COLD ITALIAN "ZOODLE" PASTA SALAD



Cold Italian

A low carb take on my favorite simple summer recipe! Add any veggies you like for a zesty summer side!

Number Of Ingredients 2

4 medium zucchini, spiralized
1/2 cup Italian dressing (Wishbone brand)

Steps:

  • Spiralize zucchini.
  • Add zoodles to well salted, boiling water and boil for 7-10 minutes or until tender (depending on ripeness).
  • Drain well, do not rinse and add to a lidded bowl.
  • Add Italian dressing and toss to coat-must be done warm for optimum flavor. *If adding additional vegetables, add now.
  • Refrigerate for at least an hour before serving.

1 teaspoon salt
1 tablespoon butter
375 g shell pasta, Tri-colour
1 large fresh onion, chopped
1 (185 g) can salmon in mayonnaise (Ayam brand)
2 sticks celery, sliced
2 tablespoons caesar salad dressing
0.5 (235 g) bottle mayonnaise

Steps:

  • Combine all ingredients.
  • Mix.
  • Chill in refrigerator.
  • Serve when ready.

  • Prep veggies by spiralizing 2 zucchini and then cutting them into small, bite size strands. (Zoodles!) Cut 12 pieces of pepperoni into fourths as well as 1/2 of a cucumber worth of slices into fourths. Dice 1/2 of a red pepper.
  • In a large bowl, mix together zoodles, pepperoni, cucumbers, red pepper and 5 oz of cherry tomatoes.
  • If serving immediately, add in 4 oz EACH of extra sharp cheddar cheese and pepper jack cheese cubes and 1/2 C Zesty Italian salad dressing. If serving at a later time, add in cheese and dressing immediately prior to eating.
