This is a great recipe, different than the usual biscuit. Serve piping hot with butter, jam, or honey.

2 cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 dash salt
1 tablespoon white sugar
½ cup butter
¾ cup buttermilk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a bowl, mix the flour, baking powder, baking soda, salt, and sugar. Cut in 1/2 cup butter until the mixture resembles coarse crumbs. Mix in the buttermilk. Turn out onto a lightly floured surface, and knead 2 minutes. Transfer to an ungreased baking sheet, roll into a 6x6 inch square, and cut into 12 even sections. Do not separate.
  • Bake 15 minutes in the preheated oven, until a knife inserted in the center of the square comes out clean. Separate into biscuits, and serve hot.

1 1/2 cups flour
1 1/2 teaspoons salt
1 tablespoon sugar
1 tablespoon baking powder
1 cup buttermilk (scant)
1/3 cup lard

Steps:

  • Sift dry ingredients into mixing bowl and nest the flour mixture.
  • Add most of buttermilk.
  • Cut in the lard.
  • Begin squeezing the lard and flour in the milk until thoroughly mixed.
  • Add the rest of the buttermilk if needed and mix.
  • Turn on to floured board.
  • Knead until consistency desired.
  • Cut into biscuits.
  • Place on a lightly greased baking sheet.
  • Bake in a preheated 450°F oven for 12-14 minutes.

4 eggs, beaten
3/4 cup sugar
2 tablespoons flour
4 tablespoons melted butter
1 1/2 cups churned buttermilk
1 teaspoon vanilla
3 tablespoons kentucky Bourbon

Steps:

  • Beat 4 eggs and 3/4 cup sugar together until light and lemon colored.
  • Add 2 tablespoons flour and beat some more.
  • Mix the butter, vanilla, bourbon and the buttermilk, then add it to the egg mixture.
  • Pour into baked, but not browned, pie shell.
  • Bake at 375 degrees for 20-30 minutes (over baking makes it tough).

This is my personal recipe for Kentucky whipped butter, served with my hot Kentucky biscuits or buckwheat cakes.

1/2 lb softened butter (cut up)
2 1/2 tablespoons buttermilk

Steps:

  • Add 2 sticks cut up softened butter to a mixing bowl.
  • Beat until well beaten.
  • Begin adding buttermilk slowly.
  • Beat until fluffy.
  • Scrape loose the first solid butter clinging to the bowl, then beat until there are no solid lumps in the whipped butter.
  • Serve with my hot Kentucky biscuits.
  • Store unused portion in refrigerator, tempering and whipping before serving again.

While I'm not claiming it tastes just like the KFC recipe, this is truly an AWESOME recipe for fried chicken!! My mom has been making this since I was a wee little one, and I still absolutely LOVE it! My whole family really enjoys this chicken. The ingredients are a little different, but don't let that scare you. Make it once, and you'll be hooked! Prep. time includes refrigeration time.

2 packages dried Italian salad dressing mix
3 tablespoons flour
2 teaspoons salt
1 dash black pepper
1/4 cup lemon juice
2 tablespoons vegetable oil
2 1/2-3 lbs broiler-fryer chicken pieces
2 cups carbonated soda water
2 cups dry pancake mix
oil, for frying

Steps:

  • In small bowl, combine first 6 ingredients and stir until smooth, thick paste is formed.
  • Spread evenly over chicken.
  • Place coated chicken in large bowl, cover tightly, and refrigerate for at least 2 hours.
  • Pour oil in large, heavy skillet or deep fryer to at least a 3-inch depth, and heat to 425 degrees.
  • Meanwhile, place soda water in bowl, and dry pancake mix in a seperate bowl.
  • Place chicken in soda, then dredge with pancake mix.
  • Set aside to dry a few min.
  • Fry a few pieces at a time uintil browned (about 5 minutes), and place on large baking sheet.
  • Bake, uncovered, for 30 minutes at 350 degrees.

1 1/2 cups unsifted flour
1 1/2 teaspoons salt
1 tablespoon sugar
1 tablespoon baking powder
2/3 cup milk
1/3 cup vegetable shortening

Steps:

  • Preheat oven to 425. Sift into mixing bowl flour, salt, sugar and baking powder.
  • Make a nest in the flour mix and add milk.
  • Add shortening and begin kneading with hands (to cut in) the vegetable shortening and flour in the milk until thoroughly mixed.
  • Add milk - if needed - to form, and mix.
  • Turn onto floured board, and knead gently 6 to 8 times.
  • Pat dough to 1/2" thickness.
  • Cut into biscuits.
  • Place on baking sheet and brown in oven 10-13 minutes.

The is an old Colonel Sanders' recipe called 'Colonel's Candy,' which used to be sold in the Kentucky Fried Chicken restaurants. Rumor has it that the Colonel's wife invented it. Many people don't remember - but before drive though's the Colonel used to be sit-down affairs that you would get dressed up for to go to after church on Sunday.

1/2 lb butter
2 lbs powdered sugar
8 tablespoons whiskey
2 cups nuts, chopped
1 tablespoon lemon juice
7 semi-sweet chocolate baking squares
1 tablespoon paraffin wax

Steps:

  • On stove, soften butter and 1 pound of sugar, remove from heat and let cool to warm.
  • Add whiskey, then second pound of sugar; nuts, and lemon juice.
  • Blend until all are mixed. Roll into balls and let cool overnight to firm up.
  • Melt chocolate and paraffin in top of double boiler; blend well. Remove from the heat and cool slightly. Dip candy in chocolate mixture.
  • Set one waxed paper to harden.
  • Store in an airtight container.
