DEE'S ROAST PORK FOR TACOS
This is a dish that will make your tongue jump out of your mouth, slap you in the face, and say 'Oh yeah'. Put meat and maybe some Pico De Gallo or salsa into warm tortillas to make tacos.

Steps:
- Preheat the oven to 300 degrees F (150 degrees C).
- Place the roast on top of a large piece of aluminum foil. In a small bowl, stir together the green chiles, chili powder, oregano, taco seasoning and garlic. Rub onto the roast. Wrap foil around the roast so that it is completely covered, using additional aluminum foil if necessary. Place on top of a roasting rack in a baking dish, or place a cookie sheet on an oven rack below to catch any leaks.
- Roast the meat for 3 1/2 to 4 hours in the preheated oven, until falling apart. Cook to at least 145 degrees F (63 degrees C). Remove from the oven, and shred into small pieces using two forks. Season with salt to taste.

Steps:
- Make house seasoning by combining salt, pepper and garlic powder- store remainder in an airtight container for up to 6 months.
- Sprinkle 1 1/2 teaspoons of house seasoning on all sides of roast.
- Over high heat, sear roast until brown in oil.
- Place roast in slow cooker and layer onions, bay leaves, bouillon cubes, crushed garlic and cream of mushroom soup.
- Add Chardonnay and enough water to cover all of the ingredients.
- Cook on low setting for 8 hours.
COWBOY POT ROAST - DEE DEE'S
This spicy pot roast has some heat in it. You can bump up the heat or tone it down depending on your taste. This recipe is adapted from my 2005 Southern Living Annual Cookbook. The original recipe calls for a 2 1/2 to 3 pound eye of round roast, I selected a 2 1/2 lb sirloin steak. The recipe calls for a can of diced tomatoes...

- 1. Combine 1 teaspoon salt, 1 teaspoon pepper, and the next 4 ingredients in a medium bowl; set aside.
- 2. Sprinkle steak evenly with the remaining 1/2 teaspoon salt and 1/2 teaspoon pepper. Brown steak on all sides in hot oil in a large Dutch Oven over a medium high heat.
- 3. Pour tomato mixture over roast. Bring to a slow boil and reduce heat to a meduim low. Cover and simmer 1 1/2 hours to 2 hours or until meat is tender. (NOTE: make sure that this mixture is at a slow simmer, you could burn the tomato mixture if heat is to hot).
- 4. Remove steak from Dutch Oven, and cut into larger than bit size chunks; skim any fat from the Dutch Oven.
- 5. Mash 1 1/2 cans of the pinto beans and add to the Dutch Oven; add steak chucks and stir until combined.
- 6. Smimmer on med-low for an additional 10 minutes.
- 7. NOTE: This is a very thick hearty dish. The heat in this dish is entirely up to you. I used a can of HOT Diced Tomatoes with Habaneros. This was pretty spicy! We served this over rice and had a slice of cornbread with it. YUMMY! Also, you could add cummin and garlic and come up with a really nice Chili.
PERFECTLY BAKED BEANS

- Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
- Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.
PERFECT POT ROAST

- Preheat the oven to 275 degrees F.
- Generously salt and pepper the chuck roast.
- Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
- Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
- If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
- With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
- Add in the onions and the carrots, along with the fresh herbs.
- Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

- Preheat oven to 400 degrees F (200 degrees C).
- Stir carrots, potatoes, onion, and garlic together in a large roasting pan; drizzle with oil and sprinkle with herbes de Provence, salt, and pepper.
