Ingredients

1/2 cup mayonnaise
1/4 cup half-and-half cream
1/4 cup sugar
1/2 teaspoon celery seed
1/2 teaspoon dill weed
3 medium cucumbers, sliced

Steps:

In a large bowl, combine the first five ingredients. Add cucumbers; toss to coat. Refrigerate until serving.

This is a great way to use extra cucumbers! Draining the cucumbers with salt beforehand give you crisp cucumbers and does not result in watered-down dressing after the salad sits for awhile.

Ingredients

4 large cucumbers, thinly sliced
1 tablespoon kosher salt
1 sweet onion, thinly sliced
1/2 cup plain yogurt
2 tablespoons mayonnaise
salt and pepper

Steps:

Place the sliced cucumbers in a colander and lightly toss with the kosher salt. Place over a bowl to drain.
After the cucumbers have drained for at least 1/2 hour, rinse and drain.
Put cucumbers in bowl and add the onions, yogurt, mayo and salt and pepper.
Stir together and place in a bowl in the refrigerator for 2 hours.
Serve.

1 -2 large cucumber
1 medium onion
water
salt
3 tablespoons mayonnaise
1/4 cup milk
dill
pepper

Steps:

Soak cucumbers (sliced) and onions (sliced) in salted water for 2 hours.
Drain.
Add mayo, milk and seasonings.
Let sit in refrigerator at least 1 hour and serve.

My grandmother used to make cucumber salad with cucumbers, onions, sour cream, vinegar, sugr salt and pepper. I always loved this salad and one day came up with this light variation of her delicious salad.

Ingredients

DRESSING:
1 16 ounce container low fat (or fat free) sour cream
3 Tbsp low fat mayonnaise
1 1.4 ounce envelope vegetable soup mix (i use knorr)
1 tsp dill, dried
SALAD:
1 large cucumber, peeled, seeded and chopped
1/2 c chopped red bell pepper
1/2 c chopped yellow bell pepper
1/2 c chopped orange bell pepper
1/4 c sweet onion, diced
1 pt grape tomatoes, rinsed and drained

Steps:

1. In a medium size bowl, combine all of the dressing ingredients. Mix well and set aside.
2. In a large bowl, combine all of the salad ingredients. Add the prepared dressing and toss gently to combine.
3. Transfer to a large bowl. Cover and refrigerate at least one hour.

4 large cucumbers, peeled and sliced
2 Tablespoons minced yellow onion
16 ounces sour cream
2 teaspoons salt
1/4 cup white vinegar
2 teaspoons dill weed
1/2 teaspoon sugar
Pinch of pepper

Steps:

Place cucumbers and onion in a bowl. In a separate bowl combine sour cream, salt, vinegar, dill weed, sugar and pepper. Mix well. Pour over cucumbers and mix. Cover with plastic wrap and refrigerate for 6 hours or longer. Mix well and serve.
