6 ounces country ham, sliced 1/4-inch thick
1 tablespoon unsalted butter, plus more for ham if necessary
1/2 cup strong black coffee
1/2 cup low-sodium chicken broth or water
1/2 teaspoon sugar

Steps:

  • Heat a large skillet (preferably cast-iron) over medium-high. Cook ham, adding 1/2 Tbsp. butter if ham is lean to help the browning process, until browned and fat has rendered, 2-3 minutes per side. Transfer ham to a platter.
  • Pour coffee into the same skillet and cook over medium-high heat, scraping skillet with a wooden spoon to deglaze and loosen any browned bits. Add broth and sugar; simmer, stirring occasionally, until thickened and reduced to about 1/4 cup, 3-4 minutes. Add 1 Tbsp. butter and whisk until emulsified, about 1 minute more. Pour gravy into a small bowl or serving vessel and serve drizzled over or alongside ham.

To this day, if the country ham has been cured properly for at least a year, I would rather have it on my plate than any other meat (including steak). We always had a country ham breakfast on Christmas...

4 slice country ham - center cut slices
1/4 c coffee, brewed
1/4 c water

Steps:

  • 1. FRYING THE HAM Trim off fat from country ham slices and render in hot skillet. When fat is crisp, remove the pieces and discard leaving the liquid in the skillet.
  • 2. With medium heat, lightly brown each side of the country ham, 3-4 minutes per side. Do not overcook as the ham will become tough. Note: If the ham is too salty for your tastes, pour a cup of water in the skillet as you fry it and it will draw some of the saltiness out.
  • 3. Remove ham slices and drain on paper towels. Serve warm.
  • 4. MAKING THE GRAVY Retain 3/4 cup of the grease in the skillet.
  • 5. Add the coffee and water and simmer for 5 minutes, stirring occasionally.
  • 6. Pour on hot biscuits and enjoy!

1 cup strong black coffee
2 tablespoons all-purpose flour
1/2 teaspoon paprika

Steps:

  • Cut gashes in fat to keep ham from curling.
  • Saute ham in oil in a heavy skillet over low heat 3 to 4 minutes on each side.
  • Remove the ham from skillet, and keep warm.
  • Combine coffee and flour; add to pan drippings, stirring constantly, until thickened.
  • Add paprika.
  • Serve with ham.

1 cup stone-ground grits
Coarse kosher salt and freshly ground black pepper
Four 2-ounce slices country ham
1/4 cup brewed strong coffee
Pats of butter, for serving

Steps:

  • In a large heavy-bottomed saucepan, bring 4 cups of water to a boil over medium-high heat. Stir in the grits and return to a boil. Season with 1 teaspoon kosher salt. Decrease the heat to low and simmer until creamy and thick, stirring often, 45 to 60 minutes.
  • Heat a large cast-iron skillet over medium-high heat. Add the country ham and cook until crisped and golden brown on each side, about 5 minutes. Remove the ham and keep warm. Add the coffee and 1 cup water to the skillet, scraping up any brown bits with a wooden spoon. Simmer until the "gravy" has reduced to about 1/2 cup, 3 to 5 minutes.
  • Spoon the hot grits into warmed bowls. Top each with a pat of butter and black pepper to taste. Top with the ham and ladle over the gravy. Serve immediately.

1 cup milk
1 cup course, stone-ground grits
Salt and freshly ground black pepper

4 to 6 eggs, 1 per serving
1 slice salted and smoked Virginia ham, per serving
6 ounces cold day old coffee
Splash pork stock
Chopped chives

Steps:

  • For the grits, bring the water and milk to a boil in a pan, whisk in the grits, and then reduce the heat and cook for an hour. Season with salt and pepper and set aside.
  • For the poached eggs, bring a pan of water to a gentle simmer and add salt and vinegar. Using a spoon, swirl the water in a circle and crack the eggs into the center of the water. Simmer for about 2 minutes. Set aside.
  • For the gravy, to a pre-heated skillet, add a slice of ham and warm it through. Then remove the ham to a plate. Into the same skillet add the coffee and pork stock and reduce.
  • To a bowl or plate add a serving of grits, the ham, a poached egg and sprinkle with chives. Drizzle the red-eye gravy over the grits and serve.

As a child, I remember my grandparents having a smokehouse. In the dead of winter, when it was well below freezing, a hog would be slaughtered and no part of it wasted. The fresh hams were then covered in a dry salt mixture, wrapped, and hung up for several months to cure. To cook, they were sliced and pan fried, sometimes with a tiny bit of lard, in a hot, black iron skillet. Hot, usually breakfast, coffee was poured into the skillet to deglaze it, making red eye gravy. Redeye Gravy gets its name from the appearance of the gravy after the coffee sinks to the bottom. Serve over biscuits or grits.

  • Soak ham in milk overnight.
  • The next morning, wipe ham with paper towels.
  • Put just enough ham fat into skillet to keep ham from sticking.
  • Have skillet hot, not too hot.
  • Slowly brown ham evenly on both sides.
  • When done, remove to hot platter.
  • For the gravy, add the coffee to ham drippings in skillet, sprinkle with a bit of pepper and let come to a boil.
  • Stir well and serve piping hot with biscuits.
