SEVEN LAYER BARS
Easy to make, and very rich. Can use different kinds of chips (vanilla or peanut butter) to suit your taste.

Steps:
- Preheat oven to 350 degrees F (180 degrees C).
- Place butter in 13 x 9 inch pan and melt in oven. Swirl to coat bottom and sides with butter.
- Spread graham cracker crumbs evenly over bottom of pan. Layer chocolate chips, butterscotch chips, and nuts over crumbs. Pour condensed milk over nuts. Sprinkle coconut over condensed milk.
- Bake until edges are golden brown, about 25 minutes. Let cool before cutting into bars.

CONGO BARS | 7 LAYER BARS
These congo bars, also known as 7-layer bars, include a graham cracker base and sweetened condensed milk, chocolate chip, shredded coconut, and pecan topping. And they taste like childhood, too.

- Preheat the oven to 350°F (176°C). Butter an 8-by-8-inch or 9-by-9-inch baking pan, dust with flour, and tap out the excess.
- Combine the flour, baking powder, and salt in a bowl. Stir in the graham cracker crumbs and light brown sugar and mix well.
- Work the butter into the crumb mixture with your hands until the crumbs are evenly coated with buttery goo. Spread the crumb crust in the prepared baking pan, pressing down gently with your hands. You don't want to make the crust too dense or compact. Bake for 10 minutes, or until the crust is slightly golden. Remove from the oven and let cool while you make the topping. Oh, and leave the oven on.
- While the crust is cooling, mix together the coconut, both chocolates, and the condensed milk. Add the pecans or other nuts, if desired. Spread the mixture evenly over the warm crust. Return to the oven and bake for 20 to 23 minutes, or until the top is set and light brown. Watch carefully toward the end of the baking time to make sure the top doesn't become too bubbly or dark.
- Let the pan of bars cool on a wire rack for 2 hours or so, until the chocolate is no longer soft and they slice easily.
- Cut into whatever size or shape you fancy.

- Preheat oven to 350 degrees F (180 degrees C).
- Melt shortening, stir in brown sugar. Let cool.
- Beat in the eggs.
- Add dry ingredients.
- Add chocolate chips, nuts and vanilla.
- Pour in 10 x 15-inch pan and bake for 30 minutes. Cool and cut into squares.

- Make the crust: Preheat the oven to 350°F. Lightly butter an 8-inch or 9-inch square baking pan. Line the pan with a sheet of parchment, leaving two ends hanging over the ends of the pan. This will create a sling to help you remove the bars from the pan. Butter the parchment and add an extra layer of butter to the two sides of the pan not covered with parchment.
- Combine the flour, baking powder, and salt in the bowl of your food processor. Add xanthan if using. Pulse a few times to blend. Add the almond meal and brown sugar, and pulse to combine. Pour the butter over the top and pulse until the butter is completely incorporated and the mixture starts to clump together.
- Spread the crumb mixture in the bottom of the prepared baking pan, pressing down gently with your hands. Spread to the edges of the pan to fully cover the bottom.
