Steps:
- Cook spaghetti in boiling salted water as directed on label. Drain, rinse and set aside.
- Saute onion lightly in the butter in large saucepan.
- Stir in flour. Off heat, stir in milk, half-and-half and broth.
- Put back over heat. Cook, stirring, until thickened.
- Add ham, peas and spaghetti.
- Add salt and pepper to taste. Turn half the mixture into shallow 2-quart baking dish.
- Sprinkle with half the cheeses.
- Add remaining spaghetti mixture. Sprinkle with remaining cheeses.
- Bake at 350 degrees F for 30 minutes until golden.

CHEESY HAM CASSEROLE
This easy cheesy ham casserole is the perfect way to use up your leftover ham and stretch it to feed a crowd!

- Preheat oven to 400°F. Mix together topping ingredients, set aside.
- Cook shells al dente according to package directions. Drain well.
- Meanwhile, melt butter, flour and seasonings in a saucepan. Allow to cook 1 minute.
- Slowly add in cream and milk while whisking after each addition. The mixture will seem thick at first but will smooth out with each addition.
- Once all of the cream/milk is added, whisk while bringing to a boil over medium heat. Allow to boil 1 minute.
- Remove from heat and stir in 2 ½ cups cheddar, gruyere cheese, and parmesan until smooth.
- Mix cheese sauce with cooked pasta and ham and place in a 9x13 pan. Add topping and remaining ½ cup of cheese.
- Bake 22-26 minutes or until heated through and topping is browned. Cool 5 minutes before serving.

- Preheat the oven to 350 degrees F. Generously spray 24 muffin cups (2 standard muffin tins) with cooking spray.
- Crack the eggs into a bowl; add the salt, black pepper and chili powder. Whisk until combined. Add the ham, Cheddar, bell peppers and onions and stir.
- With a measuring cup, scoop the mixture into the muffin cups. Bake for 20 to 22 minutes, until puffy and just barely set.
- Within a minute or two, the casseroles will start to flatten just a little bit -- this is normal! Run a knife along the edges of each muffin cup and lift the casseroles out of the pan. Serve warm or at room temperature.

- Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese and stir until melted. , Pour over ham mixture. Sprinkle with bread crumbs. - Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
- Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.
- Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.
