Here's how to make self-rising cornmeal for use in all your favorite Southern recipes.

1 cup cornmeal (yellow or white)
1-1/2 tsp baking powder
1/2 tsp salt

Steps:

  • Mix ingredients together, until the baking powder and salt are fully incorporated with the flour.
  • Use immediately, or store in an air-tight container. This homemade self-rising cornmeal will keep for up to six months in the fridge. It can also be stored in the pantry, but you'll need to use it up sooner.
  • If you used stone-ground cornmeal to make this recipe, store it in the fridge.

I read tons of blogs and I cringe every time I see "self rising cornmeal" in a recipe. Why? Because I know that the cmments will say what is that, no clue, can i use Jiffy mix, how bout corn bread mix. Most Southerners know what it is and would never use Jiffy mix cause that is more like a cornmeal cake. No wonder there are now mixes for cornbread, mixes for pumpkin bread, mixes for just about everything, because we are losing the ability to cook anything if it does not come from a box and what a big old shame that is. Self rising cornmeal is NOT cornmeal mix which has flour added.
