1-1/4 cups all-purpose flour
1-1/4 cups cornstarch
6-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon Cajun seasoning
1-1/2 cups cold water
1/2 teaspoon canola oil
2-1/2 cups sweetened shredded coconut
1 pound uncooked shrimp (26-30 per pound), peeled and deveined
Additional oil for deep-fat frying
1/2 cup orange marmalade
2 tablespoons honey

Steps:

  • In a large bowl, combine the first 5 ingredients. Stir in water and oil until smooth. Place coconut in another bowl. Dip shrimp into batter, then coat with coconut. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry shrimp, a few at a time, for 3 minutes or until golden brown. Drain on paper towels., In a small saucepan, heat marmalade and honey; stir until blended. Serve with shrimp.

½ cup all-purpose flour
1 ½ teaspoons ground black pepper
2 large eggs
⅔ cup unsweetened flaked coconut
⅓ cup panko bread crumbs
12 ounces uncooked medium shrimp, peeled and deveined
cooking spray
½ teaspoon kosher salt, divided
¼ cup honey
¼ cup lime juice
1 serrano chile, thinly sliced
2 teaspoons chopped fresh cilantro

Steps:

  • Stir together flour and pepper in shallow dish. Lightly beat eggs in a second shallow dish. Stir together coconut and panko in a third shallow dish. Hold each shrimp by the tail, dredge in flour mixture, and shake off excess. Then dip floured shrimp in egg, and allow any excess to drip off. Finally, dredge in coconut mixture, pressing to adhere. Place on a plate. Coat shrimp well with cooking spray.
  • Preheat air fryer to 400 degrees F (200 degrees C). Place 1/2 the shrimp in the air fryer and cook about 3 minutes. Turn shrimp over and continue cooking until golden, about 3 minutes more. Season with 1/4 teaspoon salt. Repeat with remaining shrimp.
  • Meanwhile, whisk together honey, lime juice, and serrano chile in small bowl for the dip.
  • Sprinkle fried shrimp with cilantro and serve with dip.

1 lb large shrimp, peeled and deveined
1/3 cup all-purpose flour
2 egg whites, lightly beaten
1 1/3 cups flaked coconut
oil, for deep-fat frying
1 (12 ounce) jar pineapple preserves
1 tablespoon pina colada nonalcoholic drink mix, thawed

Steps:

  • Butterfly shrimp by cutting the inner curve of the shrimp deeply, but not all the way through.
  • Press to flatten on your cutting board.
  • Dredge the shrimp in the flour, shaking off excess.
  • Then dip into the egg whites and then into the coconut.
  • Fry shrimp in a deep fat fryer or deep skillet, a few at a time, for 1-1.5 minutes or until golden brown.
  • Drain on a clean paper bag.
  • To make dipping sauce, warm the preserves in a small skillet until it melts, and stir in pina colada mix.
  • Serve warm dipping sauce with fried shrimp.

2 large eggs, beaten
2 tablespoons Sriracha sauce
1 pound raw shrimp, peeled and deveined
2 cups panko bread crumbs
1 tablespoon Cajun seasoning
2 cups vegetable oil for frying

Steps:

  • Combine eggs and Sriracha in a bowl and beat with a fork until well combined. Coat shrimp in egg batter, a few shrimp at a time.
  • Pour panko into a shallow dish and mix in Cajun seasoning. Dredge shrimp in panko mixture.
  • Heat oil in a Dutch oven or cast iron skillet over medium heat until hot. Add shrimp in batches without overcrowding the pan.
  • Cook shrimp until panko is golden brown and the meat is opaque, about 3 minutes, depending on the size.

12 large shrimp
salt and pepper
2 cups macadamia nuts, lightly toasted and ground coarsely
2 tablespoons flour
2 tablespoons clarified butter
1 tablespoon extra virgin olive oil

Steps:

  • Butterfly the shrimp by deeply cutting down fro the top of the head to the tail leaving on the tail.
  • You want to remove the vein.
  • Season the shrimp with the salt and pepper.
  • Combine the nuts and flour and coat the shrimp well in the mixture.
  • Heat the butter and oil on a low flame in a skillet only until they are melted together, then bring the flame up to medium.
  • Sear the shrimp, turning only once.
  • You want them to be a golden brown on each side.
  • Be careful not to let them get too brown.
  • The nuts burn easily.
  • This will go very quickly.

1/3 cup cornstarch

Steps:

  • Using small sharp knife and starting at top of inward curve just below tail, butterfly shrimp, cutting each more than halfway through toward outward curve (do not cut shrimp in two). Open each shrimp (as for book) and press slightly to flatten. Mix cornstarch, salt and cayenne in medium bowl. Place coconut in pie dish. Beat egg whites in another medium bowl until frothy. Dredge shrimp in cornstarch mixture; shake off excess. Dip shrimp into egg whites, then press shrimp into coconut; turn shrimp over and press into coconut again to coat both sides.
  • Pour enough oil into heavy large pot to reach depth of 2 inches; heat to 350°F. Working in batches, add shrimp to hot oil; deep-fry until cooked through, about 1 minute. Using tongs or slotted spoon, transfer shrimp to paper towels to drain. Arrange shrimp on platter. Serve with Pineapple-Apricot Salsa for dipping.

1/2 cup soy flour

Steps:

  • 1. Place shrimp in bowl of lightly salted ice water to cover set aside.2. Beat egg whites until foamy. Combine coconut and nuts in small bowl.3. Drain shrimp (do not pat dry) and dredge in flour. Quickly dip in egg whites toss with nuts and coconut until completely covered. Fry in 350° F oil for about 2 minutes or until golden brown remove from pan drain. Portion and serve.
