These cold sesame noodles are quick and easy to make, especially if you store a batch of sauce in a jar in your refrigerator. Cold Sesame noodles sauce is convenient and a great meal to have anytime but it is especially good during the hot summer months!

8 oz. noodles ((250g))
1 scallion ((julienned))
½ cup carrots ((shredded))
½ cup cucumber
½ cup bean sprouts
cilantro
Toasted sesame seeds
Handful of crushed peanuts
2 tablespoons peanut butter
1/2 teaspoon salt
1 tablespoon sesame oil
1 tablespoon canola oil
1 teaspoon Chinese sesame paste
1 tablespoon soy sauce
2 cloves garlic ((minced))
1 tablespoon fresh orange juice
2 tablespoon rice wine vinegar ((or white vinegar))
3 tablespoons reserved cooking water from the noodles

Steps:

  • Cook the noodles al dente and reserve some of the cooking liquid. Rinse the noodles with cold water and drain.
  • Stir together all the sauce ingredients in a small bowl until combined. Julienne the scallion, carrot, and cucumber.
  • Blanch bean sprouts in boiling water for 15 seconds and put into an ice bath and drain.
  • In a bowl, pour the sauce over the noodles. Add the vegetables, chopped cilantro, crushed peanuts and toasted sesame seeds on top and serve immediately, along with extra toppings like chili sauce, rice vinegar, or soy sauce.

3 tbsp. sesame paste
5 tbsp. cold water
1 tbsp. light soy sauce
1 tsp. sugar
1 tsp. salt
1/2 tbsp. black vinegar

1 tbsp. light soy sauce
4 tbsp. sesame paste texture
freshly ground Sichuan peppercorn
1 tbsp chopped Zha-cai or you can use crushed peanuts ( ,for the crispy taste)
1/2 tbsp Homemade Chili oil for drizzling

  • Tune the sesame paste texture: slightly add light soy sauce, sesame oil, salt and cold water in sesame paste. Stir to combine well. The sesame paste should be running but not thin.

Pungent, aromatic and refreshing, cold noodles with Sichuan dressing is such a delectable dish to try! My recipe explains in detail the cooking method, ingredient sourcing and topping inspirations.

1 tsp minced garlic
1 tsp Sichuan pepper
1 star anise
4 tbsp hot water
1 chicken thigh, boneless & skinless (or 1 chicken breast, see note 2)
2 portion noodles of your choice, see note 3
1 tsp sesame oil
1 tbsp light soy sauce (or Sichuan spiced sweet soy sauce, see note 4)
1 tbsp black rice vinegar
½ tsp sugar
Salt (to taste)
2 tbsp Chinese chilli oil (see note 5)
¼ tsp Sichuan pepper oil (optional)
150 g cucumber, cut into matchsticks
1 stalk scallions, finely chopped
2 fresh chilli, thinly sliced
Coriander
Toasted or fried peanuts (optional)

Steps:

  • Put minced garlic, Sichuan pepper & star anise into a small bowl. Add hot water. Leave to infuse.
  • Option 1: Put the chicken on a plate. Steam for 15 mins over medium heat. Transfer to another plate to cool.
  • Option 2: Place the chicken in a roasting tray. Cover the tray with tin foil. Cook for 20 mins in a preheated oven at 390°F/200°C/Fan 180°C. Transfer to a plate to cool.
  • Bring a pot of water to a full boil. Add noodles. Boil until they are just cooked or a little undercooked. Be attentive to avoid boiling over.
  • Drain the noodles. Rinse under tap water to cool.
  • Transfer to a large bowl. Add sesame oil. Toss well.
  • Shred the chicken either by hand or with a knife. Add to the noodles along with cucumber, scallions and fresh chilli.
  • Drain the aromatic water through a sieve. Discard the garlic & spices. Pour the water over the noodles. Add all the ingredients for the dressing and mix well.
  • Transfer the noodles to 2 serving bowls. Top each one with coriander, peanuts (if using).

1/2 pound Chinese egg noodles
3 tablespoons dark sesame oil
2 tablespoons peanut oil
2 green onions, thinly sliced on the diagonal
1-inch piece fresh ginger, minced
3 garlic cloves, minced
1 teaspoon red chili paste, such as sambal oelek
2 tablespoons brown sugar
1/2 cup creamy peanut butter
3 tablespoons rice vinegar
3 tablespoons soy sauce
6 tablespoons hot water
1 tablespoon toasted sesame seeds
Cucumber slices, for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Cook the noodles in large pot of boiling unsalted water over medium heat until barely tender and still firm. Drain immediately and rinse with cold water until cool. Drain the noodles really well and transfer to a wide bowl; toss with the sesame oil so they don't stick together.
  • In a small saucepan, heat the peanut oil over medium-low flame. Add the green onions, ginger, garlic, and chili paste. Cook and stir for a minute until soft and fragrant. Mix in the brown sugar, peanut butter, vinegar, soy sauce, and hot water. Stir until the sugar is dissolved and the peanut butter has smoothed out. Toss the noodles with the peanut sauce until well coated. Serve at room temperature or chilled. Garnish with the sesame seeds, cucumber slices, and cilantro.

4 cups chopped fresh crunchy raw vegetables: snow peas, bell peppers, cucumbers, scallions
12 ounces fresh Chinese egg noodles or long pasta like linguine
2 tablespoons dark sesame oil
1/2 cup tahini, peanut butter or a combination
2 tablespoons sugar
3 tablespoons soy sauce, or to taste
1 teaspoon minced fresh ginger (optional)
1 tablespoon rice or white wine or other vinegar
Hot sesame oil or Tabasco sauce to taste

Steps:

  • Bring a large pot of water to a boil and salt it. Prepare the vegetables: trim, seed, peel as necessary and cut into bite-size pieces. Reserve in a container until ready to use.
  • Cook the noodles in the boiling water until tender but not mushy. When they're done, rinse in cold water, then toss with a little sesame oil. Store in one or more containers.

1 tablespoon peanut oil
3 tablespoons Chinese sesame oil
4 tablespoons sesame seed paste (tahini)
3 tablespoons dark soy sauce
2 tablespoons brewed tea
1 tablespoon chili oil
1 teaspoon sugar
6 scallions, chopped
1 clove garlic, minced
2 teaspoons fresh ginger root, minced
Coarse salt and freshly ground pepper to taste

Steps:

  • Bring six quarts water to boil. Add the peanut oil and cook the noodles for three to four minutes, or until al dente. Drain and refresh under running cold water.
  • Place the noodles in a large serving bowl and add one tablespoon sesame oil. Toss to prevent them from sticking together and set them aside.
  • Mix together the remaining ingredients until you have a smooth sauce. If necessary, thin with a little olive oil. Correct seasoning and pour the dressing over the noodles. Toss thoroughly and serve at room temperature.

Noodles dressed with sesame are popular in many parts of China, but this particular style, made with peanut butter and served cold, became a Chinese-American staple in the United States in the 1970s. The family of Shorty Tang - an ambitious restaurateur who emigrated from Sichuan to Taipei to New York - firmly believes that he invented the dish and still serve it at Hwa Yuan, the restaurant he opened in 1967 in Manhattan's Chinatown. They have never divulged the exact recipe; this is our own lush but refreshing version.

2 tablespoons sesame oil, plus a splash

4 medium garlic cloves, minced

1 lb chinese noodles (or any spaghetti or fettucini-type pasta)
2 tablespoons dark sesame oil
1 carrot, peeled (optional)
1/2 medium firm cucumber, peeled, seeded, and julienned (optional)
1/2 cup roasted peanuts, coarsely chopped (optional)
2 green onions, thinly sliced (optional)

Steps:

  • Cook noodles in large pot of boiling unsalted water over medium heat until barely tender and still firm. Drain immediately and rinse with cold water until cold. Drain well and toss noodles with (2 Tbsp) dark sesame oil so they don't stick together.
  • FOR DRESSING:
  • Combine all ingredients except hot water in a blender or food processor fitted with steel blade and blend until smooth. Thin with hot water to consistency of whipping cream.
  • For carrot curls: peel flesh of carrot in short shavings about 4" long. Place in ice water for 15 minutes to curl.
  • Just before serving, toss noodles with sauce. Garnish with cucumber, peanuts, green onion, and carrot curls. Serve at room temperature.
  • * HOT PEPPER OIL: the amount you use depends on how hot you like it. 2 tablespoons.
  • will give it a nice "bite." If your tastes run to the very hot, you might want to use 3TB.
  • If you want to make your own oil:
  • 1/4 cup hot red pepper flakes, 1 cup oil. Combine in a saucepan over medium heat. Bring to boil, and immediately turn off heat. Let cool. Strain in small glass container that can be sealed. Refrigerate.
  • Lasts indefinitely.

Main ingredients:
1 pound chicken breast (without skin)
1 cup bean sprouts

Steps:

  • 1. Shred seeded cucumber to the thickness as the cooked noodles 2. Add 4 cup water and 1 tea spoon salt in a pot and bring it to boiled. Boil the bean sprouts for 1 min. Set the boiled sprouts aside for chill out. 3. Cook the chicken breast into the same pot with same boiled water for 10 mins. This will not only save your time but also let the chicken have some taste from the vegetable. 4. Throw the cooked chicken breast into ice water for 1 min. Then cut it crosswise in thirds, set asdie for chill out in room temperature. 5. Mix garlic, soy, rice veinegar (or kumkuat juice), suger, chilly powder and 1/2 cup water (use the water you boiled the chicken) sufficiently. 6. Tear the chicken breast by hands into the size you want to keep the texture. 7. Put chicken, dressing, cucumber and bean sprouts into fridge. (Put them separately in different boxes with cover) 8. Cook noodles in boiling salted water to tender. Cool the noodle in ice water, then dry the noodles. Toss the noodles with extra-virgin olive oil. 9. Toss the noodles with vegetable, chicken and dressing before tasting. Note: You can also put a poached egg on top to make the dressing more smoothly. Use any kind of vegetable you want. If you are a vegetarian, just ignore the chicken, the flavor of the dressing is still very rich.
