CONNIE'S BEEF CASSEROLE

This warm and yummy casserole has been served to family and friends for over forty years. My grandchildren named it one of their favorites. That's good enough for me. It's really easy to "throw" together and the oven does the rest. One pot meal, ready for the table. Enjoy!

Number Of Ingredients 8

1 1/2 lb beef stew meat
1 1/4 c beef stock- i use homemade but canned will do
2 Tbsp minute tapioca
2 clove garlic, minced- feel free to adjust to your taste
3 onions, sliced length wise
3 carrots- sliced i use the small carrots in the bag and just throw them in
3 potatoes, sliced into hunks
salt and pepper to taste

Steps:

  • 1. Gather all ingredients.
  • 2. Mix beef stock and tapioca in a casserole dish with cover.
  • 3. Place beef stew, onions, carrots, garlic, salt and pepper into beef stock and tapioca mixture.
  • 4. Cover and bake at 325 degrees for 1 1/2 hours.
  • 5. Remove casserole from the oven and add potatoes and additional salt and pepper to the dish.
  • 6. Place back in the oven for about 30-40 minutes. Check potatoes to be sure they are done.
  • 7. You can serve out of the casserole dish or on a platter.
  • 8. Enjoy:)

CONNIE'S KANSAS CITY CASSEROLE

My family has been making this casserole for decades. I'm not sure where the recipe orginated, maybe mom made it up. It is so good, a one pot meal. Throw it together and shove it in the stove:) Photos to be posted later.

3 lb lean beef short ribs
2 tsp salt
1/8 tsp pepper
1 medium onion, sliced
1 Tbsp chopped parsley
1/2 c sliced celery
2 medium potatoes, quartered
1 Tbsp prepared horseradish
2 8 oz. tomatoes sauce with tomato bits

Steps:

  • 1. Cut beef into serving size pieces.
  • 2. Trim off any excess fat.
  • 3. Sprinkle beef with salt and pepper.
  • 4. Place ribs into casserole.
  • 5. Brown meat in the oven, uncovered for 1 hour at 400 degrees.
  • 6. Remove casserole from oven and drain off fat.
  • 7. Add onions, parsley, celery, potatoes, horseradish, and tomatoes to casserole dish.
  • 8. Stir casserole ingredients.
  • 9. Bake an additional 1 hour at 375 degrees.
  • 10. Great with a salad....Enjoy!

CONNIE'S SIRLOIN CASSEROLE

Love the gravy that this recipe created. To me, the Kentucky Kernel flour always makes everything so good. After the initial preparation, this is one of those recipes that takes no attention. Your guests will be very impressed!

Number Of Ingredients 11

2 1/2 lb top sirloin roast chunks, bone in
1 1/2 c kentucky seasoned flour- if you can't find the kentucky brand flour, just mix 1 1/2 cup all purpose flour flour, 1 teaspoon salt, 1/2 teaspoon pepper and onion powder together.
2 Tbsp garlc powder
1 Tbsp lawry's seasoning
3 Tbsp olive oil
6 potatoes, peeled and sliced into large hunks
6 carrots, peeled and sliced into large hunks
1/2 bottle red wine, small, single size bottle
1 pkg onion soup mix
salt and pepper to taste
2 c water

Steps:

  • 1. Combine flour, garlic powder and Lawry's seasoning in a zip lock bag and shake it to combine.
  • 2. Add sirloin chunks and shake to cover them.
  • 3. Add olive oil to your hot cast iron skillet.
  • 4. Brown sirloin chunks in olive oil. Be sure all sides of sirloin are brown.
  • 5. Take sirloin chunks out of the cast iron skillet and place in a large casserole that has a cover (or cover later with aluminum foil).
  • 6. Add 2 cups of water to the hot pan and mix up the drippings.
  • 7. Add potatoes, carrots, wine, onion mix, and drippings into the casserole dish and cover.
  • 8. Roast at 280 degrees for 3 hours; then 1 hour at 350 degrees. You can play around with the degrees and time. This is just how I did it the first time I made it and it was amazing.
  • 9. Enjoy!

CONNIE'S PANTRY CASSEROLE

Ever had a pound of hamburger with no clue what you were going to do with it? That's how this recipe was born over thirty years ago. I'm pretty sure there are a lot of variations of this recipe out there. I add this one to the group. Easy, fun and creative, this dish is really good and comforting. Enjoy!

1 lb ground beef
1 onion, chopped
1/2 tsp garlic powder
1 pkg mashed potatoes
salt & pepper to taste
1 tsp worcestershire sauce
3 pats of butter
1 can(s) diced tomatoes
2 cans of whatever veggies you have in the pantry. for this recipe, i used mushrooms and corn

Steps:

  • 1. Sauté onions.
  • 2. Add ground meat to onions and brown.
  • 3. Add garlic salt into meat mixture.
  • 4. Drain cans of 2 veggies. I used corn and mushrooms but carrots, green beans, peas, etc. would work also.
  • 5. Add veggies and can of diced tomatoes to meat mixture.
  • 6. Add Worcestershire sauce and salt and pepper mixture to taste.
  • 7. Remove mixture from skillet with a slotted spoon and place in a casserole dish.
  • 8. Top mixture with mashed potatoes (home made or packaged works well).
  • 9. Top with butter.
  • 10. Bade in over at 350 degrees until mashed potatoes are brown; about 35 minutes.,
  • 11. Enjoy!

Good 1 dish meal for potlucks--very versatile--you can use your imagination and add many other ingredients to make it different. I often add mushrooms and do with bread crumbs.

8 ounces egg noodles
1 lb ground beef
1 (15 ounce) can tomato sauce
1 (8 ounce) package cream cheese
1/4 cup sour cream
1 cup small curd cottage cheese
1/2 cup chopped green onion
2 tablespoons chopped green peppers
2 tablespoons melted butter

Steps:

  • Cook noodles; drain and set aside.
  • Brown meat; drain.
  • Add tomato sauce to beef; remove from heat.
  • In a separate bowl, mix cream cheese, cottage cheese, sour cream, onions and peppers.
  • Butter a casserole dish and spread 1/2 the noodles in the bottom.
  • Cover noodles with 1/2 the cheese mixture, then 1/2 the meat mixture, then 1 more layer of noodles, then cheese mixture and then meat mixture.
  • Pour 2 tablespoons butter over top; press down slightly.
  • Bake at 375° for 1 hour to 1 hour 15 minute.
  • If drier casserole is desired, cook 15 minutes longer.

3 medium carrots, cut into 1-inch pieces
2 celery ribs, chopped
1 medium onion, sliced and separated into rings
1 can (14-1/2 ounces) diced tomatoes, drained
1 cup beef broth
1 can (8 ounces) sliced water chestnuts, drained
1 can (4 ounces) mushroom stems and pieces, drained
3 tablespoons quick-cooking tapioca
1 tablespoon sugar
1 teaspoon salt
2 pounds lean ground beef
Hot cooked rice or noodles

Steps:

  • In a bowl, combine the first 10 ingredients. Crumble beef over mixture; toss gently. Transfer to a greased 13-in. x 9-in. baking dish. , Cover and bake at 350° for 2 hours or until hot and bubbly. Serve with rice or noodles.

This is a recipe that I put together out of necessity when I needed to serve a large family get together and it has become a family favorite. There are a lot of Italian Casserole recipes out there, but this is my version.

2 lbs ground turkey
1 cup chopped sweet onion
1 cup chopped bell pepper
2 (32 ounce) jars ragu garden vegetable spaghetti sauce
2 tablespoons brown sugar
16 ounces shredded mozzarella cheese (low-fat)
24 ounces sour cream (non-fat)
1/3 cup grated parmesan cheese
2 (8 ounce) cans crescent dinner rolls
2 tablespoons melted butter

Steps:

  • Pre-heat oven to 275 degrees.
  • Brown beef, onion, bell pepper in olive oil, drain.
  • Stir in spaghetti sauce and sugar, heat till bubbly.
  • Combine Mozzarella cheese and sour cream, separately from sauce mixture.
  • Pour sauce mixture into two ungreased 8x12 baking dishes.
  • Spoon cheese-sour cream mixture over sauce mixture.
  • Separate crescent roll dough into rectangles and lay out over cheese-sour cream mixture making sure to cover it completely.
  • Brush melted butter over dough and sprinkle with Parmesan cheese.
  • Bake at 375 degrees 25-30 minutes or until golden brown.
  • This recipe makes enough for at least 24 people. If you don't need this much you may cut the recipe in half or freeze the leftovers. It is perfect to take to covered dish get togethers.

CONNIE'S TAMALE CASSEROLE

I've made this recipe for my family and our friends and they really liked it. Its very simple to make and warms them up on a cold day. The left overs are just as good if not better than the day you make it. Instead of using the canned tamales, I started using the fresh or frozen ones. That really makes the difference. The canned ones are a bit oily to use but you can use them. you will need to drain them and pat them dry first. We like the pork tamales but you can use either beef, or chicken. The pork just taste better to us.

12 fresh tamales (Pork, Beef, or Chicken)
1 (10 ounce) can cream of chicken soup
1 (10 ounce) can Ro-Tel tomatoes (mild)
1 cup sargento authentic mexican cheese
1 (4 ounce) can chopped green chilies (Drained)
1 (6 ounce) can black olives (sliced or chopped)

Steps:

  • Place tamales (WITHOUT PAPERS) in a greased or sprayed 9 x 13" pan.
  • In separate bowl combine the soup, Ro-Tel tomatoes and the green chilies,.
  • stir until well blended.
  • Pour over the tamales. Top with cheese, and the olives. Bake covered for 30 minute Then take cover off and let bake another 15 to 20 minute or until the cheese bubbles and gets a little brown on top.
  • This recipes makes a lot and should serve 6 - 8 people.
