EASY VEGAN GINGERBREAD COOKIES

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Sift flour, baking powder, cinnamon, baking soda, ginger, allspice, and salt into a bowl.
- Cream coconut oil, molasses, and sugar in a bowl with an electric mixer; add vanilla extract. Stir in flour mixture; mix until a sticky dough forms, about 2 minutes. Wrap dough in plastic wrap and chill for 2 hours.
- Roll out dough on a floured surface to 1/4 to 1/2-inch thickness. Dip cookie cutter in flour, cut out cookies, and place on the prepared baking sheets.
- Bake in the preheated oven until lightly golden, 8 to 10 minutes.

- Beat together the butter, treacle, brown sugar and salt in a large mixing bowl. Add the egg, then beat through all of the remaining dry ingredients apart from the caster sugar. Chill the mixture in the fridge for 1 hr.
- Heat the oven to 200C/180C fan/gas 4. Line two baking sheets with baking parchment. Roll the mixture into 20 even-sized balls (weighing for accuracy, if you like). Tip the caster sugar onto a small plate, then add each ball and roll around to coat. Space each ball out on the baking sheets. Bake for 9-10 mins until golden brown. Leave to cool completely on a wire rack.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Combine flour, baking powder, and baking soda together in a bowl. Mix ginger and lemon juice together in a separate bowl.
- Beat butter and sugar together in a bowl until smooth and creamy; add egg and beat until light and creamy. Stir oats, coconut, raisins, and ginger mixture into creamed butter mixture until well mixed. Add flour mixture to butter-oats mixture and stir until dough is well mixed. Spoon dough onto the prepared baking sheet about 2 inches apart.

COCONUT FLOUR GINGERBREAD COOKIES RECIPE | PALEOHACKS

- In a large mixing bowl, cream together the coconut oil and 1/2 cup of the coconut sugar with a fork, until very well combined.
- Add 2/3 cup coconut flour, cinnamon, ginger, cloves, cardamom, salt, and baking soda and mix very well.
- Liberally flour the counter with some coconut flour and pat the dough out to about 1/4 inch thick circle. Cut as desired with cookie cutters. If you find that your dough is a bit too sticky and not stiff enough, ball it up and knead in a couple tablespoons of coconut flour.
- Transfer the cookies to the baking sheet and bake for 10-15 minutes, or until golden brown. Watch closely so they don’t burn.
- While the cookies are cooling, combine 1/2 cup coconut sugar and 1 tablespoon coconut flour in a food processor. Process for a couple minutes, or until powdery.
- Use the fine-mesh sieve to sift the coconut sugar again, this time over the gingerbread cookies so that they get a light powdered sugar dusting.
