This is a great alternative to hot crab dips. Refreshing and addictive. Serve with tortilla or plantain chips.

1/3 cup unsweetened coconut milk
3 scallions, roughly chopped
1/2 cup fresh parsley
1/2 cup mayonnaise
3 tablespoons fresh lime juice
1 lb lump crabmeat or 1 lb imitation krab meat

Steps:

  • In a blender or food processor, combine coconut milk, scallions, mayo, lime juice, and parsley.
  • Blend well.
  • Add crab or krab and pulse until combined.

CRAB AND COCONUT DIP WITH PLANTAIN CHIPS

1/3 cup well-stirred unsweetened canned coconut milk
3 scallions, chopped
1 teaspoon chopped fresh jalapeño chile, including seeds
1/2 cup chopped fresh cilantro
1/2 cup mayonnaise
3 tablespoons fresh lime juice, or to taste
1 lb jumbo lump crab meat, picked over and coarsely shredded
Accompaniment: plantain chips

Steps:

  • Blend coconut milk, scallions, jalapeño, and 1/4 cup cilantro in a blender until smooth and pour into a bowl. Whisk in mayonnaise, juice, and remaining 1/4 cup cilantro until just combined. Stir in crab and salt to taste and serve spooned on plantain chips.

COCONUT CRUSTED CRAB CAKES

1 pound crabmeat, drained, picked clean of shell, lightly squeezed if wet
1 cup mayonnaise
1/2 cup thinly sliced scallions, both green and white parts
1/4 cup finely diced red bell pepper
2 teaspoons peeled and grated fresh ginger
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup unsweetened shredded coconut, plus 1 cup more for dredging
1/2 cup panko bread crumbs, plus 1 cup more for dredging
About 6 tablespoons peanut or canola oil
Sweet chili sauce
4 lime wedges
1/4 cup fresh lime juice
2 tablespoons sugar
2 tablespoons Asian fish sauce
2 tablespoons water
2 teaspoons chopped cilantro leaves
1/2 teaspoon red pepper flakes
1/2 teaspoon finely chopped lemongrass, tender white part only

Steps:

  • Lime Dipping Sauce, recipe follows
  • Put the crabmeat in a large bowl and add the mayonnaise, scallions, bell pepper, ginger, salt, and pepper and gently combine using a rubber spatula. Add the 1/2 cup coconut and 1/2 cup panko and gently fold in. Divide the mixture into 8 mounds and form into patties about 3-inches in diameter and 3/4-inch thick. Put the patties on a large plate, cover with plastic wrap, and refrigerate 30 minutes or longer.
  • When you are ready to fry the crab cakes, combine the 1 cup of coconut and 1 cup of panko in a shallow container. Lightly dredge the patties in the crumbs, shaking off any excess. Put 2 large nonstick skillets with over medium high heat. Add about 3 tablespoons of oil to each pan. When the pans are hot, place 4 patties in each pan. Turn the heat down to medium and fry the cakes until golden and heated through, turning once with a spatula to brown both sides, about 4 minutes per side.
  • Transfer the crab cakes to plates, serving 2 to each person, accompanied by ramekins of sweet chili sauce and lime wedges.
  • Whisk together all ingredients in a small bowl.

  • Bake at 350F for 10-15 minutes, until bubbly.

This recipe can be served hot or cold with a variety of different crackers or bread. It can be placed in a loaf of hollowed out sourdough bread; the bread can be used for dipping. Don't heat dip when in the bread; bread will become soggy. Heat the dip, and then fill bread.

1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
2 cloves garlic, minced
2 green onions, chopped
6 ounces imitation crabmeat, diced
1 pinch salt
1 pinch ground black pepper

Steps:

  • In a medium bowl, mix cream cheese until soft and smooth. Blend in lemon juice, Worcestershire sauce, and salt and pepper. Mix in garlic, onions, and crab meat. Store, covered, in refrigerator until ready to use.
  • To serve warm, heat in microwave for 3 to 4 minutes.

11 ounces cream cheese, softened
1 small onion, finely chopped
5 tablespoons mayonnaise
2 (6 ounce) cans crabmeat, drained and flaked
⅛ teaspoon garlic powder
salt and pepper to taste
1 (1 pound) loaf round, crusty Italian bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the cream cheese, onion, mayonnaise, crabmeat, garlic powder, salt and pepper. Spread mixture into a 1 quart baking dish.
  • Bake for 20 minutes in the preheated oven. While the dip is baking, cut a circle in the top of the bread, and scoop out the inside to create a bread bowl. Tear the removed bread into pieces for dipping.
  • Remove baked crab dip from the oven, and stir well. Spoon the mixture into the hollowed out loaf. Place bread bowl and chunks of bread on a medium baking sheet, and bake for an additional 10 minutes. Serve hot.
