1/2 small red onion, chopped
2 cloves garlic, chopped
1 tablespoon ancho chili powder
2 teaspoons Spanish paprika
1 teaspoon toasted cumin seeds
1/2 teaspoon cayenne powder
1/2 cup water
1 1/2 sticks unsalted butter, slightly softened
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper
4 ears corn
Kosher salt

Steps:

  • Perfectly Grilled Corn, recipe follows
  • Heat the oil in a medium saute pan over high heat until almost smoking. Add the onion and cook until soft, 2 to 3 minutes. Add the garlic and cook for 30 seconds. • Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by hand. Fold husks back into place and tie the ends together with kitchen string. Place the ears of corn in a large bowl of cold water with 1 tablespoon of salt for 10 minutes.
  • Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the kernels.
  • How to remove corn kernels from cob: To remove kernels from cobs of either raw or cooked corn, stand cob upright on its stem end in a large pan, holding tip with fingers. Grilled Corn with Garlic Butter image

Provided by Food Network

Categories     side-dish

Time 20m

Yield 2 to 4 servings

Number Of Ingredients 5

4 ears sweet corn in the husks
6 tablespoons unsalted butter, at room temperature (if using salted butter, omit the salt)
3 tablespoons minced fresh flat leaf parsley or cilantro
1 clove garlic, minced
Salt and freshly ground black pepper

Steps:

  • Set up the grill for direct grilling and preheat to high.
  • Strip back the corn husks, as you would peel a banana, exposing the kernels. Bring the husks together beneath the ear of corn to make a sort of handle and tie with string.
  • Place the butter, parsley, and garlic in a mixing bowl and whisk or beat until smooth and creamy.
  • Lightly brush the corn with a little of the butter and arrange on the grate, positioning the ears in such a way that the husks are away from the fire. Grill the corn until the kernels are handsomely browned on all sides, turning as needed, basting with the remaining butter, and most important, seasoning generously with salt and pepper. Serve at once and get ready for one of the most fabulous tastes in life.

Time 50m

Number Of Ingredients 6

100g butter , at room temperature
1 tbsp runny honey
1 tbsp tomato ketchup
2 fat garlic cloves , crushed
2 tbsp harissa
6 corn cobs (cut into two if you have more than 6 guests)

Steps:

  • Mash together the butter, honey, ketchup, garlic and some seasoning, beating until quite smooth. At this point, if you are also cooking for children, split the mix into two serving bowls, before stirring the harissa into just one bowl. Add a pastry brush to each butter mix.
  • Wrap each corn cob in a double layer of foil. Barbecue, turning, for 30-35 mins until tender and a little charred. If you want them more blackened, simply unwrap and throw directly on the barbecue for a few more mins.
