3 pounds ripe plum tomatoes, cut in half lengthwise
1/4 cup plus 2 tablespoons good olive oil
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
2 cups chopped yellow onions (2 onions)
6 garlic cloves, minced
2 tablespoons unsalted butter
1/4 teaspoon crushed red pepper flakes
1 (28-ounce) canned plum tomatoes, with their juice
4 cups fresh basil leaves, packed
1 teaspoon fresh thyme leaves
1 quart chicken stock or water

Steps:

  • Preheat the oven to 400 degrees F. Toss together the tomatoes, 1/4 cup olive oil, salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 45 minutes.
  • In an 8-quart stockpot over medium heat, saute the onions and garlic with 2 tablespoons of olive oil, the butter, and red pepper flakes for 10 minutes, until the onions start to brown. Add the canned tomatoes, basil, thyme, and chicken stock. Add the oven-roasted tomatoes, including the liquid on the baking sheet. Bring to a boil and simmer uncovered for 40 minutes. Pass through a food mill fitted with the coarsest blade. Taste for seasonings. Serve hot or cold.

8 tomatoes, cut into 8 wedges
2 tablespoons extra-virgin olive oil
2 cloves garlic, chopped
3 sprigs fresh thyme, chopped
salt and ground black pepper to taste
2 tablespoons extra-virgin olive oil
1 onion, chopped
2 stalks celery, chopped
1 zucchini, chopped
1 teaspoon red pepper flakes
1 teaspoon smoked paprika
½ teaspoon curry powder
3 sprigs fresh thyme, chopped
3 cups chicken broth
1 cup heavy whipping cream
1 cup chopped fresh basil

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange tomatoes on a baking sheet; drizzle with 2 tablespoons olive oil. Add garlic and 3 sprigs chopped thyme; toss. Season with salt and black pepper.
  • Bake in preheated oven until very tender and browned, about 2 hours.
  • Heat remaining 2 tablespoons olive oil in a Dutch oven or heavy pot over medium heat; cook and stir onion, celery, and zucchini until tender, about 5 minutes. Stir in red pepper flakes, paprika, and curry powder. Season with salt and black pepper and add remaining 3 sprigs chopped thyme. Stir in roasted tomatoes along with any liquid from the baking sheet. Cook and stir for 5 more minutes; pour chicken broth into tomato mixture. Simmer for 20 minutes.
  • Blend with an emersion blender until desired consistency. Stir in cream and basil before serving.

i really like eating and making soup. its ace my mate at work duncan bought me the covent garden cookbook and this is my favourite soup recipe so far. I reckon you make this slimming world freindly by using spray cal or fry light instead of oil and leaving oil out of the basil puree but ill give its pure unadulterated beauty without changes i reckon. It cost me about a £5 to make and it made a lot of servings

4 lbs ripe tomatoes
7 fluid ounces extra virgin olive oil
6 large garlic cloves, crushed
4 bay leaves
4 sprigs fresh thyme
4 medium onions, finely sliced
4 sticks celery, finely sliced
1 head fennel, sliced
1/2 fresh chili pepper, deseeded
2 teaspoons tomato puree
2 teaspoons sugar
1 lemon, juice of
1 pinch salt
2 1/2 ounces fresh basil leaves
2 teaspoons balsamic vinegar
1/2 teaspoon salt
4 tablespoons extra virgin olive oil
1 teaspoon tapenade (olive paste)

Steps:

  • preheat grill to hot hot hot. cut the tomatos in half and place cut side up on a baking sheet gril until soft and beginning to darken at edges. this took me 30min approximately when softa little dark take out and preheat oven to gas mark 5.
  • heat the olive oil with the garlic and herbs in a large saucepan. when hot add teh other veggies. cook over a moderate heat for a few minutes stirring now and then until the veg begins to soften. transfer these veggies onto a raosting tin and roast in oven til soft. it took me about 40min approximatley.
  • remove from oven and puree in liquidiser with tomatoes, lemon juice, tomato puree and sugar add water if you need to to make a smooth pouring consistency.
  • to make the baisl puree pound the basil leaves in a pestle and mortar with salt until smooth add the olive oil and vinegar and stir well. dollop a heaped teaspoon of the pureee on the soup and eat with bread and stuff yummy!

1 small onion
2 garlic cloves
2 tablespoons olive oil
2 tablespoons fresh thyme leaves
1 teaspoon salt
1/2 teaspoon pepper
12 fresh basil leaves

Steps:

  • Halve each tomato, cut out stem, peel garlic, peel onion and cut it in quarters.
  • Place tomatoes, garlic and onion in a greased 15"x10" x 1 "inch baking pan; drizzle with olive oil, sprinkle thyme on top, salt and pepper. Toss to coat.
  • Bake at 400°F for 25-30 minutes or until tender; stirring once. Cool slightly.
  • In a blender, process the tomato mixture and basil leaves in batches until blended. Transfer to a large saucepan and heat through. Garnish each bowl with salad croutons or extra basil leaves.

3 medium red peppers
1/3 cup olive oil
2 cups basil or 2 cups watercress leaves
1/2 teaspoon salt
French bread
16 ounces mozzarella cheese, sliced (fresh balls)

Steps:

  • Preheat broiler if manufacturer directs. Cut each pepper lengthwise in half; discard stem and seeds. Arrange peppers, cut-side down, in 15 1/2" by 10 1/2" jelly-roll pan. Place jelly-roll pan in broiler at closest position to source of heat and broil peppers 15 minutes or until charred and blistered. Turn peppers and broil 5 minutes longer.
  • Remove peppers to clean brown paper bag; fold top of bag over to seal it, and let stand at room temperature 15 minutes (keeping peppers in bag to steam makes them easier to peel). Remove peppers from bag and peel off skin. Cut each pepper half lengthwise into thirds.
  • In blender or food processor with knife blade attached, blend olive oil, basil, and salt until almost smooth.
  • Cut French-bread loaf horizontally in half. Remove and discard some soft bread from each half. Evenly spread basil mixture on cut side of both halves. Arrange mozzarella cheese slices on bottom half of loaf; top with roasted peppers. Replace top half of loaf.

I watched Tyler Florence make this soup on his show and could not wait to fix this. I don't think I will ever again buy a can of tomato soup. This is easy and awesome. I paired this with Grilled 3 Cheese Sandwiches.

2 1/2 lbs fresh tomatoes (mix of fresh heirlooms, cherry, vine and plum tomatoes)
6 garlic cloves, peeled
2 small yellow onions, sliced
on the vine cherry tomatoes (to garnish) (optional)
1/2 cup extra virgin olive oil
salt & freshly ground black pepper (to taste)
1 quart low sodium chicken broth
2 bay leaves
1/2 cup fresh basil leaf, chopped (optional)
3/4 cup half-and-half

Steps:

  • Preheat oven to 450º F.
  • Wash, core and cut tomatoes into halves. Spread the tomatoes, garlic and onions onto a baking tray. If using vine cherry tomatoes for garnish, add them as well, leaving them whole and on the vine. Drizzle with 1/2 cup olive oil and season with salt and pepper. Roast for 20-30 minutes or until caramelized.
  • Remove roasted tomatoes, garlic and onion from the oven and transfer to a large stock pot (reserve vine cherry tomatoes for later). Add 3/4 of the chicken stock, bay leaves and butter. Bring to a boil, reduce heat and simmer for 15-20 minutes or until liquid has reduced by a third.
  • Wash and dry basil leaves. Add to pot. Use an immersion blender to puree the soup until smooth. Return soup to low heat, add half and half and adjust consistency with remaining chicken stock, if necessary. Season to taste with salt and freshly ground black pepper. Garnish in bowl with 3 or 4 roasted vine cherry tomatoes and a splash of half and half.

Never thought to post this as I don't think of it as a recipe, but it came up recently in Request a Recipe, so here is what I do for whomever wants to have a go...quantities are guess-timated as I just use as many tomatoes as I've got and never measured.

4 -5 lbs ripe tomatoes
2 tablespoons olive oil
4 -5 garlic cloves, minced
salt and pepper
dried basil
dried oregano

Steps:

  • Peel tomatoes. The easiest way to do this is to drop them into a container of boiling-hot water, leave for 1 minute, then drop them into a container of ice-water - the skin slips right off). Halve them and put into a baking pan large enough to hold them in one layer.
  • Dribble with olive oil (the amount is arbitrary - I imagine that's about what I use), sprinkle with minced garlic, generously season with salt, pepper, basil and oregano. Give everything a stir to distribute.
  • Pop into 350F oven and roast for about 3 hours (this is approximate - it all depends on how thick you want your puree or paste).
  • When they're done, I like to mash the tomatoes into a paste because I like a more rustic texture. If you want smoother, use a processor.
  • I keep the puree/paste in a tupperware container, in the refrigerator, covered by a thin film of olive oil to prevent oxidization. I dig into it almost daily to provide a burst of flavour into many, many dishes like soups, stews, sauces, gravies, omelettes, etc.
  • This freezes well, too.

6 firm tomatoes, peeled and cut in half
3 garlic cloves, peeled and left whole
coarse salt, to taste
fresh ground black pepper, to taste
2 tablespoons olive oil
6 leafs basil, torn in half
2 cups low sodium vegetable broth
2 cups water
1 large russet potato, peeled and cut into chunks
1 tablespoon tomato paste
1 cup fresh basil
2 tablespoons olive oil
1 teaspoon balsamic vinegar
1/4 teaspoon coarse salt
fresh ground black pepper

Steps:

  • Preheat the oven to 400 degrees. Lightly oil a shallow baking dish large enough to hold the tomatoes in a single layer.
  • Place the tomato halves, cut sides up, and the garlic in the prepared baking dish. Sprinkle with salt and pepper. Drizzle with the oil, then top each tomato half with half a basil leaf, turning each leaf over to coat in oil.
  • Bake 50-60 minutes, or until the edges of the tomatoes are slightly blackened.
  • Meanwhile, in a medium saucepan, bring the broth, water, potato and tomato paste to a boil over high heat. Reduce the heat slightly and boil until the potato is tender, about 20 minutes.
  • Transfer half of the mixture to a blender. Process until smooth but still a bit chunky. Transfer to a medium stockpot. Repeat with remaining potato and roasted tomato mixture. Stir over medium-low heat until heated through.
  • Process all ingredients for the basil puree (last 5 ingredients starting with basil) in a food processor until smooth.
  • Serve hot, garnished with equal portions of basil puree.
