8 ounces medium pasta shells
3 tablespoons unsalted butter
1 1/2 pounds cremini mushrooms, thinly sliced
2 large shallots, diced
Kosher salt and freshly ground black pepper, to taste
3 cloves garlic, minced
4 teaspoons chopped fresh thyme
2 1/2 tablespoons all-purpose flour
2 cups beef stock
1 1/2 teaspoons Dijon mustard
3/4 cup sour cream
2/3 cup freshly grated Parmesan
2 tablespoons chopped fresh parsley leaves

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Melt butter in a large skillet over medium high heat. Add mushrooms and shallots, and cook, stirring occasionally, until mushrooms are tender and browned, about 5-7 minutes; season with salt and pepper, to taste. Stir in garlic and thyme until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute Gradually whisk in beef stock and Dijon. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 4-5 minutes. Stir in pasta and sour cream until heated through, about 1-2 minutes. Stir in Parmesan until melted, about 1 minute. Stir in parsley; season with salt and pepper, to taste. Serve immediately.

2 tsp olive oil
1 onion, finely chopped
1 tbsp paprika
2 garlic cloves, crushed
300g mixed mushrooms, chopped
150ml low-sodium beef or vegetable stock
1 tbsp Worcestershire sauce, or vegetarian alternative
3 tbsp half-fat soured cream
small bunch of parsley, roughly chopped
250g pouch cooked wild rice

Steps:

  • Heat the olive oil in a large non-stick frying pan and soften the onion for about 5 mins.
  • Add the paprika and garlic, then cook for 1 min more. Add the mushrooms and cook on a high heat, stirring often, for about 5 mins.
  • Pour in the stock and Worcestershire sauce. Bring to the boil, bubble for 5 mins until the sauce thickens, then turn off the heat and stir through the soured cream and most of the parsley. Make sure the pan is not on the heat or the sauce may split.
  • Heat the wild rice following pack instructions, then stir through the remaining chopped parsley and serve with the stroganoff.

Our son always loved this recipe. He never knew it was made with you-know-what, FAKE crab, until after he worked on a crab boat a few years ago! Of course, you can always use real crab. It's easy to put together and with a salad it makes a nice meal. I always make it with lowfat sour cream, lowfat soup, and I just use butter flavored cooking spray to replace the butter. When done this way it cuts out almost all the fat, and it's still good.

2 tablespoons butter
1/2 lb mushroom, sliced
1 (10 3/4 ounce) can cream of mushroom soup
1 cup milk or 1 cup fat-free half-and-half
1/4 cup marsala wine
16 ounces imitation crabmeat
1 (10 ounce) package frozen peas, thawed
8 ounces sour cream
2 tablespoons parsley, minced

salt and pepper, to taste

Steps:

  • In butter, cook mushrooms until all liquid is absorbed.
  • Stir in soup, milk, and wine and bring to boil.
  • Reduce heat, stir in crab, peas, and sour cream.

1/2 cup finely diced yellow onion
1/2 cup finely diced red bell pepper
2 garlic cloves, minced
8 ounces mushrooms, sliced
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1 cup chicken stock or 1 cup chicken broth
3 tablespoons dry white wine
1/4 teaspoon dried dill weed
1/4 teaspoon salt
1/8 teaspoon white pepper
2 drops Tabasco sauce (or to taste)
1 cup light sour cream
3/4 lb crabmeat, flaked and picked over
8 ounces spinach noodles or 8 ounces plain noodles, cooked and drained

Steps:

  • In a saucepan over medium heat, warm the oil.
  • Add in the onion, bell pepper, garlic, and mushrooms; stir/saute for about 5 minutes or until tender.
  • Transfer to a 2 1/2 quart casserole dish that has been sprayed with nonstick cooking spray.
  • Melt the butter in the same saucepan.
  • Stir in the flour; continue stirring until bubbly.
  • Add in stock, wine, and seasonings; bring to a boil, stirring constantly for about 2-3 minutes or until thickened.
  • Remove from heat.
  • Stir in sour cream and crabmeat.
  • Add mixture to casserole dish along with noodles; stir to mix well.
  • Bake in a 350 degree oven for 30 minutes or until bubbly, stirring once.

1 pound portobello mushrooms, stemmed
8 ounces shiitake mushrooms, stemmed
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1 tablespoon all-purpose flour
1 1/4 cups mushroom broth
1/2 teaspoon soy sauce
1 teaspoon Dijon mustard
2 ounces soft goat cheese
1/2 cup sour cream
2 tablespoons chopped parsley
Cooked and buttered egg noodles, for serving

Steps:

  • Slice the portobellos into 1/2-inch-thick strips, then cut each strip in half crosswise. Repeat with the shiitakes, keeping the two mushrooms separate.
  • Melt 2 tablespoons of the butter in a large skillet over medium heat. When the foam starts to subside, add the portobellos and cook, tossing once or twice, about 1 minute. Add 1/4 teaspoon salt and a generous pinch of pepper and cook, stirring occasionally, until browned, juicy and tender but firm, about 2 minutes. Transfer to a medium bowl.
  • Add 1 tablespoon of the remaining butter to the skillet, let it sizzle, then add the shiitakes and toss for about 30 seconds. Add the remaining 1 tablespoon butter, 1/4 teaspoon salt and a generous pinch of pepper and cook, tossing occasionally, until browned and tender but still firm, 1 to 2 minutes.
  • Return the portobellos to the skillet and sprinkle the flour over the mushrooms. Then toss, scraping the bottom of the skillet, until the flour disappears, about 30 seconds. Stir in half the broth and all the soy sauce and mustard, scraping the bottom of the skillet until it's clean, then stir in the remaining broth. Bring the mixture to a simmer and cook until the sauce thickens slightly, about 6 minutes. Cover, reduce the heat to low and simmer 5 minutes, stirring once or twice. Stir in the goat cheese.
  • Remove the skillet from the heat, and stir in the sour cream and parsley. Taste and add more salt and pepper as needed. Serve the stroganoff over buttered egg noodles.

The first recipe for beef stroganoff dates back to the 1800s and is rumored to have Russian aristocratic origins. This version is a bold, modern vegetarian reimagination that is rich and decadent, thanks to the magic of mushrooms, which deliver walloping umami. A variety of mushrooms adds a nice mix of textures, but a similarly intense dish can be created with just one type. Achieve even deeper layers of flavor by soaking a handful of dried porcini mushrooms in one cup of hot water for 10 to 15 minutes, then adding the mushrooms and soaking liquid, which can replace the vegetable stock, to the dish. Crème fraîche is naturally thick and imparts a velvety tang to the dish, but use sour cream if you prefer. (Vegans can use cashew or coconut cream). 1 1/2 pounds mixed mushrooms (oyster, shiitake, cremini or button), stemmed and sliced into 1/4-inch pieces
2 sprigs fresh thyme
2 garlic cloves, finely chopped
1/2 cup white wine
1 cup vegetable stock
2 tablespoons soy sauce
1 1/2 teaspoons Dijon mustard
1/2 cup crème fraîche or sour cream
Black pepper
Sweet paprika, for dusting
Handful of chopped parsley leaves, for serving
Mashed potatoes, wide egg noodles or rice, for serving

Steps:

  • Place a large (12-inch) skillet on medium-high heat. Add olive oil and onion, season with salt, and cook for 2 to 3 minutes until softened. Add the mushrooms, thyme and garlic, and stir to combine. Cook for 8 to 10 minutes, leaving it undisturbed for 2 to 3 minutes at a time before stirring, to allow the mushrooms to caramelize.
  • Pour in the wine to deglaze the pan, scraping up any browned bits on the bottom, then cook for about 1 minute. Add the vegetable stock and soy sauce, and cook for 5 to 7 minutes until the liquid has reduced and is slightly thickened.
  • Take the pan off the heat, and stir in the mustard and crème fraîche. Taste, and season with salt and black pepper. Dust with paprika, scatter with parsley and serve with your choice of mashed potatoes, wide egg noodles or rice.

2 tablespoons butter, and
2 tablespoons butter
1 large shallot, minced
3 cups portabella mushrooms or 3 cups cremini mushrooms, cubed
1 1/2 cups vegetable broth
1/4 cup white wine
1 teaspoon fresh thyme, chopped
3 tablespoons flour
1/4 cup heavy cream
1/4 cup parmesan cheese, grated
1/4 cup fresh parsley, chopped
salt and pepper

Steps:

  • Melt the first amount of butter over medium heat and add the shallot, cook until tender.
  • Add the mushrooms to the pot and cook until tender.
  • Add the broth, wine, and salt and pepper if desired. Bring to a boil and then turn down heat and simmer for about ten minutes.
  • While the sauce is simmering, in a separate pot melt the second amount of butter over medium heat.
  • Stir the flour into the butter until absorbed to make a roux.
  • Pour the mushroom mixture into the roux and bring to a boil, turn down the heat and stir until thickened.
  • Stir in the heavy cream and parmesan cheese, and parsley.
  • This can be served over rice or pasta -- but secretly sometimes I just eat it like a stew by itself with some crusty bread. Yum yum.

750 g potatoes, peeled and cut into chunks
20 g butter or 20 g margarine
1 tablespoon coarse grain mustard
150 ml milk or 150 ml soya milk
1 tablespoon chives, chopped
40 g butter or 40 g margarine
3 shallots, finely chopped
3 whole garlic cloves, finely chopped
1/2 teaspoon paprika
500 g white mushrooms, assorted, roughly chopped
1 tablespoon brandy
150 ml thick double cream
1 tablespoon dill, finely chopped
1 pinch salt & freshly ground black pepper
2 tablespoons parsley, finely chopped, to garnish

Steps:

  • Boil or steam the potatoes until tender. Drain and return to the pan. Mash, and add the butter, mustard and chives. Heat the milk, pour over the potatoes and beat inches
  • To make the stroganoff, melt the rest of the butter or margarine in a pan. Add shallots and garlic and cook gently for 5 minutes. Add the paprika and the mushrooms and cook until just soft.
  • Add the brandy and stir in the cream and dill. Season to taste then heat gently - cover and keep warm.
  • To assemble, serve individually by placing equal portions of the mashed potato on each plate. Spoon the stroganoff over the top, and garnish with parsley.

  • Cook egg noodles al dente in boiling, generously-salted water according to package instructions. (For optimal timing, I recommend actually adding the egg noodles to the boiling water at the same time that the vegetable stock is added to the stroganoff.)
  • Melt 1 tablespoon butter in a large sauté pan over medium-high heat. Add onions and sauté for 5 minutes, stirring occasionally. Add the remaining 2 tablespoons butter, garlic and mushrooms, and stir to combine. Continue sautéing for an additional 5-7 minutes, until the mushrooms are cooked and tender. Add the white wine, and deglaze the pan by using a wooden spoon to scrape the brown bits off the bottom of the pan. Let the sauce simmer for 3 minutes.
  • Meanwhile, in a separate bowl, whisk together the vegetable stock, Worcestershire and flour until smooth. Pour the vegetable stock mixture into the pan, along with the thyme, and stir to combine. Let the mixture simmer for an additional 5 minutes, stirring occasionally, until slightly thickened. Then, stir in the Greek yogurt (or sour cream) evenly into the sauce. Taste, and season with a generous pinch of two of salt and pepper as needed.
