DRIED COD FISH PIE

Number Of Ingredients 22

For the cod:
1 1/2 pounds boneless, skinless salt cod (bacalao), rinsed well and cut into 4 or 5 large pieces
For the filling:
1/4 cup olive oil
1 medium onion, diced
3 cloves garlic, minced
1 cup long-grain white rice
2 ripe tomatoes, peeled and finely chopped
1 cup tomato purée
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh marjoram or oregano
1 packed teaspoon finely grated orange zest (from 1 orange)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
Table salt and freshly ground black pepper
For the phyllo dough:
5 cups all-purpose flour
1/2 cup dry white wine
1/2 cup olive oil, plus more for brushing the baking dish and phyllo dough
1 teaspoon table salt
1 to 1 1/2 cups lukewarm water

Steps:

  • Soak the cod:
  • In a large bowl, cover the cod pieces with 2 inches of cold water and soak, chilled, at least 24 hours and up to 36 hours, changing the water 2 to 3 times per day and tasting the cod to test for saltiness after the first 24 hours.
  • Make the filling:
  • Once the cod is sufficiently soaked, poach it in a large pot of boiling salted water for 5 minutes. Transfer the cod to a large bowl and reserve 2 cups of the poaching liquid. Using 2 forks, gently shred the cod into small pieces.
  • In a large, deep sauté pan, heat the oil over moderate heat until hot but not smoking. Add the onion and sauté until translucent, about 2 minutes. Add the garlic and sauté for 1 minute. Add the shredded cod, along with the rice and chopped tomatoes, stir to combine, and cook for 10 minutes. Add the tomato purée, parsley, mint, marjoram, orange zest, cinnamon, allspice, and the 2 cups reserved poaching liquid and simmer for 5 minutes. Season with salt and pepper, remove from the heat, and set aside while you make the phyllo dough.
  • Make the phyllo dough:
  • Place the flour in a large bowl and create a well in the center. Add the wine, olive oil, and salt to the well and use your hands to gradually combine the ingredients. Once all the liquid has been absorbed, gradually start adding water just as needed, while using your hands to incorporate the water into the dough. Continue working the dough and adding water until the dough is fairly uniform and no longer sticky-you may have water left over. Divide the dough into two balls and flatten them into discs. Return the discs of dough to the bowl and cover with plastic wrap followed by a large kitchen towel. Let the dough rest at room temperature for about 30 minutes.
  • Assemble and bake the pie:
  • Arrange a rack in the middle of the oven and preheat to 350°F. Generously brush a 13- by 9-inch baking dish with oil.
  • On a lightly floured surface, roll both discs of dough into roughly 18- by 14-inch rectangles. Arrange 1 rectangle of dough in the prepared baking dish, allowing any excess dough to hang over the edge. Add the cod filling, spreading it evenly in the baking dish. Arrange the second rectangle of dough on top of the cod filling and use your fingers to roll and crimp the edges of the dough together, making sure to create a good seal. Brush the pie with oil then sprinkle it with water. Use a toothpick or fork to poke a few holes in the top of the pie to allow steam to escape during cooking. Bake the pie until the dough is golden brown, about 1 hour. Transfer the pie to a wire rack to let cool for at least 30 minutes before cutting and serving.

Steps:

  • Preheat the oven to 230C/fan 210C/gas 8. Heat the oil in a frying pan and gently fry the cod until it starts to flake, approximately 5 mins each side depending on thickness of the fish.
  • Boil the potatoes until soft (about 10-15 mins) and mash. Season to taste. Simmer the carrots in a small amount of water for 5 minutes.
  • Make the cheese sauce: melt the butter in a pan. Add the flour and stir over a low heat for 1 minute. Add the milk a little bit at a time, stirring continuously. Continue to cook the sauce, stirring all the while, until it starts to thicken. Add 4 oz of the cheese and cook for a further minute until the cheese has melted. Add pepper to taste.
  • Butter a pie dish. Break the fish into large flakes and place evenly in the bottom of the dish. Add the carrots, and the parsley if using. Pour the cheese sauce over the fish and carrots. Top with the mashed potato, using a fork to spread evenly and make a pattern on top. Sprinkle the remaining cheese over the top.
  • Bake in the oven for 25-30 minutes, until the top is light brown. Serve with vegetables or a hearty salad.

2 lbs skinless cod fish fillets, making sure all bones are removed
2 ounces butter
2 ounces flour
1/2 liter milk
5 ounces grated cheese
4 cups mashed potatoes
4 tablespoons softened butter

Steps:

  • Place cod fillets in the bottom of a 8x8x2 buttered oven dish.Place dish on a cookie sheet pan because there will be sauce that escapes and runs down the outside of the casserole dish.
  • Make a cheese sauce by mixing 2 oz each of butter and flour, 1/2 liter of milk and 3 1/2 oz grated cheese cook till slightly thickened: pour over fish.
  • Top with mashed potatoes sprinkle grated cheese over them and dot with butter.
  • Bake in a hot oven (450 F) for 25-30 minutes, until the potatoes are golden brown.
  • Optional -- I just made this again and put in 2 sliced scallions into the cheese sauce after it was cooked{step #2}.Garnish with scallions.
  • Optional -- 1/2- 1 cup peeled and deviened Shrimp added unto the fish gives some added flavor as well!

1 sheet frozen puff pastry (half a 17-ounce package), thawed
3 tablespoons extra-virgin olive oil
1 large leek (white and light green parts only), halved lengthwise and thinly sliced
2 tablespoons all-purpose flour
1 cup milk
Kosher salt and freshly ground pepper
1/4 cup soft garlic-herb cheese (such as Boursin)
2 1/2 teaspoons Dijon mustard
1/2 teaspoon grated lemon zest, plus 2 teaspoons lemon juice
1 1/4 pounds cod fillet, cut into 1-inch chunks
1/4 cup chopped fresh tarragon
1/4 cup chopped fresh parsley
1/4 cup chopped fresh chives
1 large head Boston or Bibb lettuce, leaves separated

Steps:

  • Preheat the oven to 425 degrees F. Roll out the puff pastry into an 11-inch square. Cut out four 5-inch rounds using a 5-inch bowl or ramekin as a guide. Place the pastry rounds on an unlined baking sheet and bake until puffed and golden brown, 15 to 20 minutes; set aside.
  • Meanwhile, heat 2 tablespoons olive oil in a large pot over medium-high heat. Add the leek and cook, stirring, until softened, about 3 minutes. Add the flour and cook, stirring, 1 minute. Whisk in the milk, 3/4 cup water, 1/2 teaspoon salt and a few grinds of pepper. Bring to a boil, then reduce the heat and simmer until thickened, about 3 minutes. Whisk in the garlic-herb cheese, 2 teaspoons mustard, the lemon zest and 1 teaspoon lemon juice.
  • Season the cod with salt and stir into the skillet. Simmer gently until cooked through, 6 to 8 minutes. Stir in half the herbs.
  • Whisk the remaining 1 teaspoon lemon juice, 1/2 teaspoon mustard and 1 tablespoon olive oil in a large bowl. Add the lettuce and remaining herbs; toss. Season with salt and pepper.
  • Divide the cod mixture among shallow bowls; top each with a round of puff pastry. Serve with the salad.

A simple fish pie recipe that's quick and easy to prepare. Portion into ramekins and freeze for quick toddler meals or cook in a big dish for the perfect family supper

1kg Maris Piper potatoes, peeled and halved
400ml milk, plus a splash
25g butter, plus a knob
25g plain flour
4 spring onions, finely sliced
1 x pack fish pie mix (cod, salmon, smoked haddock etc, weight around 320g-400g depending on pack size)
1 tsp Dijon or English mustard
½ a 25g pack or a small bunch chives, finely snipped
handful frozen sweetcorn
handful frozen petits pois
handful grated cheddar

Steps:

  • Heat the oven to 200C/fan 180C/gas mark 6.
  • Put 1kg potatoes, peeled and halved, in a saucepan and pour over enough water to cover them. Bring to the boil and then simmer until tender.
  • When cooked, drain thoroughly and mash with a splash of milk and a knob of butter. Season with ground black pepper.
  • Put 25g butter, 25g plain flour and 4 finely sliced spring onions in another pan and heat gently until the butter has melted, stirring regularly. Cook for 1-2 mins.
  • Gradually whisk in 400ml milk using a balloon whisk if you have one. Bring to the boil, stirring to avoid any lumps and sticking at the bottom of the pan. Cook for 3-4 mins until thickened.
  • Take off the heat and stir in 320g-400g mixed fish, 1 tsp Dijon or English mustard, a small bunch of finely snipped chives, handful of sweetcorn and handful of petits pois. Spoon into an ovenproof dish or 6-8 ramekins.
  • Spoon the potato on top and sprinkle with a handful of grated cheddar cheese.
  • Pop in the oven for 20-25 mins or until golden and bubbling at the edges. Alternatively, cover and freeze the pie or mini pies for another time.

2 pounds potatoes, peeled and diced
2 cups milk
1 bay leaf
½ teaspoon ground nutmeg
1 (1 pound) fillet cod
½ cup butter, divided
1 medium leek, white part only, chopped
¼ cup all-purpose flour
4 ounces grated sharp Cheddar cheese, divided
1 cup peas
salt and ground black pepper to taste
2 hard-boiled eggs, quartered

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool.
  • Combine milk, bay leaf, and nutmeg in a large pan and bring to a gentle simmer over medium-low heat. Add cod and poach until flaky, about 5 minutes. Use a slotted spoon to transfer cod onto a plate; reserve poaching liquid. Use a fork to flake fish into bite-sized pieces.
  • Mash potatoes in a large bowl. Mix in 3 tablespoons butter and 2 tablespoons poaching liquid until potatoes are fairly stiff and not too runny.
  • Heat 1 tablespoon butter in a skillet over medium heat and stir in leek. Cook and stir until softened and translucent, about 5 minutes. Set aside.
  • Melt remaining 1/4 cup butter over medium heat in a large, deep skillet until it just stops bubbling. Add flour and stir roux continuously for 1 minute. Slowly pour in remaining poaching liquid, stirring continuously, to make base of sauce. Add 1/2 the sharp Cheddar cheese and stir until melted. Fold in flaked cod, leek, and peas. Season with salt and pepper.
  • Place fish mixture in an oven-proof dish; press boiled eggs gently into the filling across the surface. Cover with a thick layer of mashed potatoes. Sprinkle with remaining Cheddar cheese.
  • Bake in the preheated oven until top is starting to brown, about 30 minutes. Serve immediately.

1 1/2 lbs cod fish fillets or 1 1/2 lbs other white fish
2 ounces butter
2 ounces flour
1/2 liter milk
3 1/2 ounces grated cheese
1 cup flour
2 ounces grated cheese
2 ounces butter
1 teaspoon baking powder
1 pinch salt
1 egg yolk
milk

Steps:

  • Place fish filets in the bottom of a round oven dish.
  • Make a cheese sauce with the butter, flour, milk and grated cheese and pour over fish.
  • Make scone dough by rubbing the butter into the flour with baking powder and pinch of salt.
  • Add grated cheese and drop egg yolk into the mixture and add enough milk to make a workable dough.
  • Roll out to a thickness of 1/2 inch and cut into small rounds with a scone cutter.
  • Drop these rounds on top of the fish mixture so that they just about cover the surface and then glaze them with a little milk.
  • Sprinkle some more grated cheese over them and bake at 450F degrees for 25-30 minutes or until the scones are golden brown.

500 g smoked cod (if frozen, thaw first)
3 spring onions, thinly sliced (long slender white & green onions aka green onions)
1 cup milk
3 hard-boiled eggs, sliced
2 tablespoons butter
2 tablespoons plain flour
salt and pepper
500 g of cooked mashed potatoes (made to a medium consistency, too thick or runny and it will either sink or mix with the fish)
2 tablespoons grated cheese

Steps:

  • Place cod in a single layer in a non stick pan, add the spring onions and milk and poach for about 10 minutes depending on the thickness of the fish.
  • Drain cod and reserve liquid and spring onions. Flake fish, remove any bones and place into a greased casserole dish with the spring onions and top with the boiled egg.
  • Melt butter in pan used for poaching fish (who needs more dirty dishes!?), stir in flour and cook over a low heat until mixture bubbles for a minute or so (don't brown), gradually add reserved poaching liquid stirring constantly until it boils and thickens, season with salt and pepper.
  • Pour over fish and eggs, cover with mashed potato and top with grated cheese.
  • Bake at 220 degrees Celsius for 20 minutes until browned on top.
