EASY STRAWBERRY PUDDING PARFAITS
Simple enough for the kids to make, this yummy fresh-fruit parfait is always a welcome addition to our dinner table. Substitute fresh peaches or berries for a delicious change! If desired, garnish with a whole strawberry.

Steps:
- Prepare vanilla pudding according to package directions, except do not chill.
- In a medium saucepan over medium-low heat, stir together strawberries, jam, and sugar until jam is melted and the mixture is heated through, about 4 minutes. Remove from heat.
- In each of 4 parfait glasses, layer 1/8 of the pudding and 1/8 of the strawberry sauce. Repeat layers. Chill 45 minutes, or until set, before serving.

Top with the berries. Mix 1 cup nonfat Greek yogurt with 2 tablespoons honey and 1/2 teaspoon cinnamon, then spoon over the berries.

- Blend strawberries in blender until smooth. Refrigerate until ready to use.
- Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove and discard any unmelted ice.
- Whisk 2-1/2 cups COOL WHIP into gelatin; spoon into 8 (8-oz.) parfait or dessert glasses.
- Refrigerate 2 hrs. or until firm.
- Spoon strawberry purée evenly over gelatin layers in glasses; top with remaining COOL WHIP.

- In a bowl, with an electric mixer, mix cream cheese and 3 tablespoon of sugar for 2 minutes or until it's creamy. Add yogurt and mix until the mixture is homogeneous.
- Put strawberries in a large bowl. Add remaining sugar and stir delicately to coat well. Let rest for 5 minutes at room temperature (stir one time).
- In 6 parfait glasses of a capacity of 1 cup each, distribute half the mixture of cream cheese, half of strawberries and half of almond cookies. Repeat with remaining ingredients. Cover with a plastic wrap and put in the fridge for 2 hours. When ready to serve, garnish with roasted almonds.

- In a separate bowl, toss together vanilla wafer crumbs with melted butter until evenly moistened. Set aside.
- Using an electric mixer whip together cream cheese, condensed milk, 1/2 whipped topping and 1 tsp vanilla until smooth.
