Dessert doesn't get any better than a favorite fruit combo transformed into an easy, warm-from-the-oven cobbler!

1/4 cup butter or margarine
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
4 cups fresh or frozen (thawed and drained) blueberries, raspberries, sliced peaches or strawberries (or combination of fruit)

Steps:

  • Heat oven to 350°F. In 1 1/2-quart casserole, melt butter in oven.
  • Meanwhile, in medium bowl, mix flour, sugar, baking powder, salt and milk. Pour batter into casserole onto butter without mixing with butter. Spread fruit over batter.
  • Bake about 1 hour or until top is golden brown. Serve warm.

1-1/3 cups sugar, divided
2 Tbsp. MINUTE Tapioca
1/4 tsp. ground cinnamon
1/4 cup water
1/2 cup chopped walnuts
6 cups thinly sliced peeled apples
1 cup flour
1-1/2 tsp. baking powder
1/2 tsp. salt
1-1/2 cups KRAFT Shredded Sharp Cheddar Cheese
1/3 cup butter or margarine, melted
1/4 cup milk
2-1/4 cups vanilla ice cream

Steps:

  • Preheat oven to 375°F. Mix 1 cup of the sugar, tapioca and cinnamon in large saucepan. Gradually add water. Stir in walnuts. Bring to full boil on medium heat, stirring constantly. Remove from heat; stir in apples. Pour into 8-inch square baking dish.
  • Mix remaining 1/3 cup sugar, flour, baking powder and salt in medium bowl; stir in cheese. Mix butter and milk. Add to flour mixture; stir just until moistened. Spoon over apple mixture.
  • Bake 35 to 40 minutes or until golden brown. Cool. Top each serving with 1/4 cup of the ice cream.

1/4 cup water
2 tablespoons quick-cooking tapioca
1/4 teaspoon ground cinnamon
6 cups thinly sliced peeled tart apples
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup butter, melted
1/4 cup whole milk
1-1/2 cups shredded cheddar cheese
1/2 cup chopped walnuts
Whipped topping, optional

Steps:

  • In a large saucepan, combine 1 cup sugar, water, tapioca and cinnamon. Bring to a boil over medium heat, stirring occasionally. Remove from the heat; stir in the apples until coated. Pour into a greased 8-in. square baking dish; set aside., In a small bowl, combine the flour, baking powder, salt and remaining sugar. Stir in butter and milk just until moistened. Fold in cheese and walnuts. Sprinkle over apple mixture. , Bake at 375° for 30-35 minutes or until filling is bubbly. Serve with whipped topping if desired.

This recipe is so easy to throw together and reminds me of a dessert my grandmother would make when all the family came to visit. Created for RSC#10.

2 medium apples (peeled, cored, and sliced)
1 lemon, juice and zest of, separate
3/4 cup pecan pieces
4 tablespoons butter
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup maple syrup
1/2 cup sugar
1 cup flour
1 tablespoon baking powder (eliminate if using self-rising flour)
1 cup milk
1 cup whipping cream
1 tablespoon sugar

Steps:

  • Cobbler:.
  • Preheat oven to 350°F.
  • Place apple slices in a bowl and coat with juice from one lemon. Set aside.
  • Place pecan pieces in a pie tin or similar oven-proof container, and place in the oven for about 7 minutes, or until toasted. (Watch carefully to prevent burning.) Let cool.
  • Meanwhile place butter in a large casserole or 11x13 baking pan. Place casserole in oven until butter melts, and remove.
  • Spread apple slices in single layer across the melted butter in the bottom of the casserole. Sprinkle the pecan pieces, lemon zest, cinnamon, and brown sugar over the apple slices and drizzle the syrup over all.
  • In a medium bowl, mix together the flour, baking powder (if not using self-rising flour), sugar, and milk. Slowly pour the mixture over the apple slices and lightly spread the batter to cover the apples.
  • Place in the oven and bake for approximately 30 - 40 minutes until brown on the top. Remove to cool.
  • Topping:.
  • Whip cream until soft peaks form. Add sugar and continue to whip until peaks are stiff (but not overly stiff like butter).
  • Serve cobbler in bowls topped with a few tablespoons whipped cream.

Marcia Adams is an exceptional cook and author who hosted the PBS show, "Amish Cooking from Quilt Country". This is a delicious peach cobbler that is unusual in that the dry ingredients and peaches are layered and then boiling water is poured over all before it bakes into a lovely summer dessert. My Dad loves this and my Mom has phoned me many times over the years asking for this recipe when she has misplaced it. Now it's posted for all of us to share.

1 cup flour
1 1/4 teaspoons baking powder
1 teaspoon ground nutmeg
1/2 teaspoon salt
2 tablespoons butter, softened
1 cup granulated sugar
6 -8 peaches, peeled and sliced (depending on size)
1/2 cup brown sugar
1 teaspoon almond extract
1 cup boiling water
nutmeg, grated

Steps:

  • Preheat your oven to 350 degrees.
  • In a small bowl, combine flour, baking powder, 1 teaspoon nutmeg, and salt; set aside.
  • In a large mixing bowl, cream the butter.
  • Add 1/2 cup of the granulated sugar and blend well.
  • Beat in the flour mixture.
  • Grease a 9 x 9 metal pan (metal gives this a dessert a better texture).
  • Place half of the peaches on the bottom.
  • Sprinkle half the flour mixture over the fruit.
  • Add the rest of the peaches.
  • Sprinkle with the remainder of the flour mixture.
  • In a small bowl, combine the remaining 1/2 cup granulated sugar and the brown sugar.
  • Sprinkle the sugars over all.
  • Add the almond extract to the boiling water.
  • Pour over the cobbler but Do Not Mix!
  • Sprinkle with grated nutmeg.
  • Bake for 1 hour.
  • Serve warm.
