Pork tenderloin becomes amazingly tender in this braised stew. It's a fantastic meal for a cold winter night. -Nella Parker, Hersey, Michigan

Number Of Ingredients 11

1 pound pork tenderloin, cut into 1-inch cubes
1/2 teaspoon salt
1/2 teaspoon pepper
5 tablespoons all-purpose flour, divided
1 tablespoon olive oil
16 ounces assorted frozen vegetables
1-1/2 cups reduced-sodium chicken broth
2 garlic cloves, minced
2 teaspoons stone-ground mustard
1 teaspoon dried thyme
2 tablespoons water

Steps:

  • Sprinkle pork with salt and pepper; add 3 tablespoons flour and toss to coat. In a large skillet, heat oil over medium heat. Brown pork. Drain if necessary. Stir in vegetables, broth, garlic, mustard and thyme. Bring to a boil. Reduce heat; simmer, covered, until pork and vegetables are tender, 10-15 minutes., In a small bowl, mix remaining flour and water until smooth; stir into stew. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes.

Yield Makes 4 servings

Number Of Ingredients 7

1 tablespoon vegetable oil
2 pounds boneless country-style pork ribs, excess fat trimmed, cut into 1 1/2- to 2-inch cubes
2 cups cola (do not use diet cola)
6 garlic cloves, minced
3 tablespoons soy sauce
2 tablespoons chopped peeled fresh ginger
1 bunch green onions, chopped

Steps:

  • Heat oil in large pot over high heat. Add half of pork; sauté until brown on all sides, about 8 minutes. Transfer pork to bowl. Repeat with remaining pork. Return pork to pot. Turn off heat and pour cola slowly into pot. Bring to boil. Reduce heat to medium-low, cover, and simmer 30 minutes. Add garlic, soy sauce, ginger, and half of green onions. Cover and simmer until pork is tender, about 50 minutes longer. Uncover and simmer until sauce is slightly thickened, about 10 minutes. Season stew with salt and pepper. Transfer to bowl; sprinkle with remaining green onions.
