SAVORY COTTAGE CHEESE DILL MUFFINS



Savory Cottage Cheese Dill Muffins image

These moist muffins round out a meal of soup and salad. With almost 7 grams of protein in each muffin, they're awesome for snacking as well.

Number Of Ingredients 11

2 ¼ cups whole grain spelt flour
2 ½ teaspoons baking powder
1 teaspoon baking soda
1 ½ teaspoons fine sea salt
2 eggs
1/3 cup olive oil
¾ cup lowfat cottage cheese (, about 6 ounces)
¾ cup plain whole milk yogurt
½ cup finely chopped fresh dill
½ cup chopped green onions (, mostly the white bottom part)
Fresh dill fronds for garnish (, optional)

Steps:

  • Preheat the oven to 375 degrees F. Coat 12 muffin cups with melted butter or spray generously with cooking spray.
  • Sift the flour, baking powder, baking soda and salt together into a large bowl. In another bowl, whisk together the eggs, olive oil, cottage cheese and yogurt. Stir in the chopped dill and onions. Pour the wet mixture over the dry and gently blend together.
  • Divide the batter evenly between each muffin cup. Decorate each muffin top with a dill frond, if desired.
  • Bake about 20 minutes or until the tops of the muffins are barely golden and a toothpick inserted in the center comes out clean. Cool for about 5 minutes, then remove from the pan. Serve warm.

Yield about 9 jumbo muffins or 12 standard-size muffins.

Number Of Ingredients 9

3-1/2 cups all-purpose flour
3 tablespoons sugar
2 tablespoons baking powder
2 teaspoons dill weed
1 teaspoon salt
1 cup shredded cheddar cheese
1-3/4 cups whole milk
2 large eggs, lightly beaten
1/4 cup butter, melted

Steps:

  • In a large bowl, combine the first six ingredients. Combine milk, eggs and butter; stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups almost full. Bake at 400° for 25-30 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Serve warm.

2 cups flour
1 tablespoon sugar
2 1/2 teaspoons baking powder
1 1/2 teaspoons dried dill
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg
1 cup small curd cottage cheese (8 oz. container)
1/2 cup milk
4 tablespoons melted butter
1 1/2 tablespoons coarsely grated onions

Steps:

  • Heat oven to 400 degrees F.
  • Line muffin cups with liners.
  • Mix flour, sugar, baking powder, dillweed, salt and pepper in a large bowl.
  • In another bowl, beat egg and mix in cottage cheese, melted butter. milk and onion. Pour over dry ingredients and mix just until blended.
  • Scoop batter into baking cups.
  • Bake 15 to 20 minutes or until springy to the touch in the center. Cool completely.

This is a great tasting muffins that is wonderful served with any meal. They are easy to put together and are a nice alternative to ordinary bread. Sometimes I just make them plain cheese without the dill.

Number Of Ingredients 9

3 1/2 cups flour
3 tablespoons sugar
2 tablespoons baking powder
2 teaspoons dill weed (optional)
1 teaspoon salt
1 cup shredded cheddar cheese
1 3/4 cups milk
2 eggs, slightly beaten
4 tablespoons melted butter or 4 tablespoons margarine, cooled to room temperature

Steps:

  • Preheat oven to 400.
  • In large bowl, combine flour, sugar, baking powder, dill, salt and cheese; set aside.
  • In medium bowl, blend milk, eggs and butter.
  • All at once, add to dry ingredients; stir just until moistened.
  • Spoon batter into well greased muffins pans (batter should fill muffin cups to top).
  • Bake 20 minutes or until muffins are golden.

Steps:

  • Heat the oven to 400°F
  • Butter or spray 10 muffin cups.
  • Mix the flour, oats, baking powder, baking soda, salt and pepper in a large bowl.
  • In another bowl combine egg, milk, oil, dill.
  • Add this to the flour mixture and stir just till combined.
  • Spoon into muffin tin 3/4 full.
  • Bake for 18-20 minutes till well risen and springy when touched.
  • Allow muffins to cool 5 minutes.
