LEMON DILL COD



Lemon Dill Cod image

A simple marinade highlights cod but try with tilapia, mahi mahi or any white fish.

¼ cup lemon juice
1 tablespoon olive oil
4 teaspoons Dijon mustard
1-½ tablespoons Spice Islands® Dill Weed
1 teaspoon Spice Islands® Garlic Powder
½ teaspoon Spice Islands® Lemon Pepper Seasoning
¼ teaspoon sugar
4 pieces (6 ounces, each) cod fillets

Steps:

  • Combine all ingredients except cod in a large resealable plastic bag and mix. Add cod. Seal and marinate in refrigerator for 20 minutes. Remove fish from bag: discard marinade. Place fish on a broiler pan or grill pan coated with cooking spray. Broil or grill for 4 minutes on each side or until fish flakes easily when tested with a fork.

Baked Cod with Creamy Dill Sauce image

Here you can use just about any kind of white fish fillets instead of cod. Sea bass and sole are two good options.

2 Medium Fillets Cod
2 tablespoons Cooking Fat Melted
1/2 Cup Mayonnaise
1 Small Onion Minced
2 teaspoons Dill Dried
1/4 teaspoon Thyme dried
Salt and pepper to taste

Steps:

  • METHOD 1 Preheat your oven to 220 C or 428 F. 2 Combine the melted cooking fat, mayonnaise, minced onion, dried dill and dried thyme in a bowl and mix well. Season to taste with sea salt and freshly ground black pepper. 3 Grease a baking dish with some cooking fat, place the fish in it and pour the creamy sauce over it. 4 Bake in the preheated oven until the fish is just cooked through, about 10 minutes per inch of thickness.
