Provided by Food Network Kitchen

Time 1h45m

Yield about 30 hors d'ouevres

Number Of Ingredients 31

1/2 cup all-purpose flour
1/3 cup stone-ground cornmeal
3/4 teaspoon baking powder
1 teaspoon sugar
1/4 teaspoon paprika
1/2 teaspoon fine salt
1 ear corn, shucked
1/2 cup milk
2 tablespoons plus 2 teaspoons unsalted butter, melted
1 large egg, separated
2 to 3 duck confit legs, skinned and meat shredded (recommended: D'Artagnan)
About 1 cup KC Style BBQ Sauce, recipe follows
2 tablespoons neutral tasting oil, such as grapeseed or vegetable
6 cloves garlic, smashed
2 tablespoons tomato paste
1 slightly heaping tablespoon chili powder
1 tablespoon paprika
1 teaspoon crushed red pepper flakes
1/4 teaspoon ground allspic
Pinch ground cloves
2 cups ketchup
2 cups water
1/2 cup cider vinegar
1/4 cup dark molasses
1/4 cup firmly packed dark brown sugar
1 tablespoon kosher salt
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 teaspoons English-style dry mustard
1 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Preheat the oven to 250 degrees F. Set a rack on a sheet pan in the oven. Whisk the flour, cornmeal, baking powder, sugar, paprika and salt together in a medium bowl. Set aside. Shear the corn kernels from the cob with a knife. Working over a bowl, run a knife along the cob to press out the milky liquid. Puree half the corn with the milk in a small food processor. Add the 2 tablespoons butter and the egg yolk and pulse until evenly combined. Whisk the wet ingredients into the dry. Whip the egg white in a medium bowl until it almost holds a medium-stiff peak. Lightly fold the egg white into the batter. Heat a griddle or well-seasoned cast-iron skillet over medium heat. Add 1 teaspoon of the remaining butter. Drop heaping tablespoons of the batter into the pan and cook until golden brown on the bottom and little bubbles break the surface of each pancake, about 2 to 3 minutes. Flip and cook the corn cakes on the other side until lightly brown. Serve immediately or transfer to the oven to keep warm. Repeat with the remaining batter. To assemble: Toss the duck confit in the BBQ Sauce to coat. Top each corn cake with about 1 tablespoon BBQ'd Duck Confit. Serve. Copyright 2005 Television Food Network, G.P. All rights reserved.
  • Heat the oil in a medium saucepan over medium heat. Stir in the garlic, tomato paste, chili powder, paprika, red pepper flakes, allspice, and cloves, and cook, stirring, until paste is dark brick red, about 3 minutes. Add the ketchup, water, vinegar, molasses, sugar, salt, soy sauce, Worcestershire, mustard, black pepper, and bay leaf. Adjust the heat to maintain a gentle simmer and cook until the flavors come together, about 30 minutes. Remove from the heat and discard the garlic and bay leaf. Cool if not using immediately. Reheat before using. Yield: 1 quart sauce Recipe from Food Network Kitchens Get Grilling, Meredith Books, 2005.

Duck Confit Sliders, Banh-Mi Style image

Provided by Michael Symon : Food Network

Time 6h

Yield 4 to 6 appetizer servings

Number Of Ingredients 27

Rendered duck fat from 1 duck, at warm temperature, plus more fat (chicken, duck, bacon, oil, etc.) as needed
4 duck legs and thighs
Salt
Pinch sugar
2 teaspoons whole coriander
1 teaspoon sweet smoked paprika
1 teaspoon ground cinnamon
2 teaspoons peppercorns
1/4 cup sugar
1 shallot, peeled and trimmed
1 clove garlic, peeled and trimmed
1 jalapeno
1 bay leaf
2 tablespoons salt
1 teaspoon coriander seeds
1 teaspoon peppercorns
1 cup white wine vinegar
1 cup water
2 carrots, peeled and julienned
2 egg yolks
1 clove garlic, minced
Zest and juice of 2 limes
1/3 to 1/2 cup liquid duck fat
Hot sauce, to taste
Salt
4 to 6 slider rolls
1 cup freshly picked cilantro leaves

Steps:

  • Preheat oven to 225 degrees F.
  • Season both sides of the duck with the salt, sugar, coriander, paprika, and cinnamon. Add the peppercorns and the seasoned duck to the rendered fat, making sure the duck is submerged. Cover the pan with foil and place and cook for about 4 to 6 hours, until fork tender.
  • Place a medium pot over medium heat and add the sugar, shallot, garlic, jalapeno, bay leaf, salt, coriander seeds, peppercorns, white wine vinegar, and water. Bring to a boil, stirring until the sugar is dissolved. Add the carrots, and bring back to a simmer. Allow to simmer until the carrots are al dente, about 5 minutes. Remove from heat and set aside to cool.
  • Whisk the egg yolks, garlic and lime juice together. Whisk in 1/3 to 1/2 cup liquid duck fat. Add the lime zest and season with hot sauce, and salt, to taste.
  • Remove the duck from the oven. Carefully remove from the fat and place skin-side down onto a cast iron pan over high heat to crisp the fat, about 2 minutes. Strain the fat and reuse it a couple more times, if desired. Remove the duck from the pan and shred with fork.
  • Slice the slider rolls in half. Place some of the pickled carrots onto the bottom of the bun. Top the carrots with some of the shredded duck. Spoon some of the aioli and cilantro leaves over top and cover with the slider lids and skewer.

12 Cornmeal Crepes, recipe follows
2 cups diced cooked lobster or shrimp (about 2 pound lobsters or 1 pound shrimp)
2 cups Manchego cheese grated
1/2 cup toasted pine nuts
1 bunch cilantro, chopped
2 cups Poblano Chile Cream, recipe follows
1 lime, quartered
2 Serrano chiles, stemmed and seeded and chopped
1/2 bunch cilantro, chopped
4 eggs
1/2 cup water
1 cup milk
2 teaspoons coarse salt
1/2 teaspoon baking powder
1 cup cornmeal
1 cup flour
1 tablespoon sugar
2 tablespoons vegetable oil
2 tomatillos, husks removed and quartered
1 bunch cilantro, stems included
3 Poblano chiles, roasted, peeled, and seeded
3 ounces sour cream
1/2 cup chicken stock
2 tablespoons vegetable oil
Juice of 1 lime
1 garlic clove
1 teaspoon coarse salt
Freshly ground black pepper

Steps:

  • Make the Cornmeal Crepes and the Poblano Chile Cream.
  • Preheat the oven to 350 degrees.
  • In an ovenproof baking dish large enough to hold 4 crepes, side by side without touching, place the first 4 crepes. Top each crepe with 1/4 cup of the cooked lobster. Top the lobster with 1/4 cup of the grated cheese. Sprinkle the cheese with 1 teaspoon of the pine nuts and 1 teaspoon of the cilantro. Repeat layering 4 crepes, 1/4 cup lobster, 1/4 cup cheese, 1 teaspoon pine nuts, and 1 teaspoon cilantro and finally top with the last 4 crepes. You should have 4 stacks.
  • Pour the Poblano Chile Cream over all the stacks.
  • Bake for about 15 minutes. Transfer each stack to a plate, and serve immediately, garnished with lime.
  • In a blender, place the chiles and cilantro. Add the eggs, water, milk, salt, baking powder, cornmeal, flour, sugar, and oil. Blend until very smooth. Let the batter rest at room temperature 30 minutes to 1 hour.
  • Heat an 8 to 9-inch, well-seasoned crepe pan or small skillet over a medium heat. Coat with a little vegetable oil. When the pan is hot, pour in about 2 to 3 ounces of the crepe batter. Tilt the pan, rotating so the batter is evenly distributed. Cook until the crepe appears dry, then turn and cook on the other side. Repeat until all the batter is used. Store the crepes between sheets of wax paper until ready to use.
  • In a blender, place the tomatillos and cilantro. Blend until chopped. Add the chiles, sour cream, chicken stock, oil, lime juice, garlic, and salt. Blend until smooth.
  • Store refrigerated until ready to use.
