3-Ingredient Vanilla SNOW Ice Cream - Happy Hooligans image

Make a batch of rich and delicious Vanilla Snow Ice Cream with 2 ingredients and a big bowl of freshly-fallen snow!

8-12 cups fresh, clean snow
1 tsp vanilla extract
300 mls sweetened condensed milk (10 oz)

Steps:

  • Scoop clean, fresh snow into a large bowl.
  • Sprinkle vanilla over snow.
  • Drizzle condensed milk over all.
  • Fold all ingredients together, and stir until well-combined.
  • If necessary, add more snow until you're happy with the consistency of your ice cream.
  • Scoop into a bowl, and enjoy!
  • To freeze leftovers, pat remaining snow ice cream into a freezer-proof container with a lid.

These 3-ingredient coffee snow cones are perfect for a hot summer day. Plus, you don't even need an ice shaver or snow cone maker to make them.

3 cups hot, strong brewed coffee
1 cup sugar
1 teaspoon pure vanilla extract

Steps:

  • Put the coffee, sugar and vanilla extract in a medium bowl and whisk until the sugar has completely dissolved. Pour the mixture into a 9-by-13-inch baking dish, cover with plastic wrap and freeze until completely solid, at least 6 hours and up to overnight.
  • When ready to serve, use a metal fork to scrape the frozen coffee mixture into fine shavings. Scoop the shavings into small serving bowls or snow cone cups. Serve frozen.

I saw this recipe made on "5 Ingredient Fix" with Claire Robinson on the Food Network. It looks different than other Snow Cream recipes posted here so I thought I'd post it. I haven't tried it yet because I couldn't find espresso powder at the store last weekend, but I will be trying it soon.

1 cup sugar
1 cup water
2 tablespoons instant espresso powder
2 teaspoons pure vanilla extract
1/4 cup sweetened condensed milk
8 cups fresh clean snow or 8 cups finely ground ice

Steps:

  • In a small saucepan, bring the sugar and water to a simmer, over low heat, stirring until the sugar is dissolved.
  • Stir the espresso powder into the hot syrup until dissolved. Whisk in the vanilla and condensed milk and chill before using.
  • To serve, mound 2 cups of fresh clean snow or finely ground ice in each serving bowl. Drizzle with 1/4 cup coffee syrup and serve immediately.
  • Cook's Note: Coffee syrup will keep, covered, in the refrigerator for 1 week.

Number Of Ingredients 3

1 egg white
450g icing sugar
2 tbsp coffee essence, or extra strong instant coffee

Steps:

  • Beat the egg white until frothy but not stiff.
  • Sift the icing sugar into a bowl and mix with enough of the egg white to make a firm paste
  • Add the coffee essence, mix and knead together.
  • Roll out on a board well dusted with icing sugar and cut into circles
  • Transfer onto waxed paper and leave overnight until set and firm to the touch
  • Melt your chocolate if using any, cover fondant with chocolate place in the fridge till set
