- Bring a pot of lightly salted water to a boil. Add asparagus, and cook for about 7 minutes, until bright green. Remove to a bowl of ice water to cool. Drain and set aside.
- In a medium bowl, stir together the mayonnaise, sour cream and curry powder. Transfer to a nice serving dish, and serve with chilled asparagus.

- Trim 3 bunches asparagus; peel the bottoms. Boil until tender, 4 to 5 minutes; drain and cool. Peel the cloves from 4 heads garlic and cook in 1/2 cup olive oil over low heat until soft, 30 minutes. Drain, reserving the oil. Puree the garlic with 2 tablespoons lemon juice, 1 teaspoon mayonnaise, 1 1/2 teaspoons sugar, 1 teaspoon dijon mustard and 1/4 cup water. Blend in 1/4 cup of the garlic oil. Season with salt, pepper and chopped chives; serve with the asparagus.

- To make the Parmesan butter, tip the lemon juice into a small saucepan and, over a very low heat, add the butter. Melt and stir the butter into the lemon juice until you have a smooth sauce, add the Parmesan and season to taste, then set aside.
- To make the Asian dressing, using a pestle and mortar, crush the chilli with the brown sugar, then stir in the lime juice until the sugar has dissolved. Stir through the soy sauce and sesame oil, then set aside.
- For the garlic mayonnaise, mix all the ingredients together. Decant the sauces into 3 serving dishes.
- Bring a large pan of water to the boil and cook the asparagus for 2-3 mins until just tender. Drain well and serve steaming hot in a pile for everyone to help themselves and dip into the sauce of their choice.

- In a saucepan, combine the brown sugar, vinegar, soy sauce, oil, lemon juice and garlic powder. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. - Bring 4 1/2 cups water, sliced leeks, and 3/4 teaspoon curry powder to boil in medium pot over medium-high heat. Boil 5 minutes. Add asparagus. Reduce heat to medium; cover and simmer until asparagus is tender, about 15 minutes. Cool slightly. Set aside 2 tablespoons crème fraîche; stir remaining crème fraîche, 4 tablespoons chopped dill, and 3/4 teaspoon curry powder into soup. Puree in batches in blender until smooth. Strain soup into large bowl. Season soup to taste with salt and pepper. Refrigerate until cold, about 4 hours, or up to 1 day.

- Snap off the tough ends of the asparagus. You’ll find that they all will break in about the same place. Bring a couple of quarts of salted water to a rolling boil in a deep skillet. While waiting for the water to boil, fill a large bowl ⅔ full with cold water and add a double handful of ice. Also, put a colander in the sink.
- When water is boiling, carefully slide in all of the asparagus at once. Boil for about a minute. Asparagus will turn bright green. Watch it. I actually stare at it until it’s not getting any brighter green and immediately take it off the heat. Quickly drain the asparagus and put into the ice bath to stop the cooking. After a few minutes, drain again and spread the stalks out on paper towels or a clean kitchen towel to dry. Put dried asparagus in a gallon ziplock bag and place in the refrigerator until needed.
- While the asparagus cools and dries, stir together sour cream, onion powder, lemon juice, curry powder, and salt. Refrigerate several hours or overnight. Serve the asparagus on a platter with the sauce for dipping or simply spooned over the stalks. People will think you did something difficult. Your secret is safe with me.
