One of my favorite snacks growing up in southern California with plump berries from Portland, OR. Now that I'm in Norway and surrounded by free-for-all blueberry bushes, I can't wait until the blueberries become ripe and ready in August, so I can start enjoying this simple treat again. I don't add honey when I make it for myself. Feel free proportions to adjust to your own cottage cheese to fruit ratio preferences. :)

1 cup low fat cottage cheese
1 -2 teaspoon honey, if you prefer to sweeten
1/3 ripe banana, sliced
2 -3 tablespoons fresh blueberries or 2 -3 tablespoons sliced strawberries

  • Slice banana.
  • Top cheese with banana and berries.
  • If using honey, either mix in with cheese first or drizzle on top.

Banana-Oat Cottage Cheese Pancakes image

I combined a few gluten-free recipes to make these pancakes. They are super-high in protein and sweet enough to eat without any toppings, though I usually chop some strawberries or blueberries to top them! Feel free to add chopped fruit, syrup, or whipped cream to top your pancakes!

½ cup gluten-free oats
1 scoop protein powder
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 banana
2 eggs
½ cup cottage cheese
1 teaspoon vanilla extract
water as needed

Steps:

  • Preheat a griddle or large skillet over medium heat.
  • Blend oatmeal, protein powder, brown sugar, cinnamon, and baking powder in a blender until fine; dump into a large bowl.
  • Blend banana, eggs, cottage cheese, and vanilla extract in a blender until smooth; pour into bowl with dry ingredients and mix into a thick batter. Stir water into the batter to thin slightly, as desired.
  • Ladle between 1/4 to 1/2 cup batter per pancake onto the preheated cooking surface. Cook until browned on the bottom, 3 to 5 minutes. Flip pancakes and continue cooking until browned on the other side and the center is set, 3 to 5 minutes more.

  • Heat the oven to 350 degrees. Spray a 9x5-inch loaf pan generously with non-stick cooking spray. In a large bowl, mix the flour, baking powder, baking soda and salt with wire whisk until well blended.
  • In a blender container, combine the cottage cheese, butter, eggs and sugar. Cover; blend on high speed 1 minute to 1 minute 30 seconds or until smooth and creamy. Stop the machine. Add the bananas and vanilla. Cover; blend 30 to 45 seconds or until smooth.
  • Pour the banana mixture into the dry ingredients. With a rubber scraper, fold the ingredients together just until the dry ingredients are all moistened. Spread in the pan.
  • Bake for 50 to 55 minutes or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, cover loosely with small piece of foil for the last 10 minutes of baking.
