PORK CHOP DINNER FOR TWO
I've prepared this dish for a tableful of people, but it's also easy to fix just for two. If you like different vegetables, simply add them along with the other ingredients. My side dishes for this meal are toasted bread and salad. -Shirley Lazor Colorado Springs, Colorado

- In a large skillet, brown pork chops in oil. Place in a greased 8-in. square baking pan. Layer potatoes, onion and carrot over chops. Dot with butter. Sprinkle with salt and pepper. , Cover and bake at 350° for 55-60 minutes or until pork chops and vegetables are tender.

SOUTHWEST-STYLE SLOW-COOKER PORK CHOPS

Steps:
- 1. Heat 12-inch nonstick skillet over medium-high heat. Sprinkle pork chops with 1/4 teaspoon of the salt and 1/2 teaspoon of the seasoning. Cook pork chops in skillet 4 to 6 minutes, turning once, until brown.
- 2. In 3- to 4 1/2- quart slow cooker, mix remaining 1/4 teaspoon salt, remaining 1/2 teaspoon seasoning, the salsa, corn and beans until well blended. Top with pork chops, overlapping as necessary, pressing gently into bean mixture.
- 3. Cover; cook on Low heat setting 4 to 5 hours.
- 4. Remove pork chops to serving platter. Cover to keep warm. With fork or potato masher, mash beans slightly until slightly thickened. Serve pork chops over beans. Sprinkle with chopped cilantro.

- Trim excess fat from chops. Place chops in the bottom of a 3-1/2- or 4-quart crockery cooker. Add chili beans and salsa. Cover; cook on high-heat setting for 2-1/2 hours or low-heat setting for 5 hours. When that step is complete, turn to high-heat setting, if necessary. Stir in corn. Cover and cook 30 minutes longer on high-heat setting. Serve over rice. Sprinkle with cilantro, if desired. Makes 6 servings.

- Rinse pork chops and pat dry. Season both sides with salt and pepper and sear in olive oil in a large skillet over medium-high heat. Leave in skillet only until nicely browned on the first side then remove from skillet and set aside. If the chops are too large, do this step in batches.
- Combine the black beans, green chili tomatoes, corn, onion and all of the spices in a large mixing bowl. Cover bottom of slow cooker with 1/3 of the bean mixture. Place two chops on top with browned side up. Repeat with half of remaining sauce, final two chops, ending with sauce.
- Turn cooker to high for 2½ hours or low for 5 hours. When chops are done, squeeze lime juice into sauce and garnish each serving with chopped cilantro after spooning vegetable mixture over each chop.
