Country Pie is old-fashioned comfort food at its best, and it's a snap to make. The savory ground beef crust perfectly complements the creamy rice, tomato and cheddar cheese filling.This recipe is from Helen O'Connor of Knoxville, Tennessee, who sent in a copy of her "well-used and loved" recipe for a pie that she cut out of a magazine ad for Hunt's tomato sauce. This recipe was originally published in The Baltimore Sun.

1 pound ground beef
1/2 cup breadcrumbs
4 ounce tomato sauce
1/4 cup chopped onion
1/4 cup green pepper
1 1/2 teaspoons salt
1/8 teaspoon pepper
1/8 teaspoon oregano
1 1/3 cups instant rice, such as minute rice
12 ounce tomato sauce
1 cup water
1/2 teaspoon salt
1 cup grated cheddar cheese, divided

Steps:

  • Step 1: Preheat oven to 350 F. Grease a 9-inch deep-dish pie plate.
  • Step 2: In a bowl, combine 1 pound ground beef, 1/2 cup breadcrumbs, 4 ounces tomato sauce, 1/4 cup chopped onion, 1/4 cup chopped green pepper, 1 1/2 teaspoons salt, 1/8 teaspoon pepper, and 1/8 teaspoon oregano. Mix well with a fork.
  • Step 3: Pat the meat mixture gently into the bottom and sides of the greased pie plate.
  • Step 1: In a large bowl, combine 1 1/3 cups instant rice, 12 ounces tomato sauce, 1 cup water, 1/2 teaspoon salt and 1/2 cup grated cheddar cheese.
  • Step 2: Spoon rice mixture into the prepared meat shell. Cover with aluminum foil. Bake for 25 minutes.
  • Step 3: Uncover, top with remaining 1/2 cup grated cheddar cheese. Bake uncovered for another 10 to 15 minutes.

1/2 pound ground beef
1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon garlic salt
1/2 cup diced green pepper
1 teaspoon dried oregano
1 teaspoon dried parsley flakes
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1 large egg, lightly beaten
Pastry for double-crust deep-dish pie
4 cups sliced zucchini, divided
2 medium tomatoes, peeled and thinly sliced

Steps:

  • In a skillet, cook beef, onion, salt and garlic salt over medium heat until meat is no longer pink; drain. Add the green pepper, oregano, parsley, bread crumbs, cheese and egg; mix well. Set aside. , Place bottom pastry in pie plate; layer 2 cups of zucchini in crust. Cover with beef mixture. Top with tomato slices and remaining zucchini. Place top pastry over zucchini. Cut a few slits in top. , Bake at 350° for 1 hour or until crust is lightly browned.

I'm not sure where this recipe came from, but it's been one of my favorites since I was a kid. Now that I'm grown up, I make it for my husband and he loves it, too.

4 potatoes
1 pound lean ground beef
1 onion, chopped
2 (10.75 ounce) cans condensed tomato soup
1 (15 ounce) can green beans, drained
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Peel and quarter potatoes, and introduce into boiling water; cook until tender, about 15 minutes. Drain and mash. Set aside.
  • In a large skillet over medium-high heat, cook ground beef and onion until beef is brown. Drain. Stir in tomato soup and green beans. Pour into a 9x13 baking dish. Mound mashed potatoes in a ring around the meat mixture (do not cover meat). Sprinkle potatoes with shredded cheese.
  • Bake in preheated oven 30 minutes, until potatoes are golden.

This recipe makes two pies and may be made using using either ground pork or ground beef or half of each, I prefer the half each!

1 pastry for double-crust pie
3 tablespoons butter
1 medium onion, minced
2 stalks celery, chopped
2 -3 tablespoons minced fresh garlic
3 lbs ground beef (or use half each) or 3 lbs pork (or use half each)
1 large potato, peeled and cut in 1/2 inch cubes
1 cup water or 1 cup low sodium beef broth
1/2 cup half-and-half cream or 1/2 cup milk
1/2 teaspoon ground cloves
1/2 teaspoon thyme
1/2 teaspoon savory
seasoning salt (to taste) or white salt (to taste)
fresh ground black pepper (to taste)

Steps:

  • In a medium saucepan heat butter over medium-high heat; add in onion, celery and garlic and saute about 3-4 minutes.
  • Stir in ground beef or pork, cubed potatoes, water and half and half cream or milk;. cook while stirring until liquid has completely evaporated.
  • Add in spices; cook stirring for about 5-6 minutes, then allow the mixture to cool.
  • Fit bottom pie pastry into each 9-inch deep-dish pie plates.
  • Divide the beef misture between each pie plate.
  • Top each pie with top pie crusts then flute edges together.
  • Cut slits in top of crust each, then place onto a baking sheet.
  • Bake in 450 degrees F (bottom rack) oven for 15 minutes.
  • Reduce heat to 350 degrees F and continue baking for another 30 minutes.
  • Cool slightly before slicing.

1 pound ground beef
½ cup chopped onion
1 (16 ounce) can green beans, drained

½ cup warm milk
1 egg, beaten
2 cloves garlic, chopped

¼ teaspoon salt
½ cup shredded Cheddar cheese

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain. Set aside to cool in a large bowl.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1 1/2-quart casserole dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until the beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Stir green beans and tomato soup into the ground beef mixture; transfer to prepared casserole dish.
  • Mash the cooled potatoes with milk, egg, garlic, pepper, and salt; spoon in mounds over the ground beef mixture. Sprinkle Cheddar cheese over the potatoes.
  • Bake in preheated oven until cheese is melted and edges of dish begin to brown, 25 to 30 minutes.

This is my old roommates recipe - we used to fix this all the time. It's a tasty, one dish dinner. The "crust" is a "meatloaf" mixture.

2 (8 ounce) cans tomato sauce
1/2 cup breadcrumbs

1 lb ground beef

1 1/3 cups Minute Rice
1 1/2 cups water
1 cup grated cheddar cheese
1 cup water

Steps:

  • Crust: Combine ground beef, 1/2 a can of tomato sauce, bread crumbs, onion, green pepper & spices.
  • Pat mixture down & up sides of a 9 inch pie plate (I use a deep dish).
  • Set aside.
  • Filling: Combine rice, all the remaining tomato sauce (1 1/2 cans), 1 cup water & 1/2 cup of cheese.
  • Pour on top of crust.
  • Cover with foil and bake at 350 for 25 minutes.
  • Sprinkle with rest of cheese & bake 10 -15 more minutes or.
  • until cheese is melted.
