This is delicious as a first course for a BBQ, great for a picnic or anytime you want a cool refreshing appetizer, The 20 minutes does not include the cooling time of apprx 1 hour

COSTA RICAN LIME MARINADE
This is from reciperewards.com and is good for a lot of different meats. I decided to put the minimun eight hours for marinading in the prep time, because there is no cooking involved, just the putting together of the ingredients for the marinade.

- Mix all ingredients in shallow non-metal dish or resealable plastic bag. Add up to 3 pounds chicken, pork or beef, turning to coat with marinade.
- Cover dish or seal bag and refrigerate, turning meat occasionally, at least 8 hours but no longer than 24 hours.
- Remove meat from marinade; discard marinade. Grill meat as desired.
- Yield: 8 servings.

- Up to 3 pounds of beef, chicken, or pork can be placed in the marinade and refrigerated for 8 hours but no longer than 24.

Steps:
- In a bowl toss together the mangos, lemon juice, sugar and rum. Set aside.
- Blend all ingredients for crepes until smooth. Cover with plastic wrap and let stand 1 hour. Make 12 crepes in a 6-7 inch crepe pan.
- To serve: Fold crepes in quarters and put on a baking sheet. Brush tops with the melted butter and bake in 400' preheated oven for 10 minutes or until browned and slightly crispy.
- Stuff each crepe with about 1/4 cup mango mixture, transfer to a platter and dust with powdered sugar.
