CORN COBS WITH CHEDDAR BUTTER
A cheesy spread on fresh summer corn may seem like gilding the lily, but we wouldn't have it any other way. Enjoy leftover cheddar butter on biscuits.

Steps:
- Bring a large pot of water to a boil; add corn, and cook until tender, 2 to 3 minutes.
- Meanwhile, in a small bowl, stir together butter, cheese, and a pinch of pepper.
- Serve corn immediately, with cheddar butter on the side (and a knife for spreading).
CHEDDAR CORN CHOWDER

- In a large stockpot over medium-high heat, cook the bacon and olive oil until the bacon is crisp, about 5 minutes. Remove the bacon with a slotted spoon and reserve. Reduce the heat to medium, add the onions and butter to the fat, and cook for 10 minutes, until the onions are translucent.
- Stir in the flour, salt, pepper, and turmeric and cook for 3 minutes. Add the chicken stock and potatoes, bring to a boil, and simmer uncovered for 15 minutes, until the potatoes are tender. If using fresh corn, cut the kernels off the cob and blanch them for 3 minutes in boiling salted water. Drain. (If using frozen corn you can skip this step.) Add the corn to the soup, then add the half-and-half and cheddar. Cook for 5 more minutes, until the cheese is melted. Season, to taste, with salt and pepper. Serve hot with a garnish of bacon.
BBQ CORN COBS WITH COMTé & HERB BUTTER

- To make the butter, combine all of the ingredients (except the corn and rapeseed oil) with ½ tsp sea salt in a food processor and blitz to a paste. Shape into a little log, wrap in baking parchment and keep in the fridge until needed.
- Light your barbecue. When you have glowing grey-white coals, toss the corn with the rapeseed oil and salt and pepper to coat it and then grill it, turning as you go, until golden and starting to char. Immediately slather the butter onto the corn and eat.

CHEESY CORN ON THE COB
An ideal accompaniment to a barbecued steak, these cheesy, buttery corn cobs are lightly charred and sprinkled with Parmesan (or a veggie alternative)

- Bring a large saucepan of salted water to the boil. Plunge in the corn cobs and cook for 5 mins until slightly tender, then drain. Can be done a day ahead - put the corn in a roasting tin, cover and chill until needed.
- Season the corn, put on a hot barbecue and cook for 5 mins, turning regularly until it begins to blister and some of the kernels have popped and charred in places. Alternatively, heat a griddle pan over a high heat and griddle the corn for 4-5 mins each side for a similar effect.
- Brush on all sides with the melted butter, then scatter over the Parmesan and some black pepper.

- Heat oven to 200C/180C fan/gas 6. Mash butter, garlic and parsley with seasoning.
- Cut 4 pieces of foil large enough to hold a cob, place a cob on each piece, top each one with butter, then seal edges to form parcels. Bake, or cook on the barbecue, for 30-35 mins or until tender.

- Bring a pan of salted water to the boil. Hold a corn cob at a right angle to the chopping board, then run a sharp knife down the length of the cob, as close to the core as you can get, slicing away the rows of corn. Boil the kernels for 4 mins or until just tender, then drain well.
- Heat oven to 220C/200C fan/gas 7. Mix the flour, baking powder, mustard, cayenne, 1 tsp salt and 1 tsp thyme leaves in a large bowl, then rub in the butter until the mix looks like fine crumbs. Tip in most of the cheese and all of the corn. Mix the milk with the lemon juice, then stir into the bowl to make a slightly sticky dough. Don't over-work the dough.
- Tip the dough onto the floured work surface, knead 2-3 times to smooth a little, then divide into 10 balls. Shape each roughly with your hands and put onto a floured baking sheet. Brush each with a little milk, then scatter with a little cheese, cayenne and a few thyme leaves. Bake for 10-12 mins or until the scones are risen, golden and sound hollow when tapped on the bottom. Cool on a rack.

- In a large pot or Dutch oven bring 4 cups water to boiling over medium-high. Add milk, 1/4 cup of the butter, two of the garlic cloves, 1 tablespoon of the chili powder, 1 1/2 teaspoons of the cumin, and 1 1/2 teaspoons kosher salt. When butter is melted, add corn, arranging ears to keep them submerged; cover. Reduce heat to a simmer; cook 5 to 8 minutes.
- Meanwhile, soften remaining 1/4 cup butter and mince remaining two garlic cloves. In a small bowl stir together softened butter, minced garlic, the remaining 1 tablespoon chili powder, and 1 1/2 teaspoon cumin, and 1/2 teaspoon kosher salt.
- Serve corn with butter mixture and a spoonful of the cooking liquid. If you like, top with cheese, green onions, jalapeno slices, and/or additional chili powder. Serves 4.
