COFFEE MARINATED STEAKS

Coffee Marinated Steaks image

Time 8h18m

Yield 4 servings

Number Of Ingredients 11

1 cup cold, strongly brewed coffee
1/4 cup brown sugar
3 Tbsp. Dijon mustard
2 Tbsp. balsamic vinegar
2 Tbsp. olive oil
1 Tbsp. soy sauce
1/2 tsp. garlic powder
1/2 tsp. onion powder
2 (22 to 24 oz./625 to 685-g) T-bone or porterhouse steaks
Salt and freshly ground black pepper, to taste
Olive oil for the grill

Steps:

  • Make marinade by combining first 8 ingredients in a bowl. Place the steaks in a single layer in a shallow dish. Pour marinade over the steaks and turn to coat. Cover, refrigerate and marinate steaks 8 hours, turning occasionally. Remove steaks from marinade and pat dry with paper towel. Discard marinade. Preheat barbecue to medium-high. Lightly oil the grill. Season steaks with salt and pepper and grill to the desired doneness, allowing approximately 2 to 3 minutes per side for rare, and 3 to 4 minutes for medium-rare. Set steaks on a cutting board and rest a few minutes. Now use a sharp knife to carefully cut the meat off the bone. Slice the meat and arrange it and the bones on a platter or board and serve. Recipe Options: Instead of marinating two T-bone or porterhouse steaks for this recipe, try marinating four smaller steaks, such as strip loin and rib eye. If you do that, rather than slicing the meat after cooking and serving it from a platter or board, simply plate and serve one steak per person.

This is a recipe I found on-line at the TOH site. It states that this marinade makes the meat so so juicy and adds a great flavor. Preparation time doesn't include marinading time.

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 9

2 tablespoons sesame seeds
6 tablespoons butter

1 cup soy sauce
2 tablespoons white vinegar
2 tablespoons Worcestershire sauce
2 lbs boneless beef top sirloin steaks (1 inch thick)

STONEY RIVER - COFFEE CURED FILET

Stoney River - Coffee Cured Filet image

Just like the Coffee Cured Filet from Stoney River. Sounded weird when I first heard of it, but after tasting it, it tastes nothing like coffee and is an unbelievably flavorful steak. A staple in our household since perfecting the recipe!

Categories     Steak

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

4 beef tenderloin, filet
2 1/2 cups strong espresso or 2 1/2 cups darkest roast non-flavored coffee
1/4 cup olive oil
1/4 cup molasses (Regular Strength)
1 tablespoon brown sugar
1 1/2 tablespoons kosher salt (or Sea Salt)
1 teaspoon cumin
1/2 cup ice

Steps:

  • Place all the liquid and dry ingredients into a large bowl or zip-lock bag and mix until dissolved.
  • (HINT: Measure the olive oil first and then the molasses, it will slide right out of the measuring cup if you do the oil first).
  • Add ice to cool the mixture.
  • Add the filets and marinate at least 6 hours for best results. I like to mix them up and flip the meat every couple of hours, but not required.
  • When ready to cook the steaks, heat an iron skillet or griddle as hot as you can get it and sear the outside of the steaks for a minute or two until dark and crisp on the outside, then place on the grill to cook to your wellness liking the rest of the time.
  • (HINT: I recommend searing the steaks outside on a grill side burner if possible. It makes a mess of your cooktop inside otherwise.).

COFFEE MARINADE

Coffee Marinade image

The bitter undertones of coffee are an ideal complement to the smoky flavors of grilled beef. This marinade is particularly good with bone-in rib-eye and bone-in chuck steaks. From The Great Meat Cookbook by Bruce Aidells and Anne-Marie Ramo.

Categories     < 15 Mins

Time 5m

Yield 2 cups approximately

Number Of Ingredients 13

1 cup strong coffee, cooled
3 tablespoons balsamic vinegar
2 tablespoons minced white onions
2 tablespoons minced garlic
1 chipotle chile in adobo, finely chopped
2 teaspoons chopped fresh sage
1 teaspoon ground cumin
3 tablespoons soy sauce
2 teaspoons Worcestershire sauce
2 teaspoons dark brown sugar
2 teaspoons Tabasco sauce or 2 teaspoons hot sauce
2 teaspoons fresh ground black pepper
1/4 cup canola oil

Steps:

  • Pour the coffee into a small bowl and stir in the remaining ingredients.
  • Place the steaks of your choice in a large zipper-lock bag. Pour in the marinade, seal the bag, and turn to ensure the steaks are coated with the marinade. Marinate for 2 hours at room temperature or, better still, refrigerate overnight. (For a 2- to 3-inch-thick bone-in steak, it's best to marinate overnight.) Turn the bag from time to time to redistribute the marinade. Let the steaks sit at room temperature for 2 hours and pat dry before grilling.
