SOFT AND CRISPY APPLE FRITTERS
These delicious Apple Fritters are studded with diced sweet apples and they are tender on the inside and crispy on the outside. They are best served warm with a dusting of powdered sugar, and they are very addicting!

- Pour the oil into a large dutch oven or deep or medium heavy-bottomed pot. Place a kitchen thermometer on the side and place it on the stove to have it ready to heat. Also, have a spider or slotted spoon nearby. Set a wire rack inside a rimmed baking sheet and set nearby the stove.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. Set aside.
- In a medium bowl or large measuring cup, whisk together the milk, eggs, butter, and vanilla. Add the wet mixture to the dry and gently fold it in with a spatula until most of the dry ingredients are wet. Gently fold in the apples. Set aside while you heat the oil.
- Heat the oil over medium-high heat, until a thermometer reaches 350 degrees. Keep an eye on it. It can get really hot quickly. If the heat rises too much, set the dutch oven or pot off the heat until the temperature comes back down to 350 degrees, and be ready to drop the fritter dough into the pot.
- Once the heat is at 350 degrees, use a cookie scoop and drop heaping scoopfuls of fritter dough into the hot oil, making sure you don't drop more than about 5 to 6 in at a time. If you drop more, the temperature in the oil will drop. Cook the fritters, for about 2 to 3 minutes, turning once as soon as the fritters are golden brown on one side. Once the fritters are puffed and golden, remove them from the oil, using a spider or slotted spoon, and transfer them to the wire rack to drain. Finish making the rest of the fritters.
- Generously dust the finished fritters with powdered sugar and serve warm. These fritters are best served the day they are made. The next day, warm leftovers in a microwave for about 40 seconds, covered or wrapped in a paper towel. Generously dust with more powdered sugar.

- In a mixing bowl, combine the flour, sugar, salt, baking powder and cinnamon.
- Make a well in the mixture and add milk, eggs and applesauce. Mix completely
- Peel and dice the apples and fold into the batter.
- In a skillet with raised sides, heat oil to 375°. Once oil is hot, drop 1/4 cup of batter in the oil. Let it fry on each side for 3 minutes until golden brown. Remove and let rest on paper towels to help soak up excess oil.
- Place fritters on a baking rack to cool.
- In a mixing bowl whisk the glaze ingredients together.
- Set rack of fritters on a baking sheet to catch the excess glaze while pouring glaze over the fritters. Glaze the fritters 2-3 times.

APPLE FRITTERS -- COOK'S COUNTRY
Regardless of their variety or whether they were sliced or grated, the apples in our Apple Fritters exuded juice and produced soggy, undercooked interiors. We found that the best solution was to dry the apples with paper towels and mix them with the dry ingredients. The dry ingredients sucked up the moisture that would otherwise have leached out during frying. We like Granny Smith apples in these fritters because they are tart and crisp. Apple juice doesn't have enough flavor-you really do need the cider. Penzeys Extra Fancy Vietnamese Cassia Cinnamon is the test kitchen's favorite brand.

- 1. Spread prepared apples in single layer on paper towel-lined baking sheet and pat thoroughly dry with paper towels. Combine flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg in large bowl. Whisk cider, eggs, and melted butter in medium bowl until combined. Stir apples into flour mixture. Stir in cider mixture until incorporated.
- 2. Heat oil in Dutch oven over medium-high heat to 350 degrees. Following step 1, use 1/3-cup measure to transfer 5 heaping portions of batter to oil. Press batter lightly with back of spoon to flatten. Fry, adjusting burner as necessary to maintain oil temperature between 325 and 350 degrees, until deep golden brown, 2 to 3 minutes per side. Transfer fritters to wire rack set inside rimmed baking sheet. Bring oil back to 350 degrees and repeat with remaining batter. Let fritters cool 5 minutes.
- 3. Meanwhile, whisk confectioners' sugar, cider, cinnamon, and nutmeg in medium bowl until smooth. Top each fritter with 1 heaping tablespoon glaze. Let glaze set 10 minutes. Serve.

- 1. Use a 1/3-cup measure and a spoon to carefully and gently portion batter into the hot oil.
- 2. Use the spoon to gently press on each fritter. The flattened shape helps the interior cook through.

My mom made these for us after school in the fall with the apples we'd pick and buy from a fruit farm. Warm, crisp, and sweet, a perfect fall treat.

- Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
- In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
- Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.
