This recipe was posted on FB and made with ginger, cauliflower, and a few other items that is not only delicious but offers benefits for your body. Although made with a few foods that have more fat in them, they are healthy fats. The soup is also a dish that can be enjoyed whether you like to eat meat or only vegetables. You can add protein to the soup by using chopped chicken or tofu and switch up the vegetables depending on your preferences.

2 tablespoons coconut oil
1 teaspoon cumin seed
1 medium onion, finely chopped
3 ripe tomatoes, finely chopped
1 medium head cauliflower, stemmed and cut into bite-size florets
1 jalapeno, stemmed, seeded, chopped
1 cup chopped kale
2 teaspoons ginger paste
1 tablespoon cumin powder
1 tablespoon coriander powder
1 teaspoon turmeric powder
15 ounces full-fat unsweetened coconut milk
1 teaspoon sea salt
2 tablespoons chopped cilantro

Steps:

  • Add cumin seeds to preheated coconut oil until the oil starts to pop.
  • Add onions and cook for one minute.
  • Add tomatoes and cook until softened.
  • Add the rest of the ingredients, stir.
  • Cover and simmer for 15 minutes, stirring occasionally.
  • Serve and enjoy!

Killer delicious and oh-so-easy dish from healthy-holistic-living.com. Perfect for vegans and the meat-lovers won't miss meat, although the original recipe suggested adding tofu or chicken if you wanted to bulk it up (I wouldn't bother). The only thing I'd suggest is not to rely on it as a complete meal for 4 people, although it makes a marvelous main dish: we had enough for the two of us for dinner one night and then cups on the second. Probably if you served it over rice or some other grain it would stretch far enough.

2 tablespoons coconut oil
1 teaspoon cumin seed
1 medium onion, finely chopped
3 tomatoes, finely chopped (ripe ones!)
1 medium head cauliflower, stemmed and cut into bite-size florets
1 jalapeno, stemmed, seeded, chopped
1 cup kale, chopped
2 teaspoons ginger paste
1 tablespoon cumin powder
1 tablespoon coriander powder
1 teaspoon turmeric powder
1 (15 ounce) can coconut milk, unsweetened (full fat)
1 teaspoon sea salt
2 tablespoons cilantro, chopped

Steps:

  • In a medium stock pot, heat the coconut oil for 30 seconds on medium heat.
  • Add the cumin seeds and stir until they start to sputter. Then add the onions and cook for another minute, and then add the tomatoes, stir and cook for a few more minutes until the tomatoes soften.
  • Add the rest of the ingredients and stir together. Cover the pan and simmer for about 15 minutes, stirring every 5 minutes to keep from burning.
  • Ladle the soup into 4 serving bowls and enjoy! Leftover stew can be stored in air-tight container and saved for lunch the next day.

Ginger-Cauliflower Soup image

This simple soup, steeped with ginger and lemongrass, features a bright relish of lime zest, fresh ginger and scallions. The topping offsets the subtle, sensible cauliflower, and the soup is deceptively luxurious thanks to the addition of potato, which adds a natural creaminess. Serve with a crusty sourdough loaf or some thick slices of buttered toast.

Number Of Ingredients 13

1/4 cup plus 2 tablespoons grapeseed oil
1 lemongrass stalk, tough outer peel removed, inner portion smashed, optional
1 (3-inch) piece ginger, peeled and grated (about 2 tablespoons)
1 medium head cauliflower, cut into florets
1 medium russet potato, peeled and diced
3 garlic cloves, peeled and smashed
6 cups vegetable or chicken stock
4 scallions, trimmed and thinly sliced (about 1/2 cup)
2 tablespoons chopped fresh cilantro
2 tablespoons sherry vinegar
2 limes, zested and juiced
1 tablespoon honey
Salt

Steps:

  • In a large stock pot, heat 2 tablespoons oil over medium. Add the lemongrass and half the ginger and cook until fragrant, about 2 minutes. Stir in the cauliflower, potato and garlic, then add the stock. Bring to a boil over high, then reduce the heat to medium-low and simmer until the cauliflower and potatoes are tender, stirring occasionally, about 20 minutes.
  • Meanwhile, in a small bowl, combine the remaining 1 tablespoon ginger with the scallions, cilantro, vinegar, lime zest and juice, honey and the remaining 1/4 cup grapeseed oil. Whisk together and season with salt. Set aside. The relish will marinate and the scallions soften as it sits.
  • Remove and discard the lemongrass stalk from the soup. Using an immersion blender (or working in batches in a traditional blender), purée the soup until smooth. Add additional water, if needed, to thin the soup. Season to taste with salt.
  • Serve the soup topped with the ginger-scallion relish, and serve with a slice of buttered toast.

  • Lower the heat to medium and add a splash more oil if the pan is dry. Add ginger, garlic and scallions and cook for 30 seconds. Add in turmeric, salt, cumin, cayenne, paprika and toast for 30 seconds until very fragrant.
