SWEET COCONUT OATMEAL



Sweet Coconut Oatmeal image

Oatmeal is only as exciting as the stuff you put into it, since it's boring on its own. This dish is sweet and creamy, a tad exotic, and the kids will love it. If you want, prepare it the day before, refrigerate, and reheat in the microwave. Enjoy!

1 (14 ounce) can coconut milk
1 cup rolled oats
2 tablespoons honey
¼ cup coconut flakes
2 tablespoons brown sugar, or more to taste
1 teaspoon ground cinnamon

Steps:

  • Bring coconut milk to a gentle boil in a small saucepan over medium-low heat. Stir in oats and honey; lower heat and simmer until milk has mostly been absorbed, about 15 minutes.
  • Sprinkle coconut flakes, brown sugar, and cinnamon into oatmeal. Cook until oats are creamy and flavors are combined, about 5 minutes.

1 cup butter, softened
1 ¼ cups packed brown sugar
½ cup white sugar
2 eggs
2 tablespoons milk
2 teaspoons vanilla extract
1 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 cups rolled oats
2 cups semisweet chocolate chips
1 cup chopped walnuts
1 cup shredded coconut

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the milk and vanilla. Combine the flour, baking soda and salt; stir into the sugar mixture until well blended. Stir in the oats, chocolate chips. walnuts and coconut until evenly distributed. Drop by rounded tablespoons onto ungreased cookie sheet.
  • Bake 10 to 12 minutes in the preheated oven for a chewy cookie or 14 minutes for a firmer cookie.
  • Cool for 1 minute on the cookie sheet and then remove to wire rack. Cool completely and then store in tightly sealed container.

Steps:

  • Combine milk and oats in a microwave-safe bowl. Cook in the microwave until oatmeal starts to bulge at the top and has a smooth, creamy consistency, 1 to 3 minutes.
  • Mix in banana, coconut milk, and shredded coconut until well combined. Sweeten with sugar to taste.

You can either stir by hand with a wooden spoon or spatula OR use a handmixer and beat on LOW speed until combined. Increasing speed as needed.The mixture is thick so it will take a few minutes to fully mix it all together.
  • Roll into balls. I use a small cookie scoop to get even sized energy balls, which holds about 1 tablespoon of the energy ball dough. TIP : If you are having difficulty getting the mixture to roll into a ball, try pressing the energy ball dough between your fingers (to loosen it up/warm it up) and then roll into a ball. TIP : If the energy ball dough is too sticky, which it will be naturally as there is honey in it, try refrigerting for about 20 minutes to see if that helps.
  • Eat right away or you can refrigerate for a couple of hours if you want to serve them cold. I think they're best tasting when they are cold so I always make them before I need them (like for after school) so they have time to refrigerate for at least 2-3 hours.

  • Form balls by using a 1 1/2" cookie scoop or a round tablespoon. With damp hands, scoop out mixture then roll into a ball. Place onto cookie sheet or rack lined with parchment paper, then continue to form all balls.
  • If adding chocolate drizzle, set up a saucepan with 2" of water over medium low heat. Place a glass mixing bowl in the pot, making sure the bottom of the bowl doesn't get too close to the water. Pour in 1/4 cup mini chocolate chips and coconut oil and stir occasionally with spatula until melted.
  • Use a spoon to drizzle melted chocolate over energy balls! Let chocolate harden for 10 minutes or more before putting energy balls into airtight container and into refrigerator. Will keep for 1 week in fridge or up to two months in the freezer!
