COLLARD GREENS WITH AGAVE & SMOKED MEATS
I created this Southern Delightful Dish because it reminded me of a dish my mother always made growing up on the farm. All types of vegetables were a staple in our household, we grew up eating lots of vegetables. Whenever mama made any type of greens she would always create this vinaigrette of different veggies to go over...

Steps:
- 1. Add the smoked neck bones to a large pot and cover with water. Add a lid. Heat over medium high heat, & bring to a boil and then lower heat to a simmer. Cook for about 1 1/2 hour till meat is tender and can be removed from bones. Then add back into pot.
- 2. Remove lid and add collard greens, then add the garlic powder red pepper flakes, garlic vinaigrette, minced onions, or fresh & agave or sugar. Add water or chicken broth and continue to cook, until most of the liquid has evaporated or cooked down. Stir frequently to prevent sticking. NOTE IF YOU ARE USING THE FRESH NON BAGGED VARIETY, YOU WILL NEED TO PICK THROUGH THEM AND WASH THOURGLY, REMOVING THE THICK WOODY STEM IN THE MIDDLE.
- 3. Continue to cook for an addition1 1/2 to 2 hours or until desired doneness is reached. PLEASE NOTE MY MOTHER ALWAYS COOKED HER GREENS FOR A LONG PERIOD OF TIME ESPECIALLY COLLARDS SINCE THEY TEND TO BE TOUGHER. But you may cook as long or as little as you like, it is just a matter of preference.

- 6. To assemble this great tasting southern delight. You place the corn bread baskets on a plate, then top with the cooked collard greens allowing some of the liquid to rest inside the cups and penetrate the corn bread, and to the top of the greens you add a spoonful or two of the garlic vinaigrette, then you savor and enjoy this delightful Southern dish dish.
- 7. This is the Vinaigrette that I used. But you can also use a Balsamic Vinaigrette or any flavor vinaigrette of your choosing.
BLACK FOLKS SOUL FOOD COLLARD GREENS RECIPE
Steps:
- Clean the collard greens and cut off the stems.
- Then roughly chop the leaves in half through the midline and then into bite-sized pieces.
- Open the Instant Pot lid and add the wet ingredients (chicken stock, vinegar, Worcestershire sauce, honey, and hot sauce to the stainless-steel inner pot.
- Next, add the onion, tomatoes, garlic, Old Bay or Cajun seasoning, red pepper flakes, salt, pepper, and stir to combine the ingredients.
- Finally, add the collard greens, followed by the cooked turkey leg.
- Press down to sink the greens as much as you can into the liquid broth.
- Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 15 minutes.
- When the cooking time is finished, allow a natural pressure release for at least 15 minutes.
- To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
- Serve Black folks' soul food collard greens right away and enjoy!

BRAISED SMOKED COLLARD GREENS WITH PEPPER VINEGAR

- To make the pepper vinegar: Bring the vinegar and sugar to a boil and stir to dissolve. Add the chiles and cool in the fridge for at least 2 hours to overnight.
- Smoke the collards in 2 batches: Preheat the oven to 200°F. To create a smoker, use two large aluminum pans. First, heat the wood chips in a cast-iron pan over hight heat, until they begin to smoke. Remove the cast-iron pan from the heat and place the hot wood chips in one of the aluminum pans. Then, using a small but sharp knife, punch holes in the bottom of the second pan and place it on top of the first pan with the wood chips inside. Add the collards to the top pan, place in the oven, and smoke for 15 minutes. Remove from the oven and set aside.
- In a Dutch oven, sweat the red and white onions, leeks, and shallot with 2 cups of the olive oil and a nice pinch of salt. Add the smoked collards in increments until they cook down, then add more. Once all of the collards are in the pot, add the remaining oil and 8 cups of water. Cook, covered, on low heat, until done, about 1½ to 2 hours.
- To serve: Dress the collard greens with the pepper vinegar to taste.

- Discard the jalapeño. Transfer the bacon to a plate, then cut off and discard the skin and fat. Using 2 forks, shred the meat and return it to the pot. Using tongs, transfer the collards and bacon to bowls. Spoon some of the broth over the greens and serve.
