup sugar onto a flat surface. Roll the balls of dough in sugar to coat. Arrange onto baking sheets spaced at least 2 inches apart.
- Bake in preheated oven cooked in the middle, but not yet browned, about 15 minutes.

CRACKLED SUGAR COOKIES
This is by far the prettiest, easiest (no rolling) and best tasting sugar cookie I have ever made. They look like they came right out of the bakery. Try them-- then stand back and wait for the oohs and ahs!!!!

- Preheat oven to 350 degrees.
- Lightly grease two baking sheets.
- Cream sugar and butter together until light.
- Beat in yolks and vanilla.
- Sift together the measured sifted flour, baking soda and cream of tartar then fold into the butter sugar mixture.
- Form dough into walnut size balls.
- Place 2" apart on the cookie sheets.
- Do not flatten.
- Bake for about 11 minutes until the tops are cracked and just turning color.
- Cool on cookie sheet 2 minutes.

- In a bowl (preferably metal) stir together flour, granulated sugar, cocoa, baking powder, salt, and blend in butter. Stir in egg and vanilla until mixture is blended. NOTE: (Some people add ¼ cup mini chocolate chips to make richer, I did not).
- Spread dough in a thin layer in bowl and freeze 10 minutes, or until firm.
- Preheat oven to 400°F and lightly grease 2 baking sheets.
- Put 4 tablespoons confectioners' sugar in a small bowl and dust hands with additional. Roll each piece of dough into a ball (small - gumball size) and then in confectioners' sugar in bowl. Arrange balls 2 inches apart on baking sheets, bake 8 to 10 minutes, or until cookies are just set. Cool cookies on racks.
