SCALLOPED POTATOES AND COUNTRY HAM

Cooking spray
3 tablespoons unsalted butter
1 medium onion, diced
3 tablespoons all-purpose flour
2 cloves garlic, minced
Kosher salt and coarsely ground black pepper
1/2 to 1 teaspoon cayenne pepper
1 teaspoon mustard powder
2 cups goat's milk or regular milk
1/2 pound country ham, thinly sliced
1 1/2 pounds red potatoes, sliced 1/4-inch-thick on a mandoline (about 5 cups)
1 1/2 cups grated Gruyere
Sliced green onions, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-by-8-inch flameproof baking dish with cooking spray.
  • In a skillet over medium heat, melt the butter. Add the onions and saute until translucent, 3 to 4 minutes. Add the flour and stir until combined. Cook 1 to 2 minutes to remove the raw flour taste. Add the garlic, 1 teaspoon salt, 1 teaspoon pepper, the cayenne and mustard powder. Whisk in the milk. Allow to cook and thicken slightly, about 3 minutes. Remove from the heat.
  • Line the baking dish with a crisscrossed layer of country ham, then a layer of slightly overlapping potatoes, then about 2/3 cup sauce. Repeat the layering until all the ingredients are used. You should have a total of 3 sets of layers, ending with the sauce on top. Top with the Gruyere and cover with foil. Bake until the potatoes are tender, about 1 hour.
  • Remove the foil and spoon off any fat that has pooled in the baking dish, if needed. Switch the oven to broil and broil until light golden brown, 3 to 5 minutes. Garnish with green onions before serving.

You can get a head start on this breakfast side dish by chopping all of the vegetables a day in advance. Store the potato cubes in water to prevent browning, and pat them dry with paper towels before adding them to the skillet so they will cook up nice and crisp. If you're prepping everything day of, peel the russet potatoes and pat them with a paper towel to absorb excess moisture while the ham sizzles in the skillet. Transfer the ham to a separate plate, then add the potatoes, onion, and bell pepper to the skillet. Cook until the potatoes are tender, adding in garlic, pepper, and salt. While the mixture cooks go ahead and chop the cooked ham, stirring it into the potatoes once they are tender. Country Ham Hash is delicious for a holiday brunch, but it also makes a satisfying and quick meal for the family during the week. Add a tossed green salad to round out the meal.

1 cup chopped red onion (from 1 medium onion)
1 cup chopped red or orange bell pepper (from 1 medium bell pepper)
1 teaspoon chopped garlic (from 1 large garlic clove)
1/2 teaspoon black pepper
1/4 teaspoon kosher salt
1 tablespoon chopped fresh rosemary

Steps:

  • Cook ham in a large skillet over medium, turning occasionally, until golden brown, about 10 minutes. Transfer ham to a plate lined with paper towels.
  • Return skillet to medium-high, and melt butter in skillet. Add potatoes, onion, and bell pepper, spreading in an even layer. Cover and cook until potatoes soften, about 8 minutes. Uncover and stir in garlic, pepper, and salt. Cook, uncovered, without stirring, 2 minutes. Stir and continue cooking in 2-minute intervals, stirring after each interval, until potatoes are golden, about 15 minutes total.
  • Chop cooked ham, and stir into potato mixture. Cook, stirring occasionally, until warmed and lightly browned, 2 to 3 minutes. Sprinkle with rosemary, and serve immediately.

1 1/2 pounds small new potatoes (as close to the same size as possible)
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons butter
3 ounces thinly sliced country ham, diced (see Cook's Note)
1 medium onion, diced
1 red bell pepper, diced
1 teaspoon lemon or orange zest

Steps:

  • Place the potatoes in a large saucepan and add cold water to cover by 1 inch. Salt the water generously and bring to a boil over medium heat. Reduce the heat to medium-low and simmer until the potatoes are fork-tender, 7 to 10 minutes, depending on size. Drain and set aside.
  • Meanwhile, heat 1 tablespoon of the vegetable oil in a large cast-iron skillet over medium heat. Add the ham and saute, stirring occasionally, until crispy, about 4 minutes; transfer to a bowl. Add the onions and red peppers to the skillet and saute, stirring occasionally, until tender, 5 to 7 minutes; transfer to another bowl.
  • While the vegetables are cooking, smash the boiled potatoes down by hand. Add the remaining tablespoon oil and the butter to the skillet. When the butter is foaming, add the potatoes in a single layer and sear until very golden brown and crispy, 2 to 4 minutes per side. Stir in the crispy ham, onion mixture and lemon zest. Add salt and pepper to taste. Serve immediately.

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir potatoes into ham mixture; transfer to the prepared baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
  • Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
  • Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
  • Pour sauce over ham and potatoes.
  • Sprinkle bread crumbs atop casserole.

  • In a large heavy skillet, melt butter over medium-high heat.
  • Brown ham on both sides.
  • Move ham to one side of the skillet; brown potatoes in the drippings.
  • Sprinkle potatoes with parsley.

1-1/2 cups chopped fully cooked ham
1 small onion, grated

Steps:

  • Preheat oven to 375°. In a large saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, parsley, salt, thyme and pepper until smooth. Gradually add milk; bring to a boil. Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
  • In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper.
